A great take on a Hawaiian-style dinner. This one's great for that leftover ham. Cubed ham sauteed with onions and pineapple in a sweet sauce. Kids love it and it's great served over rice or noodles.

2 tablespoons butter
2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
  • In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.

1 cup unsweetened pineapple juice
1 1/2 ounces dark rum
Sugar to taste
1 stick cinnamon
Pat of butter

Steps:

  • Heat the pineapple juice until it steams, don't boil it. In a large mug with the cinnamon stick, stir together the rum and sugar. Pour the hot pineapple juice over rum. Float pat of butter on top. Serve immediately.

1 1/2 lbs fully cooked boneless ham
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons rum extract
1/2 fresh pineapple, peeled and cored

Steps:

  • Preheat 2-sided tabletop grill. Cut four 1/2-inch thick slices from ham (reserve any remaining ham for another use). Place butter, brown sugar and rum extract in small microwave-safe bowl. Microwave on HIGH 30–45 seconds or until butter melts.
  • Brush one side of ham with glaze and place on grill with glazed side down. Brush glaze on top of ham slices. Close grill lid, pressing down firmly to sear ham. Grill 4–5 minutes, brushing once with remaining glaze, until internal temperature reaches 140°F Remove ham from grill and cover to keep warm.
  • Cut pineapple into four 1/2- to 1-inch thick slices and place on grill; close lid. Grill 1–2 minutes until warm. Serve with ham.

1 can (20 ounces) crushed pineapple, undrained
1 cup packed brown sugar
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Cover and bake 1-1/2 hours., In a small bowl, mix remaining ingredients. Spread over ham, pressing mixture into cuts. Bake ham, uncovered, 30-60 minutes longer or until a thermometer reads 140°.

This spin on hot buttered rum has a cardamom-spiced pineapple puree in the mix. Because the fruit is roasted, the punch takes some time to prepare, but it pays off in decadent flavor.

1 1/4 cups packed light-brown sugar
1 vanilla bean, seeds scraped and pod reserved
3 1/2 ounces (7 tablespoons) unsalted butter, softened
1 large pineapple (6 pounds)
8 green cardamom pods, crushed
1 1/2 teaspoons whole allspice berries
2 1/2 cups water
3/4 cup dark rum (optional)

Steps:

  • Preheat oven to 325 degrees. Line 2 rimmed baking sheets with nonstick baking mats. Mix 1 cup sugar, the vanilla seeds, and 5 tablespoons butter. Slice 1/2 inch from both ends of pineapple, and discard. Cut 2 slices crosswise, 3/4 inch thick, and set aside. Peel the remaining pineapple, and slice into 3/4-inch-thick spears, working around core. Discard core.
  • Divide half the butter mixture between baking sheets, dropping it by rounded teaspoons onto mats. Arrange pineapple spears and rounds in a single layer on top of butter mixture. Top pineapple with spoonfuls of remaining butter mixture. Roast, rotating pans and basting with pan juices after 15 minutes, for 30 minutes. Flip pineapple, then roast until dark golden brown, about 30 minutes more. Let cool for 5 minutes. Cut rounds into 8 wedges, and reserve for garnish.
  • Meanwhile, bring reserved vanilla pod, cardamom, allspice berries, water, and remaining 1/4 cup sugar to a boil in a medium saucepan. Remove from heat, and let stand for 30 minutes. Strain, and discard solids. Working in batches, blend liquid and roasted-pineapple spears with their pan juices on low speed until coarsely pureed. Increase speed to high, and process until smooth, about 2 minutes. Strain through a fine sieve into a medium saucepan, pressing firmly on solids. Discard solids.
  • Heat pineapple mixture over low heat until heated through, then add rum if using. Divide among glasses, and top each with some of the remaining 2 tablespoons butter and reserved pineapple wedges.

  • Over medium low heat simmer the butter, brown sugar, cinnamon and nutmeg, stirring frequently about 10 minutes. Remove from the heat and blend in the rum, Dijon mustard, grapefruit juice and crushed pineapple then set the glaze aside.
  • Remove the wrapper from the ham and using a sharp knife, create a crosshatch pattern on the skin of the ham through the fat without cutting into the meat, first in one direction, then the other. Insert the cloves into each diamond (or square depending on how you sliced).
  • Preheat the oven to 425 degrees. Put a rack in the bottom of a roasting pan then place the ham in the rack and pour about ½” of water into the roasting pan and roast 30 minutes, uncovered.
  • Reduce the heat to 325 degrees, baste the ham with some of the glaze and return to the oven. Bake for 1 hour and 10 minutes at 325 degrees, basting every 20 minutes then increase the oven temp to 400 degrees, baste with the remaining glaze and bake for 20 minutes.

  • Place the ham into a roasting pan or Dutch oven. Take a knife and scour the top fat, making sure to cut around 1/3 of an inch deep. Make a grid pattern with squares approximately an inch wide and tall. Place a whole clove into the corners of the cut ham. ( see video for how to do it)
  • Mix together the pineapple tidbits, mustard, brown sugar and rum until combined. Pour over the ham. Cover the ham in tinfoil ( this is the trick to moist, juicy ham) and place in the oven.
  • Cook until an instant-read meat thermometer inserted into the thickest part of the ham, not touching bone, reads at least 145 °F. My hams take around 3 hours. Transfer ham to a serving platter, leaving pan drippings in roasting pan and cover with tinfoil. Let the ham rest while you prepare the sauce.
