Steps:
- Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
- Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
- Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
- Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
- Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.

ROASTED TURKEY BREAST WITH HERB BUTTER
Steps:
- Preheat the oven to 325F.
- In a microwave-safe bowl, combine the butter, 1 teaspoon of kosher salt, garlic, rosemary, pepper and thyme.
- Microwave the ingredients on high for 1 minute, or until the butter has fully melted. Remove the bowl from the microwave oven. Mix all ingredients really well and set aside for 5 minutes so the butter gets infused with the garlic and herbs.
- Return the bowl back to the microwave oven and cook the mixture on high for another 30 seconds to ensure that the butter is fully liquefied.
- Strain the butter mixture through a fine sieve. Save the garlic and the herbs.
- Place the turkey breast in a baking dish, skin side up. Cover with a piece of plastic wrap to prevent the butter from accidentally squirting all over the kitchen. Fill the kitchen injector with the strained butter and inject the breast all over, in a diamond pattern, releasing about 1/4 - 1/3 of an ounce at a time.
- Add the garlic and herbs that you saved earlier. Rub the garlic and herb mixture and the butter from the bottom of the baking dish all over the turkey breast.
- Evenly sprinkle 1 teaspoon of kosher salt all over the breast and pat it down to make sure the salt sticks.
- If using a BBQ thermometer (highly recommended), insert the probe into the thickest part of the turkey breast and connect to the thermometer.
- Bake at 325F for about 1 hour or so, until the internal temperature in the thickest part of the breast reaches 155F. Brush the top of the breast with pan juices about 1 hour into roasting.
- Remove from the oven and let the roasted turkey breast rest for 5 minutes before slicing and serving.

- (I place in a covered bowl and shake vigorously).
- Inject into your turkey and allow to sit for one hour or more before deep frying.

- Place broth and butter into a microwave safe bowl. Set on high for 1 minute until butter has liquified and broth has warmed. Remove from microwave and combine broth and melted butter with lemon juice. Add remaining ingredients and stir through. Let stand for 10 minutes, and stir through once more before using.
- Prepare the bird by patting dry with paper towels. Load marinade into the meat injector, and slowly inject into multiple spots in the turkey. Be sure to really work the breast meat, as it tends to dry out during cooking.
- If there is leftover marinade that you plan to use as a baste, place it into a saucepan, bring to a boil, reduce heat and simmer for 6-8 minutes on medium, or low. Let it cool for 10 minutes, and use as needed.
- If you are not using the marinade as a baste, simply discard it. Do not save it in the refrigerator as it has come into contact with raw meat.

- Beer and Butter Injection. Simply mix salt, Worcestershire sauce, Tabasco, soy sauce, garlic powder, and onion powder and put the mix in the injector, keeping it warm so the butter doesn't solidify while in use.
- Butter Based Injection. This is a great injection for any kind of poultry. A simple mix of butter, lemon, garlic, pepper, and salt delivers moisture and flavor to the white meat and enhances the texture and taste of the dark meat.
- Cajun Turkey Injection. If you're choosing to deep-fry your turkey or chicken, by injecting the flavors inside the meat, you won't have to worry about the hot oil washing them off.
- Honey Beer Injection. Blend a traditional Cajun flavor with dark beer and honey for a well-balanced taste. There's apple cider in there, too! This simple injection will light up your taste buds thanks to the sweet and savory flavors.
- Italian Herb Injection. This one is mild in heat, but rich in herby flavors, featuring red wine, Italian seasoning, pepper, and balsamic vinegar. Make sure that the herbs you use are well ground so that they will fit through your injection needle, and stir the syringe in between injections so it doesn't settle.
- Savory Turkey Injection. Grind dry bay leaf, thyme, and sage at high speed. Combine with garlic and onion powder, pepper, salt, and oil. Add water and Worcestershire sauce.
