CREPES

Crepes image

This French delicacy is extremely versatile, as it can be filled with virtually anything -- fruits, pudding, mousse for desserts as well as vegetables and meats for dinner. No need to add more oil each time unless the pan begins to stick. Freeze extra crepes for later use.

PEANUT BUTTER-FILLED CREPES WITH WARM CHOCOLATE SAUCE

Peanut Butter-Filled Crepes with Warm Chocolate Sauce image

Look out Mr. Reese because here comes an easy-to-make, decadent version of the peanut butter cup. Lightly sweetened and delicate peanut butter filling spread over a easy-to-make crepe and topped with melted milk chocolate chips. The crepes are easily rolled or folded for a 'suzette' style presentation.

Provided by LucasvilleGourmet

Categories     100+ Breakfast and Brunch Recipes     Crepes

Time 2h10m

Yield 12

Number Of Ingredients 12

1 cup all-purpose flour
4 eggs
½ cup milk
½ cup cold water
2 tablespoons butter, melted
1 cup smooth peanut butter, at room temperature
3 tablespoons confectioners' sugar
½ teaspoon vanilla extract
½ teaspoon rum-flavored extract
1 ⅓ cups milk chocolate chips
¾ cup 18% cream, at room temperature
½ teaspoon vanilla extract

Steps:

  • Blend flour, eggs, milk, cold water, and butter together in a food processor or blender until smooth, about 30 seconds. Scrape batter off the sides with a rubber spatula and blend 15 seconds more. Place batter in the refrigerator, at least 1 hour.
  • Beat peanut butter in the bowl of a stand mixer using the paddle attachment until smooth and creamy. Beat confectioners' sugar, 1 tablespoon at a time, into creamed peanut butter, mixing well after each addition. Add 1/2 teaspoon vanilla extract and rum-flavored extract and mix well. Store peanut butter filling in an air-tight container until 30 minutes before needed.
  • Heat a 10-inch non-stick skillet over medium-low heat. Remove the skillet from the burner; add a scant 1/4 cup batter to the center of the pan and swirl and tilt immediately to spread the batter evenly over the bottom of the skillet. Return the skillet to the heat. Cook crepe until edges appear slightly dry and pull away from the pan, about 1 minute. Gently slip a thin spatula under the crepe and gently flip. Cook the second side until lightly browned on the bottom, 45 to 60 seconds. Transfer crepe to a plate. Repeat until all the batter is used, separating each crepe with waxed or parchment paper.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Mix cream and 1/2 teaspoon vanilla extract into the melted chocolate; cook, stirring frequently, until chocolate sauce is thickened, about 20 minutes.
  • Spread peanut butter filling over each crepe and drizzle warm chocolate sauce over filling. Fold crepe in half or roll crepe around filling for Suzette-style crepes.

Time 40m

Yield 3

Number Of Ingredients 9

2 eggs, room temperature
1 cup milk, room temperature
¾ cup all-purpose gluten-free flour
1 pinch salt
¼ cup LAND O LAKES® Unsalted Butter, melted
½ teaspoon LAND O LAKES® Unsalted Butter, or as needed for the pan
6 tablespoons LAND O LAKES® Butter, at room temperature
6 tablespoons orange blossom honey
1 tablespoon grated orange zest

Steps:

  • Whisk eggs, salt and milk together in a mixing bowl. While whisking, add the flour 1/4 cup at a time, making sure it is well combined before adding the next. Stir in 1/4 cup melted butter.
  • In a separate bowl, mix 6 tablespoons softened butter, honey and orange zest together. Whip until creamy and smooth.
  • Heat a 10-inch crepe pan over medium heat. When hot, add 1/2 teaspoon butter to the pan and spread around with a brush to cover the whole pan. If your pan is non-stick, you will only need to do this once. If your pan is not non-stick you may need to repeat this more often.
  • Whisk the batter well, add 1/3 cup of batter to the heated pan; swirl it around to cover the entire surface of the pan. Cook until the edges brown and the crepe moves freely, about 2 minutes.
  • Flip the crepe over and cook until evenly cooked. Remove from the pan and continue with the rest of the batter.
  • Place a crepe on a warm plate. Spread 1 1/2 tablespoons filling evenly over one half of the crepe. Fold the crepe twice making a triangle. Do the same with the rest of the crepes. Top with remaining honey butter and serve.

EASY FRENCH CRêPES

Easy French Crêpes image

This Basic French Crêpes Recipe makes the lightest and softest Crêpes ever. Super easy to make, this delicious classic French recipe can be served for breakfast, tea time or as a dessert with your favourite filling!

Provided by A Baking Journey

Categories     afternoon tea     Breakfast     Dessert

Time 2h40m

Number Of Ingredients 6

250 gr (1 2/3 cup) Plain / All Purpose Flour
15 gr (1 tbsp) Caster Sugar (or fine white sugar)
1 pinch Salt
30 gr (2 tbsp) Unsalted Butter (melted)
500 ml (2 cups) Full Cream Milk
3 Eggs

Steps:

  • Melt the Butter and set aside to cool down.
  • In a large mixing bowl, whisk together the Plain Flour, Caster Sugar and Salt. Create a well in the middle of the bowl.
  • Mix the melted Butter and Milk (see note 1), then pour about 2/3 of the batter into the well. Mix well with a whisk until you get a thick batter.
  • In a separate bowl, whisk together the Eggs (see note 2), then add it to the Batter. Whisk until combined and smooth - you should not have big lumps anymore.
  • Add the rest of the Butter/Milk Liquid and whisk well until all combined. You should have a rather liquid batter (see note 3). Cover the bowl and place in the fridge to rest for at least an hour, or up to 24 hours (see note 4).
  • Heat up a Non-Stick Skillet or Crepe Pan on medium/high heat and grease it with a little bit of butter.
  • Pour some batter over the Pan: - if using a regular pan, hold the pan on an angle while pouring the batter and continuously turn the pan around in a rotating movement to spread the batter- if using a crepe pan, use the crepe spreader to spread the batter, doing one circular movement from the centre of the pan
  • Cook for 1 to 2 minutes, or until the edges of the crepe start to lift up. Use a wooden spatula to go under the crepe and flip it over. Cook the other side for about 1 minute.
  • Place the cooked crepe on a plate and repeat until you have cooked all the batter. Adjust the temperature of the stove if needed, and re-grease the pan between each crepe if they seem to stick to it.

THE BEST CREPES

The Best Crepes image

Our classic crepe is versatile enough to go sweet or savory, just omit the vanilla if going the savory route. The rest time here is key; the flour absorbs the milk as it sits giving you a more tender crepe and golden color.

Provided by Food Network Kitchen

Time 8h30m

Yield 15 crepes

Number Of Ingredients 8

2 cups milk, at room temperature
4 large eggs, at room temperature
1 1/4 cup all-purpose flour (see Cook's Note)
2 tablespoons sugar
2 teaspoons pure vanilla extract
1 1/2 teaspoons kosher salt
1 tablespoon unsalted butter, melted
Vegetable oil, for the pan

Steps:

  • Add the milk, eggs, flour, sugar, vanilla and salt to a blender. Puree on high speed until completely smooth and slightly thickened and creamy, about 1 minute. Add the melted butter and puree until incorporated, 30 seconds more. Let the batter rest in the blender carafe for at least 1 hour at room temperature or refrigerate up to 24 hours. The longer you allow the batter to rest and hydrate, the lighter and softer the texture of the crepes will be; overnight is ideal.
  • Before cooking, re-blend the batter at high speed for 30 seconds. This will reincorporate the ingredients, a vital step in getting an even golden color on the crepes. Wipe 1/2 teaspoon of oil on a large crepe pan or a 10-inch nonstick skillet with a paper towel. You don't want to see any drops of oil in the pan, just coat with the thinnest layer. Heat the pan over medium heat until hot.
  • Ladle 1/4 cup batter into the pan. Working quickly off the heat, swirl and shake the pan to evenly coat the bottom with the batter. Return to the heat and cook the crepe, reducing the heat if it's browning too quickly, until the edges are light golden, about 2 minutes. Slide a spatula underneath to loosen the crepe and carefully flip it over. Cook on the other side until a few brown spots appear, 15 to 30 seconds. Transfer to a plate. Repeat with the remaining batter, wiping pan with oil each time. Stack the crepes on the plate as you go (you should have about 15 total). Let the crepes cool for 10 minutes before serving or filling.
  • For fillings, we suggest Nutella and bananas or peanut butter and jelly for sweet crepes. Ham and cheese makes a great filling for savory crepes.
