BARBEQUED CABBAGE

This is a delicious way to use up cabbage, and a great way to make someone a cabbage lover!

½ head cabbage, cut into thick shreds
½ cup soy sauce
¼ cup butter
freshly ground pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat.
  • Evenly divide the cabbage among 4 squares of aluminum foil. Sprinkle 2 tablespoons of soy sauce over each pile of cabbage, and place a tablespoon of butter on top. Season with pepper to taste, and fold the sides of the foil over the cabbage, sealing to form a packet.
  • Place packets onto preheated grill, and cook until the cabbage is tender, 15 to 20 minutes.

¼ cup butter, divided
1 head green cabbage, shredded
ground black pepper to taste

Steps:

  • Heat 3 tablespoons butter in a large pot over medium-low heat until mostly melted. Add cabbage. Place remaining 1 tablespoon butter on top of the cabbage. Cover and cook until cabbage is tender, about 10 minutes. Uncover and stir cabbage to coat evenly with butter. Remove from heat and let stand, covered, about 3 minutes. Season with black pepper.

Burn cabbage on a barbecue to add flavour while cooking the middle. It should be near-black when done, but don't worry - you won't eat the charred leaves

1 medium Savoy or King cabbage , outer leaves kept on
100g butter
4 garlic cloves , grated
1 tbsp muscovado sugar
2 green chillies , finely chopped
1 lime , finely zested and juiced
small bunch coriander , chopped

Steps:

  • Light a lidded barbecue. Let the flames die down and the coals turn ashen, then mound the coal up on one side or heat an oven to 180C/160C fan/gas 4. Wash the cabbage of any grit or soil. Beat the butter with the rest of the ingredients and a pinch of salt.
  • Open the outer leaves to expose the main ball, spread out the leaves and make a few big cuts into the heart. Smear the butter mix over the middle, draw the outer leaves back up, and secure with string (this will stop the leaves falling off ).
  • Sit the cabbage in a roasting tin and cook in the barbecue or oven for 1 hr 15 mins until the outer leaves are charred and an inserted skewer doesn't offer too much resistance. Remove the cabbage and cut off the string, then remove the outer leaves to expose the cooked middle. Cut into wedges and baste with the butter in the tray while warm, so the cabbage soaks up the flavours.

1 head cabbage
2 tablespoons butter, or as needed
1 sweet onion (such as Vidalia®), chopped
½ pound bacon, or more to taste
1 cup barbeque sauce
2 slices bacon, or as desired

Steps:

  • Cut the knot from the bottom of the cabbage and remove the core.
  • Heat 1 tablespoon butter in a skillet over medium heat; cook and stir onion until softened, about 10 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon drippings. Chop bacon into small pieces. Mix onion, bacon, and barbeque sauce together in a bowl.
  • Fill the hole in the cabbage with onion-bacon mixture and place pieces of butter into the core to fill completely. Drape 2 bacon strips over filling and hold in place with toothpicks.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Make a ring out of aluminum foil and place on grill.
  • Place cabbage on the foil ring and cook, basting with bacon drippings, until a fork can easily puncture the cabbage, 15 to 30 minutes.

  • Grind kombu in a spice mill or with a mortar and pestle to a fine powder. (You should have about ¾ tsp.) Heat oil in a medium heavy skillet (such as carbon steel or cast iron) over medium-high and add half of cabbage, cut side down (reserve remaining half for another use). Cook cabbage, undisturbed, until underside is almost blackened (the edge of the sides will start to brown as well), 10–15 minutes.
  • Reduce heat to medium-low, add butter to skillet, and shake pan to help butter get in, around, and under cabbage. As soon as butter is melted and foaming, tilt skillet toward you and spoon browning butter over cabbage, being sure to bathe the area around the core (thick and dense, this part will take the longest to cook), 30 seconds. Stop basting and let cabbage cook, undisturbed, 3 minutes, then baste again, 30 seconds more. Repeat cooking and basting process twice more (butter will continue to get darker as it cooks, and that's okay; add a knob or two more to bring it back from the brink), adding kelp to brown butter just before final basting. At this point, cabbage should be tender (a cake tester or skewer inserted into the core should meet with no resistance) and the outer leaves have pulled away from one another. If cabbage is not done, repeat cooking and basting process once more.
  • Transfer cabbage to a cutting board and cut into two quarters. Pull leaves open slightly and tuck basil here and there between a few leaves. Drizzle with vinegar and season with salt. Let cabbage sit a minute or two for basil to soften before serving.
