BUTTERED SNOW AND GREEN PEAS



Buttered Snow and Green Peas image

A buttery mix of both snow peas and green peas that can be flavored with either chives or mint. Our family is divided half want mint and half want chives.

1 lb snow peas, trimmed
2 1/2 cups tiny peas, fresh or 10 ounces frozen peas
2 tablespoons butter
1 -2 tablespoon fresh chives or 1 -2 tablespoon mint, chopped
salt and pepper

Steps:

  • Blanch peas in boiling salt water for no more than 1 minute. Drain and rinse under cold water.
  • Melt butter in large skillet. Add peas; season to taste with salt and pepper. Stir over medium-high heat until hot about 1 to 2 minutes. Do Not over cook.
  • Put in serving bowl and sprinkle with either chives or mint.

1/4 pound snow peas
Salt to taste if desired
1 tablespoon butter

Steps:

  • Trim off string side of each snow pea.
  • Bring enough water to boil to cover peas. Add salt to taste. Add snow peas and let simmer about 30 seconds or until crisp tender. Do not overcook. Drain.
  • Heat butter in skillet and add peas. Toss briefly and serve.

1/4 pound snow peas, trimmed, discarding the strings, and cut crosswise on the diagonal into 1/2-inch pieces (about 1 cup)
1 tablespoon unsalted butter

Steps:

  • In a large saucepan of boiling water cook the carrots for 3 minutes, or until they are crisp-tender. Add the snow peas, cook the vegetables for 30 seconds, and drain them well. Return the vegetables to the pan, add the butter and salt and pepper to taste, and heat the vegetables over moderately low heat, stirring, until the butter is melted.

Pinch of red-pepper flakes
1 clove garlic, smashed
8 ounces snow peas, trimmed and sliced in half
8 ounces pea shoots, cut into 2-inch lengths
Coarse salt
1/2 lemon

Steps:

  • Heat oil, red-pepper flakes, and garlic in a large skillet over medium-high, stirring constantly, until garlic is golden, about 1 minute. Add snow peas and cook, stirring, until bright green and still crisp, about 1 minute.
  • Add pea shoots in batches along with 1 tablespoon water. Cook, stirring, until just wilted, about 30 seconds. Season with salt, squeeze lemon over top, and serve.
