GROUND BEEF AND CABBAGE
My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. My mother used to serve this with corn on the cob and cornbread. Very inexpensive and very good as well. Enjoy an Ozark memory...

- Add the beef to a non-stick pan, breaking it apart as well as you can while cooking at medium-high heat. Cover the pan with a lid for 4-5 minutes. I always add just a little bit of water to make sure the beef doesn't burn and get too dry. Please, make sure there's no water in the pan before adding the rest of the ingredients.
- Add the chopped cabbage, chili flakes, 1 garlic clove, 1 tbsp tamari sauce and 1 tbsp oil (I used olive oil). Cover with a lid and cook for about 3 minutes.
- Take the lid off, add 1 tbsp tamari, 1 tbsp olive oil and the ginger, the rest of the garlic and let cook for 4-5 more minutes or until any excess liquid is gone (there might be some from cooking the cabbage).

- Dice onions finely, chop parsley leaves, finely chop garlic. Add everything into a big bowl along with washed and drained bulgur wheat and rice, tomato and red pepper paste, salt, and spices.
- Cut the cooked and cooled cabbage leaves into reasonable sizes that you can roll. The veins of the leaves are important while rolling. You have added the filling along with the veins so you can roll it better and it looks more even this way. For more details make sure to watch the video.
- In a medium-size pan add 4-5 tbsp. olive oil, 1 tbsp. tomato paste. Cook the tomato paste for 1-2 minutes. Add crushed garlic, stir for 10 seconds or more. Add 2 cups of hot water.
