1/4 cup packed brown sugar
2 tablespoons butter, cubed
1 tablespoon corn syrup
1/4 cup chopped pecans
4 slices French bread (1 inch thick)
2 large eggs
2/3 cup 2% milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat oven to 350°. In a bowl, whisk the eggs, milk, vanilla and salt; pour over bread. Let stand for 10 minutes, turning once. Meanwhile, in a small saucepan, combine brown sugar, butter and corn syrup; cook over medium heat until thickened, 1-2 minutes. Pour into a greased 8-in. square baking dish; sprinkle with pecans. Top with bread. Bake, uncovered, until a thermometer reads 160°, 30-35 minutes. Invert onto a serving platter. Serve immediately.

4 eggs
⅔ cup orange juice
⅓ cup milk
¼ cup white sugar
¼ teaspoon nutmeg
¼ teaspoon vanilla extract
½ (1 pound) loaf Italian bread, cut into 1 inch slices
⅓ cup butter, melted
½ cup chopped pecans
2 tablespoons grated orange zest

Steps:

  • In a large bowl, beat together eggs, orange juice, milk, sugar, nutmeg and vanilla extract. Place bread slices in a tightly spaced single layer in the bottom of a flat dish or baking pan. Pour milk mixture over bread, cover and refrigerate overnight, turning once.
  • When ready to cook, preheat oven to 350 degrees F (175 degrees C).
  • Coat a jelly roll pan or rimmed baking sheet evenly with the melted butter. Arrange soaked bread slices in a single layer on pan. Sprinkle evenly with orange peel and pecans.
  • Bake in preheated oven until golden, 20 to 25 minutes. Check slices during last 10 minutes of baking time to avoid burning.

French toast is a very different thing when made with fresh, buttery, eggy brioche-Southern-inspired buttered pecans and bourbon maple syrup take it over the top.

Buttered pecans:
1 heaping cup pecan halves, coarsely chopped
3 tablespoons unsalted butter
1 teaspoon sugar
1/2 teaspoon salt
French toast:
5 large eggs
1 cup whole milk
1/2 cup heavy cream
3 tablespoons lightly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 teaspoons pure vanilla extract
8 thick slices brioche
4 tablespoons clarified butter, for the pan
Bourbon maple syrup:
1 cup pure maple syrup
2 tablespoons bourbon
Dash of pure vanilla extract
Confectioners' sugar, for serving

Steps:

  • For the buttered pecans:
  • Place a rack in the upper third of the oven and preheat to 350°F.
  • Place the pecan pieces on a rimmed baking sheet and toast for 10 to 14 minutes, until fragrant and golden brown. Remove from the oven and reduce the oven temperature to 200°F.
  • In a medium sauté pan set over medium heat, melt the butter. Stir in the sugar and salt. Add the pecans and cook, stirring, for 3 to 4 minutes, until the butter is lightly browned. Remove the pan from the heat.
  • For the french toast:
  • In a medium bowl, whisk together the eggs and milk.
  • In a small saucepan set over medium heat, warm the heavy cream for about 3 minutes, until just steaming and remove from the heat.
  • In a small bowl, combine the brown sugar, cinnamon, and salt. Add the sugar mixture to the cream and stir just until the sugar is dissolved. Add the cream mixture to the egg and milk mixture. Stir in the vanilla.
  • Working with one slice of bread at a time, put a slice into the egg mixture and let it soak for about 15 seconds on each side. Place on a rimmed baking sheet to rest while all the bread is dipped and the pan is heated.
  • In a medium nonstick skillet or griddle pan set over medium heat, melt the clarified butter. Place 2 or 3 bread slices into the pan and cook for about 2 minutes per side, until golden brown on each side. Add a bit more butter to the pan after you flip the bread, if needed. Transfer to a heatproof plate or rimmed baking sheet with a wire cooling rack set inside. Cover with a kitchen towel and keep warm in the oven while you cook the rest of the toast. Repeat the cooking process with the remaining bread.
  • For the bourbon maple syrup:
  • In a small saucepan set over low heat, gently stir together the maple syrup, bourbon, and vanilla until just warmed and well combined.
  • To serve, place 2 slices of French toast on each plate. Generously sprinkle with buttered pecans, drizzle with syrup, and dust with confectioners' sugar. Serve immediately.

1 large louisiana sweet potato
2 ounces cane syrup
4 ounces cream cheese
1 teaspoon kosher salt
1 tablespoon cinnamon
1/2 nut nutmeg, grated with microplane
1 cup pecans, coarsely chopped
1 cup unsalted butter
1 cup honey
8 slices hearty white bread or 4 slices thick-sliced challah
2 egg yolks
2 tablespoons brown sugar
1 tablespoon cinnamon
1/2 nut nutmeg, grated
1 tablespoon vanilla
1 teaspoon kosher salt
2 tablespoons unsalted butter, melted
1 cup milk
1/2 tablespoon unsalted butter

Steps:

  • For the filling: Peel and cut sweet potato into 1/2-inch chunks. Roast in microwave in a covered microwave-safe dish with a few drops of water until fork-tender (8 to 10 minutes).
  • Combine sweet potato and all filling ingredients in food processor or blender and process until the consistency of creamy peanut butter.
  • Pecan honey butter: Chop pecans and add to a sauté pan over low heat and toast for a few minutes.
  • Meanwhile, melt butter over medium heat in a small saucepan. Add honey and pecans. Heat until mixture starts to bubble, stirring periodically, then lower heat and keep warm.
  • For French toast: Combine egg yolks, sugar, cinnamon, nutmeg, salt and vanilla in a flat-bottom dish. Whisk together until dry ingredients are fully moistened and combined with wet ingredients. Warm milk in microwave until warm (not hot), then add milk and melted butter to egg-yolk mixture. Whisk until combined well.
  • Spread 1-2 tbsp of the filling between every 2 slices of bread to make sandwiches.
  • Put 1/2 tablespoon unsalted butter in a large skillet over medium heat. Dip toast sandwiches in custard mixture and soak for 15 to 20 seconds on each side. Cook on griddle or pan for 3 to 4 minutes per side until golden brown. Remove and slice into three slices diagonally; arrange on plates. Top with honey-butter.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.

Stir butter, egg, vanilla extract, and rum-flavored extract into flour mixture until dough forms; add chopped pecans and mix until well blended. The chore of making French toast on a weekday morning is standing over the stove when you're short on time. By assembling breakfast the night before, then letting the French toast bake instead of fry, you've got more time to get organized for the new day.

4 large eggs
1 cup milk
1/4 cup sugar
1/4 teaspoon ground nutmeg or 1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 loaf French bread, cut into 12 1 inch slices (8 ounces)
1/2 cup chopped pecans
2 tablespoons butter, melted
vegetable oil cooking spray or melted butter
maple syrup

Steps:

  • Place the eggs, milk, sugar, nutmeg or cinnamon and vanilla in a medium mixing bowl and whisk to combine.
  • Mist the bottom of a 12 by 8-inch glass casserole with vegetable oil spray or brush with melted butter.
  • Place the bread slices in a single layer in the pan.
  • Pour the egg mixture over the bread, distributing it evenly.
  • Turn the bread slices once.
  • Cover the pan with plastic wrap and place in the refrigerator overnight.
  • The next morning, preheat the oven to 425 degrees.
  • Remove the pan from the refrigerator and remove the plastic wrap.
  • Sprinkle the bread slices with pecans and drizzle with melted butter.
  • Bake for 20 to 25 minutes, or until bread slices puff up and pecans are deep brown but not burned.
  • Serve warm with maple syrup.
  • Instead of a cup of milk, use 2/3 cup orange juice and 1/3 cup of the milk.
  • You can vary this further by adding a little grated orange zest with the pecans before baking.

1 stick butter
1 1/2 c. packed light brown sugar
1/2 c. light corn syrup
1/3 c. maple syrup

Steps:

  • Preheat the oven to 350 degrees.
  • For the french toast: Grease a 9-by-13-inch baking dish with butter or nonstick spray. Cut the bread into 16 slices, about 1-inch thick.
  • In a large bowl, mix together the eggs, milk, cream, sugars, cinnamon and vanilla. Dip slices of bread, four at a time, in the egg mixture. Let each slice rest in the mixture for 1 minute per side (2 minutes total). Once soaked, place the slices in the baking dish, shingling them slightly. Continue until all of the bread has been soaked. Pour any remaining egg mixture over top of the bread and let rest while you make the topping.
  • For the topping: Roughly chop the pecans, leaving some whole. Combine the butter, brown sugar, corn syrup and maple syrup. Once the sugar is dissolved, remove from the heat and stir in the pecans. Place spoonfuls of the mixture all over the top of the bread. Cover and bake for 20 minutes. Uncover and continue baking for 25-30 more minutes, until the egg custard is set and the topping is golden brown. Let rest for 10 minutes before serving.
  • Cut into squares and serve with a drizzle of syrup from the bottom of the pan.

  • For the Butter-Pecan Maple Syrup: Melt butter in a small saucepan over medium heat. Add chopped pecans then cook, stirring occasionally, until pecans are light golden brown, 8-10 minutes. Add maple syrup then stir to combine and turn off the heat. Let syrup sit and infuse while preparing the rest of the casserole.
  • For the French Toast Casserole: Spray a 9x13” baking dish with nonstick spray then set aside. Trim away any tough crusts from the bread slices then slice into bite-sized cubes and arrange in the bottom of prepared baking dish.
  • In a large bowl, whisk together eggs, milk, 1/2 cup Butter-Pecan Maple Syrup, vanilla and cinnamon until smooth then pour over the cubed bread and press down with a spatula to ensure all the bread is soaked. Cover with foil then refrigerate for 2-15 hours. Refrigerate remaining Butter-Pecan Maple Syrup. (I leave it in the saucepan with a lid on or transfer to a mason jar with a lid.)
  • Preheat oven to 350 degrees. Pull the baking dish out of the refrigerator to warm up a bit then gently press on the bread cubes again with a spatula to evenly distribute the egg mixture - do not pack bread cubes down though. Bake for 40-45 minutes or until the eggs are set in the center and the top is golden brown and slightly crispy. Check the casserole around the 30 minute mark - if the top is browning too quickly, place a piece of foil on top of the baking dish then continue baking.
