BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
- Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

TURKEY MUSHROOM MEATLOAF
The addition of mushrooms makes this turkey meatloaf extra-moist and juicy.

- Preheat oven to 375°F. Heat oil in large sauté pan set over medium-high heat; cook mushrooms for 3 to 5 minutes or until starting to brown. Add garlic; cook for 3 to 5 minutes or until fully browned. Let cool.
- Mix together turkey, mushrooms, onion, eggs, bread crumbs, Roasted Turkey Base, sage, milk, butter and parsley until combined. Press into greased 8- x 4-inch loaf pan.
- Bake for 30 to 40 minutes or until golden brown and thermometer inserted in center registers 185°F. Let stand for 15 minutes before slicing.

- In a skillet, saute onion in oil until tender; set aside.
- In a bowl, combine the egs, milk, lemon juice, salt, basil, oregano and pepper. Add the bread crumbs, spinach and reserved onion; stir to combine. Crumble turkey over mixture and mix until blended.
- Shape mixture into a 12x5-inch loaf; place in a 13x9x2-inch baking dish coated with nonstick cooking spray.Spoon salsa over top.
- Bake, uncovered at 350 degrees for 30 mintues. Drizzle with butter; bake 30-35 minutes longer or until a meat thermometer reads 165 degrees.

- Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

- Make the meatloaf: Preheat the oven to 375 degrees F. Coat a 9-by-5-inch loaf pan with cooking spray. Put the turkey, onion, breadcrumbs, celery, egg, 2 tablespoons ketchup, the parsley, 1/2 teaspoon salt, and pepper to taste in a bowl. Mix with your hands until just combined, then transfer to the prepared pan. Combine the remaining 1/4 cup plus 2 tablespoons ketchup with the soy sauce and Worcestershire sauce in a small bowl; spread 2 tablespoons of the ketchup mixture over the meatloaf. Bake until the top begins to brown, about 30 minutes, then spread the remaining ketchup mixture over the meatloaf and continue baking until browned and a thermometer inserted into the center registers 165 degrees F, 15 to 20 more minutes. - Meanwhile, make the mashed potatoes: Put the potatoes in a large saucepan and cover with cold water; season with salt. Bring to a simmer and cook over medium-low heat until tender, about 30 minutes. Drain, then return to the saucepan and mash with the butter. Add the milk and season with salt and pepper; continue mashing until fluffy. Put the peas in a microwave-safe bowl, sprinkle with water and season with salt and pepper. - Wash and peel the vegetable and remove the kapia pepper seeds. Cut the onion into not too thin slices and do the same with the carrots that we cut coarsely and the peppers into cubes. Deboned the meat, then cut it into pieces, not very large, so that it can be ground more easily.
- Start with the onion that we put in hot oil to fry, fry for a minute, stirring, then add the vegetables. Add two tablespoons of lard, season with salt, freshly ground pepper and sweet paprika powder. Mix and let everything cook for about five minutes, then put the meat. Put two tablespoons of sweet pepper paste, add a little water and let it boil until the vegetables are done about twenty minutes.
- Transfer everything to a larger bowl where we can grind everything with a blender. Add about 50 g of butter and two whole eggs, to bind better. Add the Dijon mustard, the breadcrumbs and a teaspoon of marjoram. Taste and if you want you can add more salt and pepper. Mix well until you get a uniform paste that we are going to put in the oven.
- Prepare a baking form for the oven which I previously greased well with butter. Pour all our composition in this form, and smooth it with a spatula, then put four cubes of butter on top. Put the bowl in the hot oven at 180 degrees and let it bake for about 30 minutes until it gets a nice golden colour. Let it cool completely.
