BROWN BUTTER SAUCE

This recipe for brown butter sauce comes from "Inspired by Ingredients" by Bill Telepan.

Yield Makes enough for 4 servings

Number Of Ingredients 4

2 tablespoons white-wine vinegar
4 tablespoons (1/2 stick) unsalted butter
1/4 cup heavy cream
Pinch of coarse salt

Steps:

  • Place vinegar in a large, heatproof bowl.
  • Place butter and cream in a small, heavy-bottomed saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and whisk constantly until mixture thickens to consistency of mayonnaise and the milk solids separate out and float to the top, about 5 minutes. Transfer mixture to the bowl of a food processor and process for 20 seconds to break up solids. Return mixture to saucepan and cook over medium-low heat, whisking constantly until it becomes a deep brown, about 3 minutes.
  • Add mixture to vinegar (it will foam up). Add salt and swirl bowl to combine; set aside.

BEARNAISE SAUCE

Bearnaise sauce must be kept at a constant temperature. Make it no more than 20 minutes before serving; keep warm near stove.

2/3 cup white-wine vinegar
1 shallot, minced
1 1/2 teaspoons dried tarragon
4 large egg yolks
1/2 cup (1 stick) cold unsalted butter, cut into pieces
Coarse salt

Steps:

  • In a small saucepan, bring vinegar, shallot, and tarragon to a boil. Cook until liquid has reduced to 2 tablespoons, about 4 minutes. Strain through a fine mesh sieve. Rinse out saucepan, and return strained vinegar.
  • Add egg yolks and 2 tablespoons water. Cook, over low heat, whisking constantly, until mixture thickens and forms thick ribbons, 3 to 4 minutes.
  • Whisk in butter, if sauce gets too hot (it starts to bubble), remove from heat and whisk in a piece of butter. Continue whisking until all the butter has been absorbed, about 3 minutes. Remove from heat and immediately transfer to a bowl to stop further cooking. Season with salt. Use immediately, or keep warm over a pan of barely simmering water.

1/4 cup chopped fresh tarragon leaves
2 shallots, minced
1/4 cup champagne vinegar
1/4 cup dry white wine
3 egg yolks
1 stick butter, melted
Salt and pepper

Steps:

  • Make the bearnaise reduction first. In a small saucepan, combine the tarragon, shallots, vinegar and wine over medium-high heat. Bring to a simmer and cook until reduced by half. Remove from heat and set aside to cool.
  • Blend yolks and bearnaise reduction together. With the blender running, add 1/3 of the butter in a slow steady stream. Once it emulsifies, turn the blender speed up to high and add the remaining butter. Season with salt and pepper and set aside in a warm spot to hold the sauce.

2 (16 ounce) cans of large butter beans (or lima beans)
1 (8 ounce) can tomato sauce
4 carrots, peeled & shredded
0.5 (12 ounce) bag frozen spinach
1 small onion, peeled and diced
1/2 cup chopped fresh thyme (or dried equivalent)
1 tablespoon crushed garlic
9 ounces andouille sausages, sliced on an angle (I substitute turkey sausage to bring the fat down)

Steps:

  • In a med. stock pot, bring all ingredients to a boil. Season with salt & pepper to taste.
  • Reduce heat and simmer for 30 minute or until beans are tender and sausage has shrunk to small disks. Serve hot.

Bearnaise is a perfect sauce for red meat, fish, or chicken. It is great even on veggies.

¼ cup white wine vinegar
¼ cup dry white wine
1 tablespoon minced shallot
½ teaspoon dried tarragon
¼ teaspoon salt
⅛ teaspoon ground black pepper
3 egg yolks
½ cup hot melted butter

Steps:

  • Combine the vinegar, wine, shallots, tarragon, salt, and pepper in a small saucepan. Boil over medium-high heat until the liquid is reduced to about 2 tablespoons. Strain vinegar reduction into a large bowl; set aside.
  • Bring several inches of water to a boil in a saucepan over high heat, then reduce heat to low or medium-low to maintain the water at a bare simmer. Whisk the egg yolks into the vinegar reduction, then place the bowl over the simmering water. Whisk constantly until the yolks have thickened and turned a pale lemon yellow color. The mixture will form ribbons when the whisk is lifted from the bowl. Once the yolk has reached this point, remove the bowl from the simmering water.
  • Slowly pour the hot butter into the egg yolk mixture while continuing to whisk vigorously. Do not stop whisking until all of the butter is fully incorporated or the sauce will separate. Once finished, the mixture will have become a thick and creamy sauce. Serve immediately.

1 (16 ounce) package dried lima beans
5 slices bacon, chopped
1 cup heavy whipping cream
½ cup butter
salt and ground black pepper to taste

Steps:

  • Cover lima beans with water in a large pot and soak overnight. Drain and return lima beans to the pot; cover beans with fresh water.
  • Heat a large skillet over medium-high heat; cook and stir bacon until crisp, about 5 minutes. Reserve about 2 teaspoons bacon drippings and drain bacon on paper towels.
  • Bring lima beans, bacon, and reserved bacon drippings to a boil. Reduce heat to medium-low and simmer until beans are just tender, 40 to 60 minutes. Stir heavy cream and butter into bean mixture and cook until thickened, about 15 minutes more. Season with salt and pepper.

water to cover
2 ½ pounds fully-cooked pork sausage, cut into 2-inch pieces
2 tablespoons red pepper flakes

Steps:

  • Place lima beans in a large pot with enough water to cover by 2 inches; bring to a boil. Remove pot from heat and let stand for 2 hours. Drain and rinse beans under cold water.
  • Transfer beans back to large pot and pour in enough water to cover; add sausage and red pepper flakes. Bring water to a boil, decrease heat, and simmer, adding water as needed to keep beans from sticking to the bottom, until beans are tender and liquid has thickened, 1 to 2 hours.

1/2 teaspoon sea salt
1/2 cup Dijon mustard
1 tablespoon butter
1 tablespoon milk 12 links breakfast sausage
1 medium vidalia onion, diced
2 green apples, peeled and diced
1/2 cup brown sugar

Steps:

  • heat water to boiling in a saucepan an add butter beans. cover and let simmer for 25 minutes.
  • fry sausage links until just brown. remove from skillet and cut into bite sized chunks.
  • remove from skillet while leaving drippings in pan.
  • add onion over low heat , stir apples in and add brown sugar over top.
  • turn up heat to medium and let sugar thicken.
  • when sugar gets syrupy, remove from heat.
  • when beans are cooked, drain and add butter, milk, salt, and mustard and mix well.
  • turn into a buttered baking dish and lay sausage over top the spread apples, onion mixture over top.
  • bake at 350 for 30 minutes.
