1 lb lean ground beef
1 (1 1/4 ounce) envelope taco seasoning (I use Ortega Smoky Chipotle)
1/2 cup water
1 cup shredded cheddar cheese
1 cup salsa or 1 cup taco sauce, your favorite strength
1 cup shredded lettuce
4 slices tomatoes
4 slices onions

Steps:

  • Put the ground beef into a mixing bowl, empty the contents of your taco seasoning envelope into roughly 1/2 cup of water (you may add more water, by the tablespoon, to make the mixture moist enough to blend well). Stir the seasoning into the water, until blended, pour into bowl with meat.
  • Blend the ingredients together with your hands, the way you mix meatloaf.
  • Heat up your George Foreman grill, and form the meat into 4 patties while you're waiting.
  • When the grill is ready, put the burgers on it, and close the cover. Press gently but firmly on the cover. Grill 5 to 7 minutes, open the grill and turn the burgers over; grill another 5 minutes (the top part of this grill is not as hot as the bottom, you do need to turn).
  • Toast your buns while the meat is grilling.
  • Put a nice pinch of shredded cheddar on the bottom half of the buns.
  • Place the burgers on top of the cheese,.
  • add salsa or taco sauce, a slice of tomato, and a slice of onion, and then a pinch of shredded lettuce. Add the bun tops.
  • Serve with corn chips and Corona -- Ay Yi Yi!

1 cup finely crushed corn chips
1 envelope taco seasoning
1 tablespoon dried minced onion
1 large egg, lightly beaten
1-1/2 pounds ground beef
6 slices cheddar cheese
Sandwich buns, split
Lettuce leaves
Tomato slices
Salsa, optional

Steps:

  • In a large bowl, combine the corn chips, taco seasoning, onion and egg. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 7-8 minutes on each side or until a thermometer reads 160° and juices run clear., Top each burger with a cheese slice; heat just until cheese begins to melt. Serve on buns with lettuce, tomato and, if desired, salsa.

1 pound ground beef
1 (1 ounce) package taco seasoning
3 thick slices Cheddar cheese
3 hamburger buns, split

Steps:

  • Mix ground beef and taco seasoning together in a bowl. Set in the refrigerator for 30 minutes to let taco mix infuse into the beef.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove meat from the refrigerator and make 6 very thin patties. Place a slice of Cheddar cheese into the center of 3 patties. Place the remaining patties on top of the cheese patties and seal together by pinching the ends.
  • Cook on the preheated grill for 6 to 7 minutes. Flip and continue cooking until no longer pink, 6 to 7 minutes more. Place on hamburger buns.

2 pounds ground beef chuck
1 tablespoon kosher salt
1 tablespoon cumin
2 teaspoons smoked paprika
1 tablespoon olive oil
1 heart of romaine lettuce, finely sliced
4 potato burger buns, toasted
1 cup shredded Cheddar
1 on-the-vine tomato, sliced
Pickled jalapenos, for topping, optional
Sour cream, for topping, optional

Steps:

  • Preheat a grill or grill pan to medium-high heat.
  • In a medium bowl, mix together the chuck, salt, cumin and paprika. Divide into 4 even patties and drizzle with a touch of olive oil. Grill the burgers until deep brown and just barely cooked through, 3 to 4 minutes per side.
  • Pile a bed of lettuce on the bottom of each bun. Top with a patty, some cheese and a slice of tomato. Top with pickled jalapenos and sour cream if desired.

2 tablespoons grated onion
1 tablespoon Worcestershire sauce
Salt and black pepper
1 cup crushed corn chips
4 slices cheddar jack cheese
4 hamburger buns
Lettuce, tomato, sour cream and salsa, for topping

Steps:

  • Heat a gas or charcoal grill.
  • In a medium bowl, combine the ground beef, taco seasoning, grated onion and Worcestershire sauce. Season with salt and pepper. Add in the crushed tortilla chips and lightly combine. Shape the mixture into 4 patties.
  • Place the patties on the grill over medium heat. Close grill and cook, turning once, until desired doneness - about 10 minutes for medium. Top each patty with the cheese and cook just until the cheese melts.

1/4 cup crushed Doritos, nacho cheese flavor (or tortilla chips)
2 tablespoons salsa (we love Pace picante sauce)
1/4 teaspoon chopped jalapeno (optional)
salt and black pepper, to taste
4 hamburger buns, toasted
4 slices cheddar cheese
4 slices monterey jack cheese
shredded lettuce
1 avocado, peeled and sliced (or guacamole)
sliced tomatoes
Doritos (additional, placed between the buns for more crunch)
chopped jalapeno pepper
1 red onion, sliced
sour cream
salsa
chopped cilantro

Steps:

  • In a medium bowl, working gently, mix ground beef with all burger ingredients except buns.
  • Divide the mixture into 4 quarters and lightly form into patties about 1" thick.
  • Place patties on an oiled outdoor grill (or you can cook in a skillet) and cook, turning once, about 10-15 minutes or until cooked to desired doneness. You can add the cheese slices onto the burgers a few minutes before they are done to melt if desired.
  • Meanwhile, open buns and toast on grill until lightly browned. Place cooked burgers on buns and top with desired toppings.
