1 pound lean ground beef (90% lean)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup reduced-fat ranch salad dressing
2 tablespoons ketchup
4 cups shredded lettuce
4 cups torn romaine
1 medium cucumber, finely chopped
1 medium tomato, finely chopped
1/2 cup chopped dill pickles
1/4 cup finely chopped red onion
3/4 cup shredded cheddar cheese
Crushed potato chips, optional

Steps:

  • In a small bowl, combine beef, salt and pepper, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat 4-5 minutes on each side or until a thermometer reads 160°. , Meanwhile, whisk salad dressing and ketchup. In a large bowl, toss lettuces with half the dressing mixture; divide among four plates. Top with burger, cucumber, tomato, pickles, onion and cheese. Serve with remaining dressing. Top with potato chips if desired.

1 egg ((or equivalent egg replacement))
1/4 cup cracker crumbs ((or stale bread crumbs, or rolled oats))
1/4 tsp salt ((substitute celery salt or seasoned salt for more flavor))
1/4 tsp black pepper
1/2 tsp Worcestershire sauce

Steps:

  • Mix all of this together in a bowl. I use gloves and get in there with my hands to be sure it's all mixed well.
  • Cook the burger to your liking.
  • Let it rest then slice/dice up and add all your veggies.

Burger Bowls are a low carb way enjoy that juicy burger, it's so full of flavor you won't even realize your missing the bun! A lean ground beef burger bowl is stuffed with bacon, melted cheese, cream cheese and jalapenos and baked to perfection.

2 lbs extra lean ground beef
2 tsp Lawry's seasoned salt
1/2 tsp pepper
1 tsp garlic powder
3 tsp Worcestershire sauce
4 oz cream cheese (softened)
1 cup cheddar cheese (shredded)
2 jalapenos
6 slices bacon (cooked)

Steps:

  • Preheat oven to 350 degrees.
  • Mix together ground beef, salt, pepper, garlic powder, and Worcestershire sauce.
  • Line a baking sheet with foil. Divide meat into 6 balls. Use a clean jar or can to help form the ground beef into a bowl shape.
  • Cut off the jalapeno pepper stem. Keep the jalapeno pepper membrane and seeds, or remove for a less spicy burger.
  • Mix the cream cheese, jalapenos, bacon and cheese. Divide into 6 portions and fill each burger bowl with the cream cheese mixture.
  • Add a piece of foil on top to make a foil tent (foil loosely covering) and bake for 30 minutes. Before serving garnish with additional cheddar cheese, bacon or jalapenos if desired.

2 pounds 80/20 ground beef
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon granulated sugar
½ teaspoon paprika
1 tablespoon Worcestershire sauce
¾ cup mayonnaise
2 tablespoons French dressing (could also use Catalina dressing instead)
1 ½ teaspoons yellow mustard
2 tablespoons sweet relish
1 tablespoon finely minced sweet onion
1 tablespoon dill pickle juice (from the jar of dill pickle slices)
2 teaspoons white or white wine vinegar
1 teaspoon granulated sugar
1/8 teaspoon kosher salt
¼ teaspoon garlic powder
4 sesame seed burger rolls, cut into cubes
2 tablespoons butter, melted
½ teaspoon kosher salt
½ teaspoon garlic powder
½ teaspoon paprika
12 cups Romaine lettuce, chopped (1-2 heads)
2 medium tomatoes, cored and diced
1 small red onion cut into thin slices
20 dill pickle slices (the kind with the ridges are the best)
Optional... Shredded cheddar or Monterey Jack cheese

Steps:

  • Add the olive oil to a large skillet over medium high heat.
  • Once hot, add ground beef, salt, pepper, garlic powder, onion powder, sugar, paprika and Worcestershire sauce.
  • Break up as it cooks and cook until no longer pink. Pour into a colander over a bowl and set aside. Discard the fat and liquid that drains into the bowl.
  • Make the special sauce by whisking all of the sauce ingredients. Set aside.
  • In a large saute pan over medium heat, place cubed bread, melted butter, salt, garlic powder and paprika and toss and cook for up to five minutes to toast the bread. Remove from heat and pour into a bowl. Set aside.
  • In a large bowl, place the romaine, tomatoes, onions slices, pickle slices and optional chopped cheese and toss with the drained cooked ground beef and the special sauce.
  • Portion into four bowls then top each with the croutons and serve.

  • Cover the bottom of the meat bowls with cheddar cheese, then the cooked mushrooms. Use the piping bag to pipe the mashed potatoes on top of the mushrooms. Bake for 30 minutes at 350 °F.
  • Fry the potato skins in hot vegetable oil until golden brown. Once cooked, press down on the bottoms of the potato skins so that the stay standing. When the burger bowls are ready, remove the foil. Garnish with chives and bacon bits. Fill the potato skins with ketchup and mustard. Serve the potato skins with the burger bowls and enjoy!
