"LITTLE KICK" JALAPENO BURGERS
I lightened up one of my husband's favorite jalapeno burger recipes, and although the original was good, we actually like this better! -Dawn Dhooghe, Concord, North Carolina

- In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into six patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until a thermometer reads 165° and juices run clear. , Top with cheese; cover and grill 1-2 minutes longer or until cheese is melted. Serve on rolls with salsa, sour cream and lettuce.

BáNH MI BURGERS WITH A KICK
Steps:
- In large bowl, combine ground beef, garlic, gingerroot, and pepper. Mix with a fork or your hands to blend. Do not overwork meat or your patties will become tough when grilled. Divide mixture into 4 even-sized patties, about 1/2 in (1.25 cm) thick. Place on plate and refrigerate. Grease barbecue grate and preheat grill to about 425 F (220 C).
- In small bowl, combine mayonnaise, chili garlic sauce, and lime juice. Stir to blend. Set aside.
- Place patties on preheated barbecue; grill for at least 3 minutes per side, flipping once, until meat thermometer inserted in thickest portion registers 160 F (70 C) in centre. Remove from heat to clean, warmed plate and cover to keep warm. Burgers will continue to cook as they rest.
- Lightly spread cut sides of buns with some mayonnaise mixture. Place cut side down on grill and lightly toast.
- To assemble, divide remaining mayonnaise mixture evenly among bottom halves of toasted buns. Top each with a couple of lettuce leaves. Place one patty on each. Top with equal amounts kimchi, shaved cucumber, and cilantro leaves. Add additional garnishes if you wish. Cover with top bun halves and serve.

KICK-ASS GRILLED BURGER RECIPE
We really do mean kick-ass! This burger is juicy and full of flavour. This burger stands up to any restaurant burger any day!

- Preheat the BBQ with the lid closed to 500 ºF.
- In a large bowl, break apart and spread out the ground beef from the packaging.
- Add the garlic, pepper, salt, paprika, chili powder, and olive oil.
- At first, loosely toss the ingredients with your hands to distribute the ingredients through-out the ground beef.
- Divide the mixture into 5 equal parts (or more if you prefer smaller patties).
- Form one of the portions into a ball, and then start flattening it with your hands until you have a decent looking patty. I always form my burgers by hand, and they don't have to look perfect. A rustic looking patty has more character in my opinion.
- Repeat the last step until all your burger patties are formed.
- Let the burgers sit at room temperature for about 10 minutes.
- While the burgers are resting, open the BBQ lid and grease the grates. I like to use a scrunched up ball of paper towels in tongs, dipped in grape seed oil (or vegetable oil). This will prevent the burgers from sticking to the grill.
- Place the burgers on the hot grill, and press the centre of each one gently with your thumb, to create just a little dip. This will prevent the burgers from puffing up in the middle.
- Let the burgers cook for about 2 1/2 minutes.
- Use a spatula to rotate (on the same side) the burgers 90 degrees. This will create those beautiful criss-cross grill marks.
- After 2 1/2 more minutes, flip the burgers onto the other side.
- Cook for another 2 1/2 minutes, and rotate 90 degrees again.
- Cook for another 2 1/2 minutes and place them on the buns.
- Durning the last step, you can toast the buns and melt the cheese on the burger during the last minute of cooking.
- Add those awesome toppings and enjoy!

- Preheat an outdoor grill for high heat, and lightly oil grate.
- In a large bowl, mix ground beef, egg, quick cooking oats, dried onion flakes, seasoning salt, pepper, ketchup, and dry onion soup mix. Form the mixture into about 4 burger patties.
- Place burger patties on the prepared grill, and cook about 5 minutes on each side, to an internal temperature of 160 degrees F (63 degrees C).

BEETROOT BURGERS RECIPE
Steps:
- Heat the olive oil in a saucepan and then add the onion and garlic, cooking it until soft.
- Add the grated vegetables and cook them until they are dry.
- Turn off the heat, allowing the vegetables to cool down.
- While the vegetables are cooling, mix roughly the chickpeas and the tahini paste (you can use a food processor if available).
- Place the mix in a bowl, add the vegetables, the spices, a dash of soy sauce, the oats and the cornflour.
- Mix everything together and season to taste.
- Create patties from the mix; they should be roughly 180 grams each.
- Pan-fry the patties in olive oil and cook slightly in the oven for 6 minutes at 170°C.
- Serve with chips and/or side salad.

With my first taste of the fabulous tuna burger served at Danny Meyer's Union Square Cafe in New York City, I became infatuated with the flavor. I've tried many combinations of tuna burgers, but I always go back to Asian flavoring ingredients. Wasabi is a wonderful side note to the tuna. Be careful not to overprocess the tuna; it should still be chunky, not a smooth paste. These tuna burgers are best served rare to medium-rare to appreciate the full flavor of the seasoning and the fish.

- In a small bowl, mix the water and wasabi powder together to form a paste. Stir in the sour cream, mustard, and sugar.
- Light a charcoal fire or preheat your gas grill on high. Oil the grill's cooking surface. Let the coals bum down to a medium-hot fire or adjust the gas grill burners to medium-high.
- 3, Meanwhile, cut the tuna into large chunks, place in a food processor, and pulse just until coarsely ground. Transfer to a large bowl and stir in the egg white, soy sauce, and sesame seeds. With moistened hands, form the mixture into 6 patties, about 1 inch thick. Brush both sides of each burger with the oil and sprinkle the Greek seasoning equally over the burgers.
- Place the burgers on the grill and cook for 2 to 3 minutes per side or to your desired degree of doneness.
