Steps:
- 1. First take half of the pecans and crush them in a food processor. Add half of the stick of butter to it and mix until smooth ( use the other half as called for by the box cake instruction). Add the vanilla extract to this mixture once it's done. Follow the instructions to the box cake. When mixing the dry ingredients to the box cake add the pudding to the dry ingredients. Then add the wet ingredients. Until well mixed ( be careful not to over mix batter. You don't want to air rate it) Afterwards take the batter and fold the pecan butter mixture into the cake batter. Bake according to the box instructions.
- 2. For the icing. Take the one cup of whipped cream and the 1/2 package of pudding and one package of butter cream icing and fold. Once folded move mixture to a ziplock bag or piping bag and chill. Until ready to top a cooled cupcake. Top the iced cupcake with the remainder of chopped pecans. Enjoy!

Steps:
- Line a 9x5" loaf pan with plastic wrap, leaving a few inches of overhang on all sides. Chill pan until ready to use. Toast pecans in a dry small skillet over medium heat, tossing occasionally, until fragrant and slightly darkened, 5-8 minutes. Let cool, then coarsely chop; set aside.
- Using an electric mixer on medium-high speed, beat cream and powdered sugar in a large bowl until stiff peaks form, about 3 minutes. Place jam in a medium bowl and whisk to loosen, then gently mix in half of the whipped cream. Mix vanilla and salt into plain whipped cream.
- Scoop half of vanilla whipped cream into prepared loaf pan and spread into an even layer. Arrange a layer of crackers on top, breaking or cutting to fit as needed. Add half of peach whipped cream, smooth into an even layer, and top with another layer of crackers. Dollop ice cream across top and smooth into an even layer. Add a third layer of crackers, followed by remaining peach whipped cream. Repeat with a fourth layer of crackers and finally spread remaining vanilla whipped cream over (don't worry if it's a little higher than edges of pan). Scatter reserved pecans on top. Cover with plastic overhang and freeze until set, at least 6 hours.
- To serve, using plastic overhang, unmold cake (if it's hesitant to come out, run the sides of the pan under warm water for a few seconds to loosen) and cut into slices. Do ahead: Cake can be made 2 days ahead. Keep frozen.

- Preheat oven to 325°F. Place 17 cookies in a food processor and process until broken into fine crumbs (alternately you can crush the cookies in a ziptop bag with a rolling pin). You should have about 1 3/4 cups loosely packed crumbs. If you're a little short, crush a couple more cookies. Combine the cookie crumbs with melted butter. Dump the mixture into a 9 1/2 inch pie dish and press the crumbs into the bottom and halfway up the sides of the pie dish. Bake for 8-10 minutes. Remove from oven and cool completely.
- Scoop ice cream into cooled crust and gently spread it into an even layer. Tightly cover and place in the freezer to firm up (at least 5 hours, preferably overnight).
- Right before serving: whip cream with powdered sugar until soft peaks form. Drizzle the pie with caramel sauce, dollop or pipe whipped cream around the edges, sprinkle with chopped pecans, and place halved or crushed cookies on the top. Serve immediately.

- Prepare a 6 1/2-inch spring form pan by lining the bottom with parchment paper and wrapping the outer side of the pan in tin foil. Set aside.
- In a large bowl, combine graham cracker crumbs, almonds and melted butter. Press about 1 cup of the graham crackers to the bottom of the pan.
- Heat the hot fudge until it is smooth and spreadable. Add enough to cover the graham cracker crust. Place the cake pan in the freezer for about 15 minutes until the hot fudge has set.
- Once the hot fudge has set, scoop the softened ice cream on top. I used 3 scoops of softened ice ream. Smooth and even the ice cream over the fudge layer and place back into the freezer to set, about 30 minutes.

- To prepare the base: Using a food processor or high-powered blender, pulse the gingersnaps until they reach a fine crumb. Add the melted butter and pulse a few more times to combine. (you can also use a rolling pin to break up the cookies)
- Press the gingersnap mixture evenly over the bottom of a 9 inch spring-form pan, and up the sides approximately 2 inches. Place in the fridge to set.
- Prepare Candied Butter Pecans: In a heavy bottomed saucepan over medium/low heat, combine pecans, sugar, butter and salt stirring constantly for about 4 minutes or until sugar has melted and browned (don’t let them smoke) .
- Remove from heat; spread nuts on parchment paper or foil. Once nuts have cooled, chop into smaller pieces and reserve. I like to keep some big chunks and really fine bits too for texture.
