SNOWMAN COOKIES

- In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Refrigerate, covered, overnight., Preheat oven to 325°. Shape dough into forty-eight 1-in. balls, forty-eight 3/4-in. balls and forty-eight 1/2-in. balls. On ungreased baking sheets, place one ball of each size, side by side, for each snowman., Bake 18-20 minutes or until light brown. Remove from oven; cool on pans 2 minutes. Press on chocolate chips for eyes and M&M's for buttons. Carefully remove from pans to wire racks to cool completely., For frosting, in a small bowl, beat confectioners' sugar, extract and enough milk to reach a piping consistency. If two colors of frosting are desired, transfer half of the frosting to another bowl and tint each with a different food coloring., Cut a small hole in a corner of a food-safe plastic bag; fill with frosting. Pipe scarves on snowmen. Use frosting to attach chocolate kisses for hats.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in water and extract. Gradually beat in 2 cups flour and mix well; if needed add remaining flour, 1 tablespoon at a time until dough is pliable but not dry. Place 1/3 cup each in 2 small bowls. Add red food coloring to 1 and green to the other; set aside. , Shape remaining dough into twelve 1-in. balls and twelve 1-1/2-in. balls. Place 1 smaller ball above 1 larger ball on ungreased baking sheets; flatten slightly. , For each snowman, shape 2 teaspoons of colored dough into a hat; place above head. For scarf, shape 1/4 teaspoon of each color into a 3-in. rope; twist ropes together, leaving 1 end untwisted. Place scarf around snowman's neck. Insert jimmies for eyes and nose. , Bake at 350° for 10-12 minutes or until set. Cool on baking sheets.

- Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Add milk and vanilla; mix well. Gradually add flour. Remove 2/3 cup dough to a small bowl; tint blue. Repeat with 1 tablespoon of dough and orange food coloring; set aside., For snowmen, shape white dough into 12 balls, 1-1/4 in. each; 12 balls, about 1/2 in. each; and 12 balls, about 1/8 in. each. For bodies, place large balls on two ungreased baking sheets; flatten to 3/8-in. thickness. Place 1/2-in. balls above bodies for heads; flatten., Shape half of blue dough into 12 triangles. Place triangles above heads for hats; attach 1/8-in. white balls for tassels. Shape orange dough into noses; place on heads. Divide the remaining blue dough into 12 pieces; shape into scarves and position on snowmen. Add chocolate chip eyes and buttons. , Bake 13-16 minutes or until set. Cool 2 minutes before carefully removing to wire racks.

- Using tongs, dip cookies in candy coating; allow excess to drip off. Place on waxed paper. Place two chocolate chips on one end of each cookie for eyes. Place M&M's minis down middle for buttons and between eyes for nose. , For arms, dip ends of two pretzel stick halves into coating; attach one to each side of snowmen. Let stand until set. Pipe mouth and scarf with gel or frosting.

MELTED SNOWMAN PEANUT BUTTER COOKIES
Steps:
- Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
- Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.
PEANUT BUTTER SNOWMEN
Steps:
- Place white chocolate chips and shortening in a medium microwave-safe bowl. Microwave on high for 1 minute; stir until chips are melted and mixture is smooth. If necessary, microwave on high for additional 30 second intervals until mixture is smooth. If you prefer, place in double boiler over low heat, stirring until completely melted and smooth.
- Meanwhile, pierce 1 end of each cookie with a toothpick. Use the toothpick to dip entire cookie into the white chocolate mixture. Let excess drip back into bowl and lay cookie on wire rack. Before the white chocolate has a chance to cool, decorate the cookie with various candies into a playful snowman.
- Place chocolate sprinkles as eyebrows, blue or green dots for eyes, an orange sprinkle placed vertically for the nose and several red nonpareils for a mouth. Cut a gumdrop in half, slice a sliver from each half lengthwise to form a crescent shaped brim to the hat. Top off the hat with a gumdrop half and reserve the other half for another snowman. You may have to flatten the gumdrop a bit to fit the snowman.
- After the snowman has completely dried, tie a red string licorice around the neck as a scarf. Using a rolling pin to flatten the licorice will make it easier for the scarf to stay tied and look natural.

- Dip Nutter Butter cookies (front only) in the white candy melts, place on wax paper.
- Before the candy sets, press two mini chocolate chips onto the snowmen for eyes.
- Add half a tic tac as the nose.
- Add 3 mini M&Ms as buttons.
- Using a toothpick, dab a tiny bit of melted white candy melts onto the eyes. (optional).

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the buttermilk and extracts. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Cover and refrigerate overnight or until easy to handle. , On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with a floured 4-in. snowman cookie cutter.
