SHRIMP PARMESAN

Steps:
- Open the shrimp up like a book and remove the dark vein.
- In a zip lock bag, place flour seasoned with salt and old bay toss in shrimp and shake to coat.
- Remove shrimp; to the same bag with the rest of the flour add panko, breadcrumbs, and parmesan cheese.
- In a small bowl whisk well eggs and mayonnaise.
- Dip floured shrimp into egg mixture then bread crumbs.
- In a large heavy bottom pan heat oil.
- Brown shrimp in batches and drain on paper towel to remove excess oil.
- Spread 1/3 the sauce on bottom.
- Spread cook pasta on top of sauce.
- Spoon 1/3 sauce on pasta.
- Lay shrimp in a baking dish 1 layer.
- Sprinkle with with mozzarella cheese.
- Top with rest of sauce.
- Top with grated parmesan cheese.
- Bake in 350 degree oven till cheese is melted.
- About 15-20 minutes.
GARLIC-PARMESAN SHRIMP
Delicious crispy shrimp coated in a bread crumb-Parmesan mixture. My family can't get enough of it! I would suggest doubling the recipe if you have very large eaters because this is addictive! Serve with pasta and salad.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass casserole dish with nonstick cooking spray.
- Combine bread crumbs, Parmesan cheese, parsley, and garlic powder in a large resealable plastic bag. Seal and shake to mix ingredients together. Add shrimp and shake to coat.
- Lay shrimp flat in the prepared baking dish. Sprinkle with any bread crumb mixture remaining in the bag. Drizzle melted butter over the top.
- Bake in the preheated oven until starting to crisp, 15 to 20 minutes. Switch to broil setting until topping is light brown, 2 to 3 minutes.

- Peel and devein shrimp, leaving the tails on. Butterfly each shrimp along the outside curve; set aside., In a large skillet, saute the shallots, basil, fennel seed and pepper in oil until tender. Add garlic; saute for 1 minute. Add spinach; saute 3-4 minutes longer or until wilted. Remove from the heat; stir in bread crumbs and lemon juice., Arrange shrimp on a greased 15x10x1-in. baking pan. This is an awesome dish which features fried breaded jumbo shrimp, topped with tomato sauce, mozzarella and Parmesan cheeses and baked. Make extra sauce and serve with a side of spaghetti. A wonderful company dish.

- Butterfly shrimp and dredge in flour.
- Dip in beaten eggs, then in bread crumbs.
- Heat oil in a large skillet and fry shrimp til golden brown.
- No need to cook through- they will also be baked.
- Remove to a shallow casserole dish in a single layer.
- Top with tomato sauce and both cheeses.
- Bake, uncovered at 400° for 10 minutes or until cheese is melted.
- Sprinkle with chopped parsley and serve.
SHRIMP PARMIGIANA

- Pour oil into a pot and heat to 350 degrees F (175 degrees C).
- Combine paprika, salt, black pepper, oregano, thyme, marjoram, garlic powder, onion powder, and cayenne powder in a bowl. Mix 1 tablespoon of spice mixture with bread crumbs and Parmesan cheese in a separate bowl. Mix remaining spices with flour in a third bowl.

BUTTERFLY SHRIMP PARMIGIANA

- PREHEAT oven to 450 degrees F.
- ARRANGE the shrimp in a single layer in a large oven-safe serving dish. Bake for 10 minutes or until shrimp are thoroughly cooked.
- BOIL 1 1/2 quarts of water for pasta.
- POUR 1/2 jar of sauce into baking dish. Sprinkle 1/4 cup of each type of cheese over sauce. Layer shrimp on top of cheese. Sprinkle 1/4 cup of each type of cheese over shrimp. Bake for 10 more minutes or until cheese is melted.
- ADD angel hair pasta to boiling water and cook according to package directions until noodles are al dente. Drain noodles when done and return to pot. Pour 1/2 jar of sauce and 1/2 cup of each type of cheese into pot and toss with pasta. Return pot to low heat, stirring occasionally for 2 to 3 minutes or until pasta and sauce are hot.
- SCOOP noodles with sauce onto serving dishes. Top pasta with shrimp and additional sauce.

- Whisk together eggs and milk in a medium bowl. Stir together panko, 3/4 cup Parmigiano-Reggiano, and 1 1/4 teaspoons salt in a shallow dish. Set aside.

- Preheat broiler to high with oven rack 6 inches from heat. Divide marinara among 4 shallow, broiler-safe, 8-ounce gratin dishes. Top evenly with fried shrimp and mozzarella. Place on a rimmed baking sheet, and broil until cheese is melted, 2 to 3 minutes. Sprinkle with remaining 1/4 cup Parmigiano-Reggiano. Top evenly with basil, and serve with garlic bread.
