CREAMY BUTTER BEANS



Creamy Butter Beans image

Creamy Butter Beans have lots of smoked ham flavor. They're so thick and creamy and make a fantastic side for any southern meal.

1 pound dried large lima beans
1 tablespoon bacon grease or butter
1/2 cup diced onion
1/3 cup diced celery
1/4 cup diced carrot
1 1/2 cups chopped smoked ham
2 ham hocks
1 (32-ounce) carton chicken broth
4 cups water
2 bay leaves
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
4 tablespoons butter
1/2 teaspoon Cajun or Creole seasoning

Steps:

  • Rinse and sort the beans, getting rid of any broken pieces. Place in a stockpot or Dutch oven and cover with 1-inch of water. Bring to a boil. Place lid on pot and remove from heat. Let sit 1 hour.
  • Meanwhile, in a large pot or Dutch oven, heat bacon fat over medium heat.
  • Add onion, celery, and carrots and saute until soft, about 3 to 5 minutes.
  • Add ham, ham hocks, chicken broth, water, bay leaves, garlic powder, thyme, black pepper, and red pepper flakes.
  • Bring to a boil and reduce heat to maintain a simmer. Simmer for 1 hour.
  • Once beans have been sitting for an hour, drain them.
  • Add beans, butter, and Cajun or Creole seasoning to the chicken broth mixture after it has simmered for 1 hour. Continue to simmer for 60 to 90 minutes. If liquid level gets too low (ie not all the beans are submerged), add more water.
  • Remove ham hocks. Let cool slightly and then remove any meat from the bone, chop it up and return it to the pot.
  • Serve as is for a side dish or serve over rice with a side of cornbread for a main dish.

If you are looking for a way to fix lima beans besides boiling them in water try this recipe. I don't think you'll be sorry you tried them. :) If you want to have more of a buttery flavor,remove the beans from the liquid and place into a bowl then add the final 2 Tablespoons of butter and then salt and pepper to taste. 4 tablespoons butter, divided
1/8 cup onion, finely chopped
3/4-1 cup chicken broth
1 (12 ounce) package frozen lima beans
1/4 teaspoon salt (to taste)
1/4 teaspoon ground black pepper, to taste

Steps:

  • In a medium sized saucepan melt 2 Tablespoons margarine,then add onion and cook until soft.
  • Add chicken broth, and bring to a boil.
  • Then add the lima beans,let broth return to a boil.
  • Reduce heat and cover beans, let simmer for 25 to 30 minutes, stirring occasionally.
  • After the beans are done DO NOT drain, add remaining margarine,salt, and pepper to taste.
  • Then serve.

1 (16 ounce) package dried lima beans
5 slices bacon, chopped
1 cup heavy whipping cream
½ cup butter
salt and ground black pepper to taste

Steps:

  • Cover lima beans with water in a large pot and soak overnight. Drain and return lima beans to the pot; cover beans with fresh water.
  • Heat a large skillet over medium-high heat; cook and stir bacon until crisp, about 5 minutes. Reserve about 2 teaspoons bacon drippings and drain bacon on paper towels.
  • Bring lima beans, bacon, and reserved bacon drippings to a boil. Reduce heat to medium-low and simmer until beans are just tender, 40 to 60 minutes. Stir heavy cream and butter into bean mixture and cook until thickened, about 15 minutes more. Season with salt and pepper.

This Southern butter beans recipe combines tender and creamy beans with smoky ham for the most flavorful comfort meal.

1 lb bag of regular lima beans or baby lima beans/butter beans
1 medium onion
2 ham hocks or 1 leftover ham bone, with some meat still on it
2 garlic cloves
1 tsp sea salt
1 tsp black pepper
1 tbsp olive oil

Steps:

  • Now, you can choose to soak the beans overnight if you want, but you really don't have to. Either way, the first step is to wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
  • After the beans have sat, drain the water and put the beans to the side. Add the oil to the pot and sauté the ham hocks and onions together, until the onion is clear and tender. Then add garlic and sauté about 2 minutes more. Add the beans and cover with water. Add pepper and salt (only about 1 teaspoon of salt at first).
  • Bring to a boil; stir, reduce heat, and cover and simmer for about 2 hours. Keep checking the water level and stirring every once in a while. Add more water if needed. Keep that water just about an inch above the beans. Cook until beans are tender, more salt here is optional. And oh the gravy this makes, oh my... so good! Serve over rice
