CARAMEL GRAPES

Also called 'burnt grapes', this recipe may sound different but once you try it, I guarantee you'll be making it again and again. Delicious!

Number Of Ingredients 6

2 cups sour cream
½ cup confectioners' sugar
2 tablespoons vanilla extract
5 cups green seedless grapes
1 cup butter
1 cup brown sugar

Steps:

  • In a large bowl, mix together sour cream, confectioner's sugar and vanilla. Stir in grapes. Set aside.
  • In a medium saucepan, combine butter and brown sugar. Stir constantly and cook over medium heat until mixture starts to thicken. It does not need to boil.
  • Pour brown sugar and butter over grape mixture and stir until well blended. Chill for at least 2 hours before serving.

This recipe caught my eye because of the uniqueness of it's name. What a delicious flavor, and so easy to prepare - Enjoy!!

Number Of Ingredients 6

4 -5 cups seedless grapes (red or green, or a mixture of both)
2 cups sour cream (can be fat-free)
1/2 cup white sugar
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup brown sugar

Steps:

  • Wash and dry grapes.
  • Mix sour cream, white sugar and vanilla together. Pour mixture over grapes, and stir gently. Place in a 9x13-inch pan or into individual dished (preferable).
  • In a saucepan, bring butter and brown sugar to boil. Continue boiling until golden, 1-2 minutes, and immediately pour over grapes. Do not stir.
  • Chill 3-4 hours. Makes 6 servings.
  • TIP: Fresh raspberries, blackberries or sliced peaches can be substituted for grapes.

Steps:

  • Wash and dry grapes. Mix sour cream, sugar and vanilla together.
  • Pour cream mixture over grapes and stir gently.
  • Pour into a 9 x 13 pan or individual serving dishes.
  • In a saucepan, bring butter and brown sugar to a boil.
  • Immediately pour over grapes, don't stir.
  • Chill for 3 to 4 hours.
  • Substitute fresh raspberries, blackberries, sliced peaches,etc.

1 1/4 pounds assorted seedless grapes (such as green, red, and black), cut into small clusters
6 large shallots (about 10 ounces), peeled, halved through root end
1 tablespoon chopped fresh thyme plus 6 large sprigs
2 tablespoons olive oil, divided
1 4-to 4 1/2-pound chicken, excess fat removed from cavity

Steps:

  • Preheat oven to 400°F. Gently toss grape clusters, shallots, chopped thyme, and 1 tablespoon olive oil in large bowl to coat. Rub chicken with remaining 1 tablespoon olive oil; sprinkle inside and out with salt and freshly ground black pepper. Place thyme sprigs in cavity. Place chicken in large roasting pan; arrange grape mixture around chicken. Roast until instant-read thermometer inserted into thickest part of chicken thigh registers 165°F and grapes are shriveled, about 1 hour 10 minutes.
  • Transfer chicken to platter; let rest 10 minutes. Using slotted spoon, arrange grapes and shallots around chicken. Transfer pan juices to small pitcher; spoon fat from surface of juices and discard. Serve chicken with pan juices alongside.
