This rich caramel custard pie is a classic favorite. The secret is to make the caramel in a cast iron skillet! Serve it with lightly sweetened whipped cream if you like.

1 (9 inch) pie shell, baked
1 cup white sugar
⅓ cup all-purpose flour
⅛ teaspoon salt
2 cups milk
4 egg yolks, beaten
1 cup white sugar

Steps:

  • In a medium saucepan, mix together 1 cup sugar, flour, salt, milk, and egg yolks, stirring until smooth. Cook over medium heat until thick and bubbly, stirring constantly. Remove from heat and set aside.
  • Sprinkle remaining 1 cup sugar in a 10 inch cast iron skillet. Cook over medium heat, stirring constantly until sugar is caramelized. Remove from heat and carefully pour into warm cream mixture. Stir until smooth. Pour mixture into pastry. Chill completely and serve with whipped cream

1 quart heavy cream
1 vanilla bean, split lengthwise
3/4 cup plus 4 tablespoons sugar, divided
6 large egg yolks, room temperature
Pinch of kosher salt
Whipped cream (for serving; optional)
Flaky sea salt (such as Maldon, for serving; optional)

Steps:

  • Preheat oven to 300°F. Place cream in a medium saucepan; scrape in seeds from vanilla bean and add pod. Bring to a boil over medium heat. Remove from heat; set aside.
  • Bring 3/4 cup plus 2 tablespoons sugar and 2 tablespoons water to a boil in a small saucepan over medium-high heat, stirring to dissolve sugar. Boil, swirling pan occasionally and brushing down sides of pan with a wet pastry brush, until mixture turns a deep amber color, about 4 minutes; remove caramel from heat.
  • Remove vanilla pod from cream; discard. Slowly add cream to caramel (mixture will bubble vigorously). Heat over medium heat, stirring occasionally, until smooth, about 2 minutes.
  • Whisk egg yolks, kosher salt, and remaining 2 tablespoons sugar in a large bowl. Slowly stream in caramel cream, whisking constantly. Divide custard among eight 6-ounce ramekins or ovenproof bowls and place in a kitchen towel-lined large baking dish or roasting pan. Fill pan with water to come halfway up sides of ramekins. Bake until custard is just set but still jiggly in the center, 60-70 minutes. Remove ramekins from baking dish; place on a wire rack and let cool. Chill custards, uncovered, at least 3 hours.
  • Top custards with whipped cream and sprinkle with sea salt.
  • DO AHEAD: Custards can be made 2 days ahead; cover and keep chilled.

2 (9 inch) pie shells, baked
3 cups white sugar
3 cups water
4 eggs, separated
1 cup evaporated milk
½ cup light corn syrup
¼ cup butter, melted
½ teaspoon vanilla extract
½ cup all-purpose flour
½ teaspoon cream of tartar

Steps:

  • Beat together egg yolks, evaporated milk, syrup, melted butter or margarine, vanilla, 1/2 cup sugar, and flour.
  • Brown 2 cups sugar in an iron skillet until light brown. Remove from heat. Add water; and return to heat until sugar dissolves. Pour in egg yolk mixture. Cook until thickened, then simmer 5 minutes. Pour filling into 2 baked pie shells.
  • Beat egg whites until foamy. Add cream of tartar and 1/2 cup sugar; continue to beat until stiff peaks form. Spread meringue over pies, sealing the edges.
  • Bake at 325 degrees F (165 degrees C) for about 15 minutes.

1- 9 homemade or store bought pie crush
1/2 c white sugar to pour in iron skillet
1/2-3/4 c sugar, to taste
1/3 c flour
3 eggs, separated
2 c milk 2%, whole or canned will work 1% not so much
1 tsp vanilla
2 Tbsp butter
EGG WHITES
3 egg whites
1/4 c sugar
1/8 tsp cream of tarter
a splash vanilla

Steps:

  • 1. Pour 1/2 cup sugar in iron skillet and turn on low heat. DO NOT STIR, You will be tempted to turn the heat up or stir the sugar but be patient. You can flick the unmelted sugar into the melted sugar so it will melt. It is worth the wait. You want the sugar to be a rich caramel color if it gets too dark it is burned and you will need to start again. If you use the burned sugar your pie will taste like burned sugar.
  • 2. While sugar in the skillet is melting... Custard :Add sugar and flour and 1 cup of milk to sauce pan, mix well so there are no lumps add the other cup of milk then the egg yolks. Mix well and then turn on to med heat. Bring to a boil stirring frequently. If the sugar in the skillet isn't melted yet, take this off the stove. TIP: When pouring the melted sugar into the custard they should be close to the same temperature.
  • 3. When sugar is melted... When all the sugar is melted pour it into the custard mix and stir until well blended. Add vanilla and butter and blend in. Pour into your prepared pie crust
  • 4. During all this you need to find time to whip the egg whites to stiff peaks. While pie is still warm mound the meringue Spread the meringue to the edge of the crust. Fluff the meringue after the pie is covered and bake in a 400 degree oven until lightly brown or desired color.

  • Gently warm the cream in a small saucepan over low heat. Place sugar in a small heavy bottom saucepan with high sides over medium heat. Stir the sugar until it is almost all melted then allow it to cook undisturbed. Let the sugar turn an almost black brown. If the sugar foams up give it a quick stir to settle it.

Cook over medium until sugar becomes fragrant and begins to melt around edges of pan, about 6 minutes. Gently swirl pan to incorporate melted and granulated sugar. Continue swirling pan until all of the sugar is completely melted and has darkened to the color of dark brown sugar, about 10 minutes. Immediately pour melted sugar into prepared pie plate, coating the bottom evenly. Let stand until cool, about 20 minutes.
  • Meanwhile, fill a large, 2-inch-deep roasting pan with hot water to a depth of about 3/4 inch (enough so it will not overflow when flan dish is added), and place pan in preheated oven. Whisk eggs in a large bowl. Add whole milk, sweetened condensed milk, and vanilla bean seeds, and whisk until smooth.
  • Set pie plate in hot water bath in oven, and carefully add milk mixture. Bake until edges are set and center looks glossy and retains a slight wiggle, about 50 minutes. Remove pie plate from water bath. Cool completely on towel, about 2 hours. Run a knife around edge of flan to loosen. When pan is rotated, flan should float in caramel. Press plastic wrap directly onto surface; chill at least 3 hours or preferably overnight.
  • Set pie plate in a shallow dish of hot water to soften caramel, about 2 minutes. Invert flan onto a large rimmed platter.
