1/4 cup grape jelly
24 small frozen fully cooked meatballs (about 1 lb.)
24 drained canned pineapple chunks in juice (about 1/2 of 20-oz. can)
1 large red pepper, cut into 24 pieces

Steps:

  • Cook barbecue sauce and jelly in large skillet on medium heat 2 min. or until jelly is melted and mixture is well blended, stirring frequently.
  • Add meatballs; cook 10 min. or until heated through, stirring occasionally.
  • Thread 1 meatball onto each of 24 wooden skewers or toothpicks alternately with 1 each pineapple chunk and red pepper piece.

28 fancy toothpicks
28 cherry tomatoes
3 leaves romaine lettuce, cut into 28 (1 1/2-inch) pieces
1/2 cup Original Bisquick™ mix
1 lb ground beef
1 egg
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 oz Cheddar cheese, cut into 1/4-inch cubes (about 1/2 cup)

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium heat, turning often, until browned but not overly crisp. Drain on paper towels. Discard all but 1 tablespoon drippings. Cut each bacon slice into 4 pieces.
  • On each toothpick, thread 1 tomato half, 1 bacon piece and 1 lettuce piece; set aside.
  • In large bowl, mix remaining ingredients except cheese. Fold in cheese. Shape tablespoonfuls of mixture into meatballs; flatten slightly to resemble hamburgers.
  • In same skillet, heat bacon drippings over medium-high heat. Cook burgers in drippings 2 to 3 minutes on each side or until meat is no longer pink. Insert 1 toothpick in each burger; serve immediately.

4 oz center cut raw bacon (minced)
2 tbsp prepared mustard
1/2 tsp kosher salt
1/2 tsp onion powder
1/4 tsp black pepper
1 head butter lettuce
30 cherry tomatoes
30 dill pickle chips or slices
ketchup (mayo and/or mustard optional for serving)

Steps:

  • Using your hands, gently mix together the beef, bacon, mustard, salt, onion powder and pepper.
  • Form into 30 (golf ball size) meatballs.
  • Heat a grill or grill pan to high heat and grill 3 minutes on each side, or until your desired doneness.

1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon mayonnaise
1 (1 ounce) package dry onion soup mix
24 (2 inch square) dinner rolls, split

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, thoroughly mix ground beef chuck, Cheddar cheese, mayonnaise and dry onion soup mix.
  • Spread even amounts of the ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. If you purchased the rolls in aluminum foil pans, you may return them to the same pan for baking. Otherwise, place them on a baking sheet or baking pan. Cover the pan tightly with aluminum foil.
  • Bake for 30 to 35 minutes in the preheated oven, or until meat is cooked through.

1 large egg yolk, beaten
1/2 pound lean ground beef
2 tablespoons grated onion
1/2 teaspoon salt
Dash pepper
6 slices bread
24 cubes cheddar cheese (1/2-inch cubes)

Steps:

  • In a bowl, combine egg yolk, ground beef, onion, salt and pepper. Shape mixture by teaspoonfuls into 24 balls. Remove crusts from bread; roll flat and cut into 1-1/2-in. rounds. Place meatballs on bread rounds; make a depression in each ball and fill with a cube of cheese, making sure bread is covered with meat mixture. , Place on a baking sheet. ½ cup dried minced onion
¾ cup mayonnaise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.

2 slices thick-cut bacon
9 ounces ground beef
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 to 3 splashes Worcestershire sauce
1 clove garlic, pressed
3 slices Cheddar, quartered
1/4 cup baby spinach leaves
12 dill pickle chips
2 tablespoons your favorite burger condiment
3 cherry tomatoes, halved

Steps:

  • Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
  • Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
  • Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
  • Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

1 can (11 oz) refrigerated Pillsbury™ Original Breadsticks (12 Count)
1 egg
3 tablespoons dried minced onion
2 tablespoons milk
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup Progresso™ plain bread crumbs
1 lb lean ground beef
1/2 cup ketchup

Steps:

  • Heat oven to 375°F. Separate dough into 12 breadsticks. Cut each into 4 pieces; place on ungreased cookie sheet.
  • Bake at 375°F. for 10 to 12 minutes or until lightly browned. Immediately remove from cookie sheet; place on wire racks. Cool 5 minutes or until slightly cooled. Split each in half, keeping tops and bottoms together to form miniature buns.
  • Reduce oven temperature to 350°F. Beat egg in medium bowl. Add onion, milk, Worcestershire sauce, salt and pepper. Stir in bread crumbs. Add ground beef; mix well. Press ground beef mixture into thin layer in bottom of ungreased 13x9-inch pan.
  • Bake at 350°F. for 14 to 16 minutes or until thoroughly cooked. Cut into 48 rectangles (8 strips crosswise and 6 strips lengthwise). Fill buns with miniature burgers. Place ketchup in small bowl for dipping sauce. Serve immediately.

There are the classic toppings like cheese (cheddar, American, and pepperjack are all good choices), mayo, ketchup, mustard, Romaine or iceberg lettuce, sliced red onions, tomatoes, pickles. You can also (and I definitely think your should) toast your buns. I like to slice the buns open and spread them with a little butter and then you can either place them under the broiler in your oven or buttered-side-down on a hot skillet or on the grill’s lowest setting.

  • Preheat oven to 350° F. Spray 24 mini muffin cups with non stick cooking spray. Separate dough into 4 rectangles; pinch perforations to seal. Cut each rectangle into 6 squares. Press each square in bottom and up side of mini muffin cup. Bake 6 minutes. Remove from oven. Using handle of wooden spoon, immediately make 1 1/2 –inch indentation in center of each cup.
