Time 20m

Categories     Cakes/Cupcakes     Dessert

Time 1h30m

Number Of Ingredients 19

FOR THE TOASTED PECANS:
3 cups chopped pecans
1/3 cup unsalted butter (melted)
FOR THE CAKE:
1 cup (2 sticks) unsalted butter (softened)
2 cups granulated sugar
4 large eggs
1 Tbsp vanilla extract
1 tsp butter extract
3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup buttermilk
FOR THE FROSTING:
1 cup butter (either salted or unsalted - I used salted, softened)
10 ounces (one 8-ounce brick plus 2 ounces) cream cheese (softened)
1 Tbsp vanilla extract
5-6 cups confectioners' sugar
1/4 cup milk or heavy cream (if needed)

Steps:

  • First, toast your pecans: Preheat oven to 350 degrees F. Toss together the chopped pecans and melted butter and spread out evenly on a parchment-lined baking sheet. Toast the nuts for 5-10 minutes, watching carefully so they do not burn. They should smell nutty and fragrant. Remove from oven and cool the pecans until cool to the touch. Meanwhile, grease three 9" round baking pans and line with parchment rounds.
  • In the bowl of a stand mixer, cream the butter and granulated sugar together until fluffy, about 2 minutes. Beat in the eggs, one at a time, mixing well after each addition, followed by the vanilla and butter extracts. Meanwhile, in a medium bowl, whisk together the flour, baking powder, and salt. Gradually add in the flour mixture, alternating with the buttermilk, mixing well after each addition. Finish with the buttermilk.
  • Fold in 1 & 3/4 cups of the toasted pecans. Pour evenly among the pans. Bake for approximately 25-30 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool completely and if cakes are too domed on top, use a serrated knife to gently remove the dome.
  • To make your frosting: In another bowl of your stand mixer, beat the butter, cream cheese, and vanilla together with the paddle attachment until creamy and combined, about 1 minute. Gradually add in the confectioners sugar, one cup at a time, beating well after each addition until frosting is light and fluffy. Only use the heavy cream/milk if frosting becomes too thick or pasty, nothing that you may not need it.
  • To assemble: place a cake layer on a cake stand or plate. Spread with some of the frosting and top with another cake layer. Repeat. Once your layers are assembled, frost the outside of the cake as best as you can, until smooth. Sprinkle the remaining toasted pecans around the perimeter of the top of the cake. Serve!

BUTTER TOFFEE-PECAN LAYER CAKE RECIPE - (4.4/5)

Butter Toffee-Pecan Layer Cake Recipe - (4.4/5) image

Provided by jeknudson

Number Of Ingredients 23

BROWN BUTTER TOFFEE FROSTING
1 cup unsalted butter, divided
2 cups packed dark brown sugar
1 1/4 cups heavy cream
2 tablespoons golden cane syrup (such as Lyle's Golden Syrup) or light corn syrup
1/4 teaspoon kosher salt
1 tablespoon bourbon, dark rum, or cognac (optional)
3 cups powdered sugar
1 teaspoon vanilla extract
CAKE
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
2 cups granulated sugar
1 cup unsalted butter, softened
3 large eggs
1 teaspoon vanilla extract
1 cup whole buttermilk
1 cup finely chopped toasted pecans
1/2 cup toffee bits (such as Heath Bits 'O Brickle Toffee Bits)
ADDITIONAL INGREDIENTS
1/2 cup toasted pecan halves
1/4 teaspoon flaky sea salt (such as Maldon), optional

Steps:

  • Prepare the Frosting: Melt 3/4 cup of the butter in a deep, heavy-duty saucepan over low. Increase heat to medium-high, and bring butter to a boil, stirring constantly. Cook, stirring constantly, until butter is fragrant and milk solids start to brown, about 5 minutes. Remove pan from heat, and stir in brown sugar, cream, syrup, salt, and, if desired, bourbon. Return pan to medium heat, and cook, stirring occasionally, until sugar dissolves. Increase heat to medium-high, and bring to a boil. Boil, stirring constantly, exactly 2 minutes. Remove mixture from heat, and pour into bowl of a heavy-duty electric stand mixer fitted with paddle attachment. Beat on low speed until mixture is lukewarm, about 8 to 10 minutes. Gradually add powdered sugar and vanilla, and beat on low speed until combined after each addition. Beat until frosting is completely cool and consistency is thick, creamy, and spreadable, 6 to 10 minutes. Add remaining 4 tablespoons butter, 1 tablespoon at a time, and beat on medium speed until fully incorporated after each addition. Cover frosting, and let stand at room temperature until ready to use. Prepare the Cake: Preheat oven to 350°F. Lightly coat 2 (9-inch-round x 2-inch-deep) cake pans with cooking spray, and line bottoms with parchment paper. Sift together flour, baking powder, and salt in a medium bowl. Set aside. Beat sugar and butter in a large bowl with an electric mixer on medium-high speed until thick and creamy, 4 to 5 minutes. Add eggs, 1 at a time, and beat on medium speed until well blended after each addition. Beat in vanilla. Add flour mixture, one-third at a time, to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat on low just until smooth after each addition. (Do not overbeat or the cake will be tough.) Fold in chopped pecans and toffee bits. Divide batter evenly between cake pans, smoothing surface. Bake in preheated oven until a wooden pick or cake tester inserted into center of cake comes out clean, 30 to 35 minutes. Cool in pans on a wire rack 10 minutes. Invert layers onto wire rack, and peel off parchment paper. Cool completely, about 1 hour. Place 1 cake layer on a serving plate; spread evenly with 1 heaping cup of frosting. Chill 15 minutes. Top with remaining cake layer, and frost top and sides of cake with remaining frosting. Sprinkle pecan halves in a ring around top edge of cake. If desired, crush sea salt with your fingers, and sprinkle over pecans. Serve immediately, or store, covered, at room temperature for 3 to 5 days. Prep Tip Make the frosting first to give it a chance to firm up as it cools while you prepare and bake the cake layers.

BUTTER PECAN CAKE

Butter Pecan Cake image

This is one of the best cakes I have ever had! It was so good in fact, that I had to get it out of the house so I would not eat it all! I did, however, add ½ cup more pecans so that I would have some for the icing. Also, if you prefer thick icing (like I do) you might want to double the icing recipe.

BUTTER TOFFEE PECANS

BUTTER TOFFEE PECANS image

Categories     Candy     Nut     Vegetarian     Quick & Easy     High Fiber     Wheat/Gluten-Free     Simmer

Yield 6 cups

Number Of Ingredients 7

1/2 cup (1 stick) butter
1/2 cup (1 stick) margarine
3/4 cup packed brown sugar, light or dark
3/4 cup white sugar
3 tablespoons water
1/4 teaspoon baking soda
3 cups pecan halves (walnuts, almonds, cashews or any combination of them may be substituted)

Steps:

  • In a medium sized heavy bottomed saucepan, combine butter, margarine, sugars and water. Cook, stirring constantly, over medium heat until butter melts and mixture starts to simmer. Stop stirring. Add candy thermometer with bulb tip well into mixture but not touching bottom of pot. Continue cooking, without stirring, until candy thermometer reads 305 degrees Fahrenheit. Remove from heat and quickly stir in baking soda, then nuts. Don't stir too long or toffee will turn cloudy and crumble when cool. Immediately transfer to large baking sheet that has been sprayed with vegetable oil cooking spay. Seperate nuts with two forks. At this point, some of the pecans may not have enough toffee covering them. After all nuts have been seperated, the toffee should be cool enough to handle but still warm enough to be pliable. Using your fingers and a fork, wrap extra toffee around any uncoated nuts. Can be stored in an airtight container when completely cool. These can be enjoyed as a snack or crushed and used as a topping for ice cream, bread pudding, cheesecake, pumpkin or sweet potato pie. Also great stirred into your favorite chocolate fudge recipe!
