¼ cup margarine
⅓ cup brown sugar

Steps:

  • Cook carrots in a large pot of boiling water until tender. Drain off most of the liquid, leaving bottom of pan covered with water. Set the carrots aside.
  • Stir margarine and brown sugar into the water. Simmer and stir until the margarine melts. Return carrots to the pot, and toss to coat. Cover, and let sit for a few minutes to allow flavors to mingle.

  • Peel and cut carrots into 2-3 inch lengths, then halve or quarter each length to make approximate even sizes.
  • Place carrots in a casserole dish and dollop butter on top.
  • Cover and roast at 350°F for 1 hour, stirring at 20 minute intervals.

Here we toss perfectly roasted carrots with butter that's been infused with garlic and parsley. Instead of the parsley, consider adding basil, crushed red pepper flakes, dill, cumin, or other favorite flavors. The recipe below is more of a template than a strict recipe. Carrots are perfectly delicious roasted, but so are parsnips, squash, potatoes or other hardy vegetable you find in season. Feel free to switch them out for something else.

1 1/2 pounds carrots, peeled with ends trimmed (8 to 9 carrots)
1 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
1 tablespoon butter
1 garlic clove
1/3 cup loosely packed fresh parsley leaves, chopped

Steps:

  • Heat the oven to 425 degrees F and line a baking sheet with aluminum foil. Cut carrots into 2 to 3-inch sticks. (Depending on how wide the thicker ends are, you may need to slice each stick in half, lengthwise). Toss carrots onto the baking sheet with the olive oil and salt. Make sure the carrots are coated then spread out into one layer. Roast carrots, stirring twice, until they are tender with edges that are lightly browned, 25 to 30 minutes.
  • While the carrots roast, melt butter in a small pan over low heat. Use the back of a large knife to gently crush the garlic clove. Remove the skin then add clove to the butter along with the parsley. Wait until the butter bubbles gently then cook for 1 minute. Slide the pan away from the heat and set aside for 10 to 15 minutes. Remove and discard the garlic.
  • Slide the roasted carrots into a bowl with the garlic parsley butter. Toss then season to taste with additional salt as needed.

3 lbs carrots (heirloom, about 2 bags of medium-sized carrots)
2 tbsp butter
.25 tsp olive oil (light spray)
1 package sage leaves
1 pinch salt & pepper

Steps:

  • Once your carrots are peeled, put them in a pan that is very lightly sprayed with olive oil. Add a light spray to the top of your carrots and sprinkle with salt and pepper. Then roast them for about 30 minutes at 350 degrees until they are fork-tender.
  • Once your carrots are ready, in a separate pan you're going to melt about 2 tbsp. For brown butter sauce, you're going to let the butter simmer at medium to medium-high heat until the butter stops foaming. Once the butter begins to turn a very light brown, you will then add your sage leaves which will get nice and crispy. Once your sage is crispy, which takes just about 30 seconds, you'll drizzle this sauce over your carrots and they are ready to be served.

2 tbsp maple syrup
3/4 tsp kosher sea salt

Steps:

  • Preheat oven to 375 degrees.
  • Place carrots on a standard size baking sheet.
  • In a small heavy-bottom stainless saucepan set over medium-low heat, add the butter. Once melted begin whisking constantly. The butter will begin to foam, then the bubbles will widen and dissipate. Continue whisking until you begin to see small brown flecks form at the bottom of the pan and it will smell nutty. This generally takes about 5-8 minutes. Remove from the heat, taking care not to burn the butter.
  • Pour into a small mixing bowl. Whisk with maple syrup and salt.

My favorite way to make roasted carrots. Garlic butter roasted carrots are tossed in a homemade honey garlic butter sauce, then roasted until golden and delicious! Serve with just about any kind of protein you like!

2 pounds carrots, peeled and cut into thirds
4 tablespoons salted butter
4 cloves garlic, minced
2 tablespoons honey
¼ teaspoon smoked paprika
½ teaspoon salt + ¼ teaspoon black pepper
2 tablespoons chopped parsley

Steps:

  • PREP: Position a rack in the center of the oven and preheat the oven to 425ºF. Spray a large rimmed baking sheet with cooking spray, set aside. Melt the butter in a skillet over medium heat. When melted add the minced garlic and cook for 30 seconds before adding the honey, smoked paprika, salt and pepper. Stir to combine, then add the carrots and toss them in the prepared glaze. Let the carrots sit in the sauce for 1-2 minutes.
  • ROAST: Transfer the carrots using tongs (leaving the sauce in the skillet) to sheet pan so you can spread them out; don't discard the sauce! Roast carrots for 20 minutes. While the carrots are roasting, pop the skillet back on the heat setting and let the sauce reduce for 2 minutes. When the carrots are done, toss the carrots in the remaining sauce (or pour the sauce over the carrots and toss.) Roast for an additional 5-7 minutes or until carrots are tender. I like to turn the broiler on for the last 30 seconds so they brown a bit more. Toss with parsley and serve!

1 teaspoon garlic powder
1 teaspoon dried parsley
fresh parsley, chopped, for garnish (if desired)

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
