BULL'S EYE PEANUT BUTTER CANDY

Bull's Eye Peanut Butter Candy image

These are just like little peanut butter cup balls. There is a bare circle on the top where the peanut butter shows through and this is the bull's eye (I guess). You could dip the whole thing and have just a chocolate covered ball. Anyway, they are delicious and they make a lot.

Provided by Mimi in Maine

Categories     Candy

Time P1DT30m

Yield 75 balls

Number Of Ingredients 6

2/3 cup butter (soft)
1 (1 lb) confectioners' sugar
1 (12 ounce) jar peanut butter
1 (3 inch) square paraffin wax
1 (12 ounce) package chocolate chips
4 (1 ounce) unsweetened chocolate squares

Steps:

  • Mix the peanut butter mixture together well.
  • Form into small balls and put in refrigerator over night.
  • When ready to dip, use a double boiler and melt the wax, chocolate bits, and the squares of chocolate together.
  • Using a toothpick (I sometimes use a fork so I don't have to get rid of the toothpick hole), insert it into the middle of the ball and dip in the chocolate mixture about 7/8 of the way, leaving a small eye at the top.
  • Put on wax paper to cool.

BUCKEYES I

Buckeyes I image

This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

PEANUT BUTTER EYEBALLS

Peanut Butter Eyeballs image

Peanut Butter Eyeballs are a holiday variation of a popular candy called Buckeyes. These nutty treats are dunked white chocolate and then decorated to look like bloodshot eyes. Don't be afraid to get creative with your decorating. A platter of different colored eyeballs would look splendidly scary at a Halloween party. Taken from www.food.about.com

Provided by my kids mom

Categories     Dessert

Time 30m

Yield 20 serving(s)

Number Of Ingredients 7

1/2 cup smooth peanut butter
3 tablespoons butter, chopped
1 1/4 cups powdered sugar
1 teaspoon vanilla extract
6 ounces white candy coating
1 (8 ounce) bag M&M's plain chocolate candy
red decorating frosting

Steps:

  • In the bowl of a large mixer, blend peanut butter and butter until creamy.
  • Add powdered sugar and vanilla to peanut butter mixture and continue beating until it looks smooth.
  • Cover a cookie sheet with aluminum foil or waxed paper.
  • Using a spoon, scoop out balls of peanut butter and roll between your palms to get them as round as possible. Place on the cookie sheet and freeze for at least 30 minutes.
  • Place the white chocolate coating in a microwave-safe bowl and microwave until melted. Stir thoroughly until it is smooth.
  • Dip the peanut butter balls into the white chocolate coating. You can use two forks to balance the candy on, or just grasp it in your fingers and roll it around until it is covered completely. Return it to the cookie sheet and proceed to dip the rest of the peanut butter balls.
  • While the chocolate is still wet, press an M&M candy in the center for the iris.
  • Return the eyes to the refrigerator to harden.
  • Once the eyeballs are firm, you can use the red decorator frosting to make squiggly blood vessels.
  • Variation: Another option is to take a few drops of red candy coloring and drop them into the melted white chocolate. Use a fork to mix the chocolate around a bit, but don't stir too much: you want blood-red swirls, not pink chocolate! You can then dip your candies straight into your bloody mixture and skip step #9.

PEANUT BUTTER ROLL

Peanut Butter Roll image

Always a special treat for Christmas, this is a candy that everyone loves.

Provided by UKKats

Categories     Desserts     Candy Recipes

Time 1h

Yield 24

Number Of Ingredients 6

1 ½ tablespoons confectioners' sugar, or as needed
4 cups white sugar
1 cup water
1 cup white corn syrup
3 egg whites
½ cup peanut butter, softened, or to taste

Steps:

  • Dust a clean dishcloth thoroughly with confectioners' sugar.
  • Bring white sugar, water, and corn syrup to a boil in a saucepan. Do not stir once syrup begins to boil. Heat to 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from water and placed on a flat surface.
  • Beat egg whites in a glass, metal, or ceramic bowl on low speed until soft peaks form, about 5 minutes. With mixer running, gradually pour hot syrup mixture into egg whites as they beat. Once all the syrup has been added, increase the speed to medium and beat until egg whites are thick, stiff and no longer glossy. The sides of the bowl should be cool to the touch.
  • Dust rolling pin lightly with confectioners' sugar. Roll out egg white mixture on the dishcloth to a rectangle about 3/16-inch thick. Spread peanut butter evenly on top.
  • Roll candy carefully into a log and let cool. Slice into pieces about 1/2-inch thick.
