Soft & Chewy Oatmeal Scotchies image

These soft & chewy oatmeal scotchies cookies are loaded with butterscotch chips in every bite. The centers are chewy and soft, the edges are crisp, and every bite is buttery delicious!

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
2 cups (280g) butterscotch morsels

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until combined and creamy, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and butterscotch morsels. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Scoop cookie dough (here's the cookie scoop I love), about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more butterscotch morsels into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

½ cup white sugar
½ cup water
2 teaspoons vinegar
1 pinch salt
½ teaspoon vanilla extract

Steps:

  • Generously butter a 10x15 inch baking pan (with sides).
  • In a medium saucepan over medium heat, combine brown sugar, butter, white sugar, water, vinegar and salt. Cover and bring to a boil. Remove lid and heat, without stirring, to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Pour in vanilla, but do not stir. Remove from heat and pour into prepared pan. Let cool slightly before cutting into squares and allowing candy to cool completely.

2 tablespoons butter, softened
2 tablespoons shortening
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour

3/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup English toffee bits or almond brickle chips
1/4 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in toffee bits and pecans. Shape into a 10-in. roll; wrap in plastic. 1 cup light corn syrup
1 cup white sugar
1 1/2 cups smooth peanut butter
4 cups Rice Krispies*
1 1/2 cups butterscotch chips (or one 11 oz package**)
1 1/2 cups semi sweet chocolate chips (or one 11-12 oz package**)

Steps:

  • Bring sugar and corn syrup to a boil . Add peanut butter and cereal.
  • Remove from heat, and press into a greased 9x13 pan.
  • Place the butterscotch and chocolate chips in a glass bowl in microwave for about 1 1/2 minutes, stirring and place back into microwave for 30 seconds and repeating stirring until all chips are melted. This usually takes about 3-4 minutes total.
  • Spread the melted chips on tops of the cereal mixture in the pan. let cool and cut into bars.

  • Preheat oven to 375 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, brown sugar, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer; stir in any remaining flour and the butterscotch pieces.

Steps:

  • Preheat oven to 350 degrees, rack in the middle position.
  • Melt the butter in a large microwave-safe bowl for about 90 seconds on high.
  • Add the sugars and let it cool for a bit.
  • Then add beaten eggs, baking powder, baking soda, salt and vanilla extract.
  • Mix in the flour and then the butterscotch chips.
  • Add the rolled oats and mix in thoroughly.
  • Let the dough rest, uncovered for 10 minutes, allowing the butter to solidify.
  • You can either drop by rounded tablespoons, or roll in to a ball with your hands, pushing them down a bit to prevent rolling, onto a greased cookie sheet, 12 to a sheet.
  • Bake at 350 for 12 to 15 minutes.
  • Cool on the cookie sheet for 2 minutes, then remove them to a wire rack to cool completely.
  • These freeze well if you roll them in foil and put them in a freezer bag.
