EASY BUTTER COOKIES I
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- Mix together all ingredients until well-blended.
- Roll 2-inch sized pieces of dough into balls and place on cookie sheet. Flatten each with the back of a fork.
- Bake 13 to 15 minutes until light brown. Let cool on wire rack.

WORLD'S BEST BUTTER COOKIES
I tested 8 different butter cookie recipes, looking for the "perfect" butter cookie. It had to be buttery, a little crumbly (like shortbread), and not too sweet. This is the winner. I think these are the Worlds Best Butter Cookie, courtesy of Chef Alice Medrich.

Steps:
- Beat the butter, sugar, salt and vanilla together until smooth and creamy.
- Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
- Add the flour and mix just until incorporated.
- Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
- Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
- Before baking, preheat the oven to 325°F.
- Line your baking sheets with parchment.
- Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
- Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
- Note: you can do many things with these cookies.
- You could roll the dough out and cut shapes.
- You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
- You could make them and then dip them half into chocolate.
- You could just make them and eat them, which is my favorite.
- Whatever you do, they will be delicious.

- Whisk together the flour, baking powder and salt in a medium bowl. Add the butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on high speed for a full 2 minutes, scraping down the bowl halfway through the mixing; the butter should be very light and fluffy. Add the egg and vanilla and beat on medium speed until well combined. Add half the dry ingredients and beat on low speed to combine. Scrape down the mixing bowl before adding the remaining dry ingredients and beat to combine. Refrigerate for 1 hour in the bowl for drop cookies, or form into a 1-inch log for slice-and-bake cookies.
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Place the turbinado sugar in a small bowl. For drop cookies, scoop the cookie dough with a 1 tablespoon-size cookie scoop and then dip the tops of the cookie dough balls into the sugar. Place onto the prepared baking sheet.
- For slice-and-bake cookies, cut the log into 1/2-inch-thick rounds. Press the tops into the sugar and place on the prepared baking sheet.
- Bake the cookies until slightly puffed and lightly golden on the bottom, about 15 minutes.
BETTY BROWN'S BUTTER COOKIES
This recipe came from Great Gramma LaLonde's neighbor - Betty Brown. It is the only cut-out cookie I remember Grams Lorette ever making. I like them really thin and crispy. Dad prefers them thicker. Frosted is the best, using confectioners' sugar, flavoring, and milk.

- Beat butter, sugar, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy. Sift flour, cream of tartar, baking soda, and salt together in a separate bowl; mix, 1 cup at a time, into creamed butter mixture until dough is just mixed. Form dough into 1-inch-thick disks and place on a plate; chill in refrigerator, 2 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).

- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Divide dough into four 1-1/2 cup portions; mix and shape for each variety as follows. Yield: 4 portions (1-1/2 cups each)., To prepare Cutouts: Using one portion dough, divide into two balls; roll each ball directly on an ungreased baking sheet to 1/8-in. thickness. - Combine 8 tablespoons of the butter, egg yolk, sugar, pinch of salt and flour. When ingredients are completely blended, divide the dough in half. Roll each dough half into a cylinder, about 1 1/2 inches in diameter and 6 inches long. Wrap each cylinder in wax paper and then in foil. Refrigerate until hard or for at least 2 hours. Preheat the oven to 375 degrees. Grease 2 cookie sheets with remaining tablespoon of butter. Remove dough from fridge and slice each cylinder crosswise into 1/4-inch rounds. Place the rounds on the prepared cookie sheets, but don't crowd them as they spread during baking. Brush the tops with reserved egg white. Center some sliced almonds on each cookie and bake for 12 to 14 minutes or until the edges begin to brown. Cool on a cookie rack. Delicious served with strawberries simply macerated in sugar.
THE BEST EVER GOOEY BUTTER COOKIES
I like this recipe because you make the dough one day and bake the next. After you frig it over night the dough is easier to work with. I got this recipe from my sister, she's the one that told me to frig the dough overnight.

- Mix the butter ( I melt it in the microwave) and cream cheese ( I mix by hand with a wooden spoon, but any spoon would work).
- Add vanilla and the egg mix together.
- Add the Butter flavor cake mix.
- Put in the frig overnight.
- The next day.
- Preheat oven to 350.
- Spray cookie sheet very lightly ( if you use parchment paper don't spray cookie sheet, I prefer the parchment paper).
- Roll dough into balls (about the size of a walnut), roll into powdered sugar.
- Put onto cookie sheet ( I put them 3 in a roll and space out, and only have 4 rolls).
- Bake 10 to 12 minutes.
- Remove from oven, sprinkle with powdered sugar.
- Let stand on cookie sheet for a few minutes.
- Then remove and let cool.
THE BESTEST BUTTER COOKIES (ROLLED)
My mother in law has been making these for Christmas for years and years. I make them for all holidays, using different cookie cutters for whatever occasion. They are the best when they are frosted, but sometimes I just sprinkle on colored sugar before baking. I call them "Play Dough" cookies because that's what the dough smells like to me! (Don't worry, they don't taste like Play Dough :) Chilling time is not included.

- Preheat oven to 375 degrees. Combine flour, cornstarch, sugar and salt in a food processor, and pulse once or twice. Add butter, and pulse 10 or 20 times, until butter and flour are well combined. Add vanilla and egg and pulse 3 or 4 times. Add about half the milk and pulse 2 or 3 times. Add the remaining milk a little at a time, pulsing once or twice after each addition, until the dough holds together in a sticky mass.
- Remove the dough from the machine to one or more bowls. Make cookies as described in Step 3, or make any of the variations below.
- To make cookies, drop rounded teaspoons of dough (you can make the cookies larger or smaller, if you like) onto a nonstick baking sheet, a sheet lined with parchment paper or a lightly buttered sheet. If you want flat cookies, press the balls down a bit with your fingers or the back of a spatula or wooden spoon. Bake 11 minutes, or until the cookies are done as you like them. Cool on a rack, then store, if necessary, in a covered container.

Taken from my cookie favorites folder. If you are using unsalted butter then increased the salt to 1/2 teaspoon. The dough can be prepared up to 4 days in advance and refrigerated or freeze up to 1 month. Yield is only estimated depending on how large you slice the dough.

- In a bowl sift together flour, salt and baking powder.
- Using an electric mixer beat butter until creamy (about 3 minutes).
- Add in sugar and beat until light and fluffy.
- Add in egg and extract; beat until well combined.
- Gradually beat in flour mixture until mixture forms a dough.
- Divide the mixture in two pieces.
- Roll into a log then wrap in wax paper.
- Chill logs until very firm (about 4 hours) or freeze for up to 1 month.
- Set oven to 375° (middle oven rack).
- Remove one roll at a time from fride and slice into about 1/4-inch slices, working fast as the dough warms quickly and will be harder to slice (slice smaller or larger if desired).
- Place the slices on a lightly-buttered baking sheet spacing about 1 inch apart.
- Bake for 10-12 minutes or until golden around the edges (do not over bake).
- Remove to a rack to cool slighty, then coat in sugar.

BEST EVER BUTTER SUGAR COOKIES
I can't believe this recipe wasn't already posted. I've made these for years as my standard cut-out sugar cookie recipe. They taste great, stay soft, and the dough is easy to work with, even in our dry climate! I think I got the recipe off of a Land o' Lakes butter package over 20 years ago. They're called 'best ever' for a reason.

- Combine butter, sugar, and egg in large mixer bowl. Beat at medium speed until creamy. Reduce speed to low; add flour, orange juice, vanilla, and baking powder. Beat until well mixed. Divide dough into thirds. Wrap in plastic wrap and shape into disks. Refrigerate until firm (about 2-3 hours).
- Heat oven to 400 degrees. On lightly floured surface roll out dough, 1/3 at a time (keeping remaining dough refrigerated). Roll to 1/4 inch thickness. Cut with cookie cutters. Place 1 inch apart on ungreased cookie sheets. Sprinkle with decorative sugars if you don't plan on frosting them. Bake 6-10 minutes or until edges are very lightly browned. Cool completely.
- Frost or decorate as desired.
- Preparation time does not include time in refrigerator.
