1 cup white sugar
2 tablespoons shortening
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon salt
1 cup raisins
1 ½ cups water
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 8 or 9 inch square cake pan.
  • In a saucepan over medium high heat combine; the sugar, shortening, ground cinnamon, ground nutmeg, ground allspice, salt, raisins, and water bring to a boil and continue boiling for 5 minutes. Remove from heat and let cool.
  • Sift the flour, baking powder and baking soda together. Add the flour mixture to the cooled raisin mixture. Stir until just combined. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

This is an eggless, milkless, butterless cake. " A delicious spiced cake that's easy on the budget". I found this recipe in the "Guideposts" magazine (August 2009 issue). The recipe was part of a wonderful article with the same title written by Rosemary Marbach.

Number Of Ingredients 12

1 cup brown sugar, firmly packed
1 1/2 cups water
1/3 cup vegetable oil
2 cups dark raisins
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons water
2 cups flour
1 teaspoon baking powder

Steps:

  • Pre-heat oven to 325 degrees.
  • Combine sugar, water, vegetable oil, raisins, and spices in a saucepan, and bring to a boil. Boil for 3 minutes, stirring frequently. Take pan off heat and let cool for 10 minutes.
  • Dissolve baking soda and salt in 2 teaspoons of water and add to raisin mixture (it will foam).
  • Blend in the flour and baking powder. Mix well.
  • Pour the batter into a greased 9 inch square pan and bake for 55 minutes, or until a toothpick unserted in the center comes out clean.
  • Let cake cool for about 10 minutes before serving.

  • Cool.
  • Add 2 teaspoons soda,dissolved in 1 tablespoons lukewarm water.
  • Add flour.
  • Bake 1 1/2 hours in loaf pan at 350*.

I found this recipe in the newspaper twenty years ago. I was impressed by the author's stories about life in the homefront during WWII so I decided to try this recipe. It was very good even without the allspice.

1 1/4 cups flour
3 teaspoons cornstarch
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon salt
1 cup brown sugar
1/3 cup oil
1 teaspoon lemon juice
1 teaspoon vanilla
1 cup water (approximately)

Steps:

  • Stir together flour, cornstarch, baking soda, spices and salt.
  • Cream sugar, oil, lemon juice and vanilla.
  • Add flour mixture to sugar mixture, a little at a time, alternating with up to 1 cup of water.
  • Mix briskly with fork until thoroughly blended.
  • Pour into lightly greased and floured 8 or 9 inch square pan and bake at 350 degrees for 30 minutes or until cake tests done.
  • Let cool in pan.

1/2 cup cocoa
1 cup water
1 cup mayonnaise
2 teaspoons vanilla
1 teaspoon confectioners' sugar

Steps:

  • Heat oven to 350.
  • Grease and flour 10 inch tube pan.
  • In med.

  • In small bowl with wire whisk gradually beat water with mayonnaise until evenly combined; stir in vanilla.

CAKE BATTER
2 c sugar
1 tsp ginger
2 c water
1 c lard
1 tsp cloves
2 c raisins
1 tsp cinnamon
1/4 tsp nutmeg
3 1/2 c flour
1 tsp baking soda
ICING
2 c powdered sugar
1/3 c water

Steps:

  • 1. Mix together the sugar, spices, water, lard and raisins in a saucepan. Bring to a boil for one minute, let cool. Add flour and baking soda and mix together well. Pour batter into greased and floured tube pan or loaf pan. Bake for one hour at 325F. To test for done, place a straw or a toothpick into the cake, if it comes out clean, then it is done. Remove from oven, let cool upside down until sides pull away from the pan.
  • 2. Put Icing ingredients into small sauce pan. Bring to a boil for 3 minutes. When cooled. Ice cake. *** You can add lemon juice instead of water or add a little vanilla or almond flavoring.
