VANILLA BUTTERCREAM FROSTING

Vanilla Buttercream Frosting image

This is my favorite vanilla buttercream. It's the perfect vanilla frosting that's simple, creamy and smooth and tastes unbelievable on vanilla cupcakes!

Provided by Sally

Categories     Frosting

Time 5m

Number Of Ingredients 5

1 cup (230g) unsalted butter, softened to room temperature
4 - 5 cups (480-600g) confectioners' sugar (see note)
1/4 cup (60ml) heavy cream, half-and-half, or whole milk, at room temperature
2 teaspoons pure vanilla extract
salt, to taste

Steps:

  • With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Add 4 and 1/2 cups confectioners' sugar, the heavy cream, and vanilla extract. Beat on low speed for 30 seconds, then increase to medium-high speed and beat for 2 full minutes. Taste. Add a pinch of salt if frosting is too sweet. I always add 1/8 teaspoon.
  • You can control the consistency at this point- add up to 1/2 cup more confectioners' sugar if frosting is too thin or more heavy cream if frosting is too thick (add only 1 Tablespoon at a time, beat together, then taste and add more if desired).
  • Use immediately or cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator then beat the frosting on medium speed for a few seconds so it's creamy again. After thawing or refrigerating, beating in a splash of heavy cream or milk will help thin the frosting out again, if needed.

BUTTERCREAM CANDIES

Buttercream Candies image

Buttercream Candies are treats with a soft and creamy buttercream filling dipped and covered in melted chocolate.

Categories     Dessert     Snack

Time 3h

Number Of Ingredients 8

½ cup (1 stick / 113 g) unsalted butter, (room temperature)
4 cups (500 g) confectioners' sugar
3 tablespoons whole milk, (room temperature)
2 teaspoons vanilla extract
½ teaspoon almond extract
1 pinch kosher salt
4 bars (4 ounces each) semi-sweet baking chocolate bars, (chopped)
1 teaspoon vegetable oil

Steps:

  • In the bowl of a stand mixer with a paddle attachment (or in a large bowl using a handheld mixer), beat the butter until creamy (about 2 minutes).
  • Add the confectioners' sugar. Beat on low for about a minute. Add the milk, vanilla, almond extract, and pinch of salt. Beat on high until smooth and creamy (about 3 minutes).
  • Cover the bowl with plastic wrap and place the buttercream mixture in the refrigerator to chill for one hour, up to 24 hours.
  • When ready, line a baking sheet with parchment paper and remove the chilled buttercream from the refrigerator.
  • Scoop out the buttercream with a one tablespoon scoop and roll it into a ball. Place it on the parchment-lined baking sheet. Repeat with the remaining buttercream. (If the mixture gets too sticky, add some confectioners' sugar to your hands.)
  • Place the balls of buttercream in the refrigerator to chill for another hour, up to 24 hours.
  • In the last few minutes of chilling the buttercream balls, melt the chocolate. Add the chocolate pieces and oil to a microwave-safe bowl. Heat in 20-second increments, stirring after every 20 seconds, until the chocolate is melted and creamy. Let it sit for about 5 minutes to cool before dipping the buttercream balls.
  • Remove the buttercream balls from the refrigerator. Working one at a time, gently drop the balls into the melted chocolate, making sure they are completely covered in chocolate.
  • Using a fork, lift out the chocolate-covered buttercream. Use a toothpick or another fork to slide the buttercream candy onto the parchment-lined baking sheet.
  • Drizzle the remaining chocolate over the candies. Place in the refrigerator for about 30 minutes, or until the chocolate has set.
  • Store candies in the refrigerator in an airtight container for up to 2 weeks.

BUTTERCREAM

Provided by Alton Brown

Categories     dessert

Time 28m

Yield enough for 1 (2-layer) 9-inch

Number Of Ingredients 4

4 eggs, room temperature*
1/2 cup sugar
1/2 cup dark corn syrup
10 ounces butter, cubed and at room temperature

Steps:

  • In a large mixing bowl, whip the eggs until light and fluffy.
  • In a small saucepan bring the sugar and the corn syrup to a boil. Lubricate the inside of a metal baster with a small amount of vegetable oil and dispense it completely. Then use this to drizzle the sugar mixture into the mixing bowl with the eggs. The mixer should be on low speed until you finish drizzling in all of the sugar mixture.
  • Once the entire mixture of the sugar is incorporated, slowly add the butter pieces. Only add more butter when you can no longer see the previously added pieces. It will go fast at first and then slow down. Continue to whip until the mixture is creamy.
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
