Slow Cooker Smothered Burritos image

Three ingredients is all it takes to make these super cheesy extra delicious smothered burritos right in your slow cooker!

10 frozen burritos, your choice
2 (10 ounce) cans of enchilada sauce, your choice
1 pound shredded Mexican cheese
Fresh cilantro, chopped for garnishing if desired
Lettuce, tomatoes, olives, avocado, sour cream for serving if desired

Steps:

  • Place 5 burritos in the bottom of your slow cooker. Pour one can of enchilada sauce over the top. Add 5 more burritos to the top. Pour second can of sauce over the top. Cover and cook on LOW for 4 hours. minutes before serving, top with cheese. Cover and cook until cheese is melted and bubbly. Garnish with fresh cilantro.

Crock pot smothered burritos will be a family favorite. Tender beef smothered with cheese and more make this meal so flavorful. The crockpot makes it easy.

2 lb. Stew Meat
1 can Red Enchilada sauce (28 oz.)
1 can Green Chiles (4 oz.)
1/2 onion (chopped)
1 tsp Taco Seasoning
1/2 tsp Salt
1/2 tsp Pepper
6 Burrito Size Flour Tortillas
1 Can Refried Beans ((16 oz.))
2 cups Shredded Cheddar Cheese

Steps:

  • Add the beef, enchilada sauce, green chiles, onion, taco seasoning, salt and pepper to the crock pot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Warm the refried beans in the microwave.
  • Place a spoonful amount of refried beans on each tortilla.
  • Then top with the beef from the crock pot and sprinkle with the cheddar cheese.
  • Roll the burritos tightly.
  • Empty all the remaining sauce from the crock pot and place the burritos in the crock pot.
  • Drizzle the sauce over the top of the burritos and cover with all the remaining shredded cheese.
  • Cook on high for 20 minutes to warm the burritos and melt the cheese.

1 pound 85% lean ground beef
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 small onion, diced
1 tablespoon olive oil
1 cup uncooked long grain rice
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can fire-roasted diced tomatoes, drained
1 (14.5 ounce) can vegetable broth
2 (1 ounce) packets taco seasoning
¼ cup chopped cilantro, or to taste
8 (10 inch) burrito-size tortillas, or as needed
2 cups shredded Mexican cheese blend
2 tomatoes, diced, or more to taste
1 avocado, diced, or more to taste
¼ cup sour cream, or to taste
2 green onions, chopped, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function; if available, select "more" option. Add ground beef, salt, and pepper. Cook and stir beef until browned and crumbly, 5 to 7 minutes. Add onion and cook until starting to soften, 1 to 3 minutes more. Add olive oil and rice. Cook and stir until some grains start to turn golden brown, about 2 minutes. Stir in beans, tomatoes, broth, and taco seasoning.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 7 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Fluff burrito bowl filling with a fork and add cilantro.
  • Serve filling in tortillas with Mexican cheese blend. Garnish with fresh tomatoes, avocado, sour cream, and green onions.

5 lbs beef roast (chicken can be substituted ) or 5 lbs pork roast, fat trimmed (chicken can be substituted )
4 -5 boneless skinless chicken breasts or 1 (4 -5 lb) roasting chickens
1 small onion, chopped
1/2 cup celery, chopped
1/2 cup water
1 dash salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon cumin
1 tablespoon chili powder (or one envelope taco seasoning)
sour cream (optional)
salsa (optional)
shredded lettuce (optional)
shredded cheese (optional)
chopped tomato (optional)
guacamole (optional)
chopped onion (optional)
chopped cilantro (optional)

Steps:

  • Add only 1/2 cup of water and the roast to crockpot.
  • Cover and cook on LOW setting 6-8 hours, until meat is tender and falling apart.
  • Remove roast from crockpot, allow to cool slightly; shred the meat, removing any remaining fat.
  • Remove any liquid from the crockpot and reserve it.
  • Place the meat back in the crockpot and season with salt, pepper, cumin, chili powder, garlic powder and/or taco seasonings of your choice. Mix well to coat meat.
  • Let this cook on LOW setting for about 3-4 hours. If the meat is very lean and dries out, use some of the reserved liquid to moisten it a bit.
  • Serve with warm flour tortillas, salsa, shredded lettuce, shredded cheese, chopped tomato, chopped onion, chopped cilantro, sour cream and/or guacamole.

0.5 (10 3/4 ounce) can condensed cream of celery soup

  • Serve shredded in juice.

2 cups cooked brown rice
2 cups cooked black beans
2 cups cooked corn kernels (I used frozen since it is not in season right now)
12-16 ounces Slow Cooker Mexican Shredded Beef
1 cup Super Easy Guacamole
1/2 cup of Salsa
lime slices
hot sauce (optional, to taste)
Cilantro (optional, for garnish)

Steps:

  • To make burrito bowls, evenly divide lettuce, rice, beans, corn and shredded beef between bowls. Top with guacamole and salsa, garnish with cilantro if using. Serve with lime slices and hot sauce if desired.

1 can Clover Valley Refried Beans

Steps:

  • Spray sides of Crockpot with cooking spray or use a Crockpot liner.
  • Mix together chili powder, garlic powder, onion, pinto beans, tomato sauce and diced tomatoes in a medium sized bowl.
  • Place 3/4 cup tomato mixture in bottom of Crockpot. Spread refried beans onto a tortilla.
  • Place tortilla in Crockpot. Sprinkle with 1/3 cup shredded cheese. Spread 3/4 cup tomato mixture on top. Continue the process, alternating tortillas, cheese and tomato mixture until you end with cheese on the top.
  • Cook on low for 3 1/2 hours.
