½ pound ground beef
2 stalks celery, chopped
2 green onions, chopped
1 cup diced tomato
2 cups beef broth
1 cup bulgur (cracked wheat), uncooked
salt to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Place the ground beef in a skillet over medium-high heat. Cook, while stirring to crumble, until almost cooked through. Drain the grease, and reduce heat to medium. Stir in the celery, green onions, and tomato. Cook until the celery is tender, and the beef is browned.
  • Meanwhile, bring the beef broth to a boil in a saucepan. Add the bulgur wheat, cover, and reduce heat to low. Simmer for about 10 minutes, until tender. Stir the bulgur wheat into the vegetables and beef, and season with salt and cayenne pepper.

1 large head cabbage, finely chopped
1 (14.5 ounce) can diced tomatoes with juice
1 onion, halved and thinly sliced
1 tablespoon Italian seasoning
salt and ground black pepper to taste
1 pound lean ground beef

Steps:

  • Combine cabbage, tomatoes with juice, onion, Italian seasoning, salt, and black pepper in a large pot over low heat. Bring cabbage mixture to a simmer and crumble ground beef into the pot. 1 small green cabbage
1 cup finely chopped parsley
2 onions, chopped
4 celery ribs, chopped
1/4 teaspoon italian seasoning
1/2 teaspoon minced garlic
2 teaspoons olive oil
tomato sauce
4 cups water
2 cups dry bulgur
1 (8 ounce) can tomato sauce
1/2 cup water

Steps:

  • Remove core from cabbage, place cabbage head in steamer and steam until all leaves are soft and separate easily.
  • Saute parsley, onions, celery, seasoning, and garlic in olive oil until onions are soft.
  • Add 2 15-ounce cans of tomato sauce, 4 cups water and bulgur.
  • Cook about 1/2 hour over medium heat, stirring occasionally, until bulgur is tender.
  • Remove from heat.
  • To stuff cabbage leaves, place a spoonful of mixture in center of each leaf.
  • Starting at one side, roll leaf up and fold ends under.
  • Place in a deep baking pan.
  • Mix the 8-ounce can of tomato sauce with 1/2 cup water and pour over stuffed cabbage leaves so they remain moist during baking.
  • Bake at 375°F for about 30 minutes until cabbage is hot.

1 cup bulgur
1 1/2 cups cold water
1 lb lean ground beef
2 medium onions, chopped
1/2 cup fresh cilantro or 1/2 cup parsley, finely chopped
1 tablespoon fresh dill weed, chopped
1/4 teaspoon salt
pepper
4 medium tomatoes, chopped
1/2 cup canned low-sodium V8 juice
2 tablespoons fresh lemon juice

Steps:

  • In a medium bowl, soak bulgur in cold water for 15 to 30 minutes, or until soft. Set aside.
  • meanwhile, heat a heavy non-stick skillet over medium-high heat. Add beef and saute for 4 to 5 minutes or until meat is no longer pink. Drain fat from pan.
  • Add onions to skillet and cook until tender, 3 to 4 minutes.
  • Drain bulgur and add to meat mixture with cilantro, dill weed, salt, pepper, chipped tomatoes, vegetable juice and lemon juice. Stir gently.
  • Place mixture in a 10 x 10 x 2 inch baking dish or oven proof casserole dish.
  • Bake at 350 uncovered for 15 to 20 minutes or until heated thoroughly.

Bulgur is delicious with lightly browned onion and cabbage. The green beans add a companionable flavor and texture.

Number Of Ingredients 6

1 cup raw bulgur
2 tablespoons light olive oil
1 large red or yellow onion, quartered and thinly sliced
One 8-ounce package shredded coleslaw cabbage
One 10-ounce package frozen French-cut green beans, thawed
Salt and freshly ground pepper to taste

Steps:

  • Boil 2 cups water. Pour the water over the bulgur in a heatproof container. Cover and let stand until the water is absorbed, about 30 minutes. Or combine the water and bulgur in a small saucepan and simmer until the water is absorbed, about 15 minutes.
  • Heat the oil in a large skillet or stir-fry pan. Add the onion and sauté over medium-low heat until translucent. Layer the cabbage and green beans over the onions, cover, and cook for 5 minutes. Then uncover, turn the heat up to medium-high, and sauté, stirring frequently until all the vegetables are lightly and evenly browned.
  • Transfer the cooked bulgur to the skillet and stir it in. Sauté for another 3 to 4 minutes, stirring often. Season with salt and pepper, and serve.

A popular and hearty stew popular in Turkish cuisine. To make a vegetarian version, omit the meat.

1/2 lb ground beef or lamb
1 onion, chopped finely
1 c bulgur
2 Tbsp tomato paste
1 tsp red pepper flakes
1/2 medium cabbage, coarsely chopped
1/2 lemon, juiced
2 Tbsp olive oil
2 c hot water
2 tsp dried mint
salt and pepper to taste
plain yogurt to serve

Steps:

  • 1. Heat oil in a large pan over medium heat and saute the meat until no longer pink.
  • 2. Add onions and chopped cabbage to the pan and cook an additional 4-5 minutes. Stir in the bulgur, tomato paste, and water and combine thoroughly.
  • 3. Add the lemon juice, red pepper flakes and dried mint and season with salt and pepper. Bring to a boil and cover - reduce heat to low and cook 15-20 minutes longer or until cooked to your liking.
  • 4. Serve hot and sprinkle additional dried mint and red pepper flakes over the top. Add a dollop of plain yogurt by the side.
