Easy Candy Yams image

Chopped sweet potatoes are baked with brown sugar, caramel topping and butter, then finished with a layer of roasted marshmallows.

4 cups chopped sweet potato
1 (12 ounce) jar caramel topping
⅛ cup brown sugar
½ cup butter
1 cup miniature marshmallows

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place sweet potatoes in an 8x8 inch square baking dish. Pour caramel over potatoes. Sprinkle with sugar and dot with butter.
  • Bake in preheated oven 30 minutes, until potatoes are tender and mixture is bubbly. Remove from oven and sprinkle marshmallows evenly over potatoes. Return to oven until marshmallows are melted and browned, 5 to 10 minutes more.

1/2 lb light caramel (28)
1/4 cup half-and-half
2 tablespoons butter
2 cups powdered sugar, sifted
17 large marshmallows
3/4 cup finely chopped walnuts

Steps:

  • Combine caramels, half and half & butter in heavy saucepan.
  • Place over heat & stir until caramels are melted.
  • Stir in powdered sugar.
  • Remove from heat and spread caramel mixture on buttered wax paper to make a 16"X5" rectangle.
  • Place marshmallows, end to end, along one long side of rectangle.
  • Roll up, starting with marshmallow side, by lifting with wax paper.
  • Chill several hours.
  • To serve, cut in 1/2" slices.

1 can (14 ounces) sweetened condensed milk
1 package (14 ounces) caramels
1 cup butter, cubed
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Rice Krispies, coarsely crushed
1 package (16 ounces) large marshmallows

Steps:

  • Line two baking sheets with waxed paper; set aside. In a large saucepan, cook and stir the milk, caramels and butter over low heat until melted and smooth. Remove from the heat; stir in the cinnamon and vanilla., Place Rice Krispies in a shallow bowl. With a toothpick, dip each marshmallow into warm caramel mixture; turn to coat. Press bottoms into Rice Krispies; place treats on prepared pans. Let stand until set.

Steps:

  • So simple!
  • Just roll a marshmallow in real butter.
  • Then put the marshmallow on the end of a long sharpened stick.
  • Then roast it (turning marshmallow slowly) over hot campfire coals until crispy golden brown (Caramelly! Mmmm...).
  • May take a few marshmallows to get it just right- but you'll really enjoy trying!
