Banana Flambe image

Provided by Food Network

Categories     dessert

Time 25m

Yield 2 servings

Number Of Ingredients 10

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 tablespoons brandy
2 glasses filled half way with vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream
2 whole strawberries (remove the stem and make a small hole for the cubed sugar)
2 sugar cubes

Steps:

  • In a large saucepan over medium heat, melt the sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur.
  • Continue to cook for about 2 minutes. Remove from the heat once again, then add the brandy. Once you put the pan back in the heat, it should flambe. Remove the pan from the heat and start spooning the flambeed banana into the ice cream glass. Add the chocolate syrup and the whipped cream. On top of the whipped cream, right in the center, place the cleaned strawberry, then place the sugar cube in the center of the strawberry. Pour a little bit of the brandy on top of the sugar and carefully ignite it with a match.

GAELIC STEAK FLAMBE

Gaelic Steak Flambe image

This recipe is from Bunky Cooks. Serve with Champs, and rapini for a wonderful Irish steak dinner. 8/27/12 Edited to 1/2 the irish whiskey.

Provided by Lavender Lynn

Categories     Steak

Time 50m

Yield 2 serving(s)

Number Of Ingredients 9

3 tablespoons unsalted butter
2 medium shallots, chopped
3 ounces white mushrooms, sliced
2 (8 ounce) filet of beef
freshly ground coarse black pepper
salt
2 tablespoons Irish whiskey
3/4 cup half-and-half
1/2 teaspoon Worcestershire sauce

Steps:

  • 1. Heat oven to 375 degrees. Have filets at room temperature. Sprinkle with black pepper.
  • 2. Melt 2 tablespoons butter over medium-high heat in an ovenproof skillet. Saute shallots for a minute or two, then add the mushrooms. Continue cooking until the mushrooms are slightly brown and the shallots are soft. Remove and set aside.
  • 3. Turn the heat up in the pan. Saute the steaks quickly on both sides (this should take between 2-5 minutes each side).
  • The steaks should be nicely seared.
  • Put them in the oven for 5-10 minutes to finish, depending upon the thickness of the steaks. Take them out when the internal temp reaches how well done you like your steaks.
  • Remove the steaks from the oven and put on a plate.
  • 4. Melt the other tablespoon of butter in another pan over low heat. Add the steaks. Sprinkle with a pinch of salt.
  • Pour the whiskey over the steaks and ignite!
  • When the flames die down, turn the steaks over for about 30 seconds. Remove and tent the steaks on a warm plate.
  • 5. Add the shallots and mushrooms back to the pan with the whiskey and slowly add half and half. Turn up the temperature a bit.
  • Add Worcestershire sauce and salt to taste. Stir and cook a few minutes to thicken sauce and pour over steaks.

  • Strip the rosemary and thyme into a pestle and mortar with a good pinch of black pepper, bash to a paste, then muddle in the red wine vinegar and 1 tablespoon of olive oil.
  • Rub all over the steaks and leave to marinate for 30 minutes.Deseed and finely dice the peppers, then dress with extra virgin olive oil and put aside.
  • Quarter the mushrooms, then pick and finely chop the parsley leaves.Get all the other ingredients measured out and ready to go, as you want everything to happen within 6 minutes once the steaks hit the pan – read to the end of the next paragraph before you start cooking so you know what’s coming.Place a large frying pan on a high heat to get screaming hot.
  • Brush the herbs off the steaks, then place the steaks in the pan with a drizzle of olive oil and the butter.Cook for 6 minutes in total, turning regularly and keeping them moving in the pan, making sure to sear the edges and baste with the juices, as you go.Within this time, as soon as the butter turns dark golden and the steak has good colour and character, add the mushrooms and a pinch of salt and pepper, jiggling the pan to keep things moving.Pour in the brandy, then carefully tilt the pan to catch the flame (or light with a long match) and let it flambé – stand back! When the flames subside, add the red wine and reduce by half (if you need to put the flame out, swiftly place a large metal lid over the pan).Drizzle in the cream, turning the steaks in the sauce until they are nicely coated (briefly remove the steaks from the pan at this stage if your sauce is taking a while to reduce, to avoid overcooking).Sprinkle over the parsley, then stir through the mustards.
