Steps:
- Fill a large pot half way full with water. Lightly salt it, and over high heat bring the water to a boil.
- Once boiling, pour in the egg noodles, stir, and cook according to the package directions. Transfer the noodles to a colander when done, and drain away all excess water.
- While the noodles are cooking, get started on the cabbage by adding 6 tablespoons of butter to a large Dutch oven set over medium heat.
- Once the butter's melted, stir in the cabbage and onion. Cook the mixture, stirring occasionally, for 15-20 minutes or until the cabbage has browned/caramelized and is tender. Salt, to taste.
- Melt the last two tablespoons of butter in the pot, and add the cooked pasta to the pot, stirring everything to coat. Cook just long enough for the noodles to heat through.
- If using, stir in the bacon and season the haluski with freshly grated black pepper, to taste.
- Serve immediately, and enjoy!

Polish egg noodles are made with three simple ingredients: flour, water, and eggs. The dish is child-friendly and is often served with chicken soup.

Steps:
- In the bowl of a stand mixer or food processor (or by hand), combine flour and salt. Add eggs and enough water so dough forms into a ball.
- Knead until smooth and elastic, about 5 to 8 minutes. Cover with plastic wrap and let rest 30 minutes.
- Roll out dough on a floured surface as thinly as possible. Do not cover. Let dry for 30 minutes but no longer otherwise it will crack when you try to cut it.
- Either roll the dough into a cylinder and slice, or slice dough into 3-inch wide strips, flour and stack them on top of each other, then slice 1/8-inch to 1/4-inch across.
- Scatter noodles across a floured surface so they don't stick together. Let dry 30 minutes. Cook in boiling, salted water 5 to 10 minutes, depending on thickness and your preference. Drain.
- If you want to save the noodles for later use, make sure they are completely dry before storing.

POLISH KLUSKI - FRESH HOMEMADE NOODLES
It can't get any better than this! We made these noodles with our aunt in Poland and not only are they worth the time, but they also give your arms a workout that Richard Simmons would be proud of! (neon workout arm and headbands not included :) Before I have made noodles on my own but they never came out really .... right. ...

Steps:
- 1. In a big mixing bowl, mix together all ingredients with your hands.
- 2. Mix until hard (yet pliable) dough forms. If gets really wet, add little bits of flour to keep it workable. (10-15 minutes). Dough will not be very smooth at this point.... work it out until it is smooth.
- 3. Separate dough into two round balls. Turn out onto floured surface and let them rest for 5 minutes.
- 4. Working with one of the dough balls, roll it out on a floured surface (don't forget to flour your rolling pin). Roll it until thin but firm enough for you to pick up the whole sheet (roll for about 15 minutes until about 1/8 in. thick).
- 5. Set first sheet aside and roll out the second dough ball.
- 6. Set the sheets somewhere so they can "dry". You don't need to hang them like you sometimes see in pictures or movies. You can leave one on the rolling board and one on the table or clean countertop... Let them rest and dry for about 15 minutes.
- 7. Time to cut the noodles! Cut dough into strips about 3-4 in. wide. Then, stack those strips, and working from the shorter end, and using a SHARP knife, cut your noodles into small strips.
- 8. Put cut noodles into lightly-floured bowl. Get your water boiling. When ready, boil noodles until they rise to the top. (This will be quicker than when you boil the packaged noodles from a box).
- 9. Enjoy fresh noodles with anything... here we gobbled them up with a tiny bit of butter, tiny bit of sugar, fresh crumbled farm cheese and berry jam...
- 10. ... and with orange marmalade...!
BUSIA'S POLISH KLUSKI
I got this recipe from my husband's grandmother. The first time I tried to make them, I didn't realize they were supposed to be small, like gnocchi or spaetzle, and I made them the size of golf balls - we still laugh about it! My kids can eat a whole bowl by themselves - a nice side dish with roast pork.

Steps:
- Mix all of the above ingredients together, except bacon, adding just enough flour to make a doughy consistency.
- Bring a large pot of water to a rolling boil and add 1 teaspoon of salt to the water.
- Smear potato mixture on a small saucer and flick about one inch pieces into the boiling water.
- Start with just a few pieces - if they break apart, you need to add more flour to the mixture. If they stay together in the boiling water, cook until they float to the top, then cook another 3-4 minutes.
- Drain well and put into a casserole.
- Cook bacon pieces in a small frying pan until crisp, then dump grease and bacon over the top of the kluski - toss to coat.
- Serve warm with pork and applesauce.

- Dip a teaspoon in the boiling water, then dip a teaspoon in the dumpling mixture, pick up half a teaspoon or so of the dough with one spoon, and, using the second spoon, slide it into the gently boiling water. Continue until all the dumpling dough is gone. OR, spread the dough onto a plate and, using a wet spoon, scrape off pieces directly into the boiling water.
