VEGETABLE-BULGUR STIR FRY
I got this from a vegetarian cooking show and added a few things that my family likes because I thought it was a bit bland. It turned out great and everybody ate it up. It is easy to make and can be served with bread sticks, bread or rolls and a green salad. If you want to make a non-vegetarian version, just add some cooked chicken or even cooked hamburger meat..

Steps:
- Put oil in a large hot skillet and spread evenly around.
- Add scallions, onion and garlic. Cook about a minute or two until starts getting tender.
- Add bulgar and sesame seeds and stir fry enough to lightly brown bulgar and sesame seeds.
- Add carrots and cook one minute or so.
- Add zucchini, yellow squash and mushrooms.
- Add chicken-style seasoning and other seasonings.
- Add water and stir well, then add the marmite and stir in until well incorporated.
- Add broccoli.
- Let cook until bulgar is done and veggies are tender but not soggy.
- Serve with a salad and bread sticks or rolls.

- 1. About 1 hour before the other steps, pour the boiling water over the bulgur and allow the grain to swell and soften, soaking up almost all the water. You can speed this up by reheating or by cooking according to package directions.
- 2. Lightly oil, if necessary, a large, stick-free covered saute pan. Heat to medium. Pour the lightly beaten eggs into the pan and swirl to make a thin layer of egg. Cook the egg until dry, scraping and flipping as necessary but not really scrambling. Ideally, you want a thin sheet of cooked egg but just get as close as you can.
- 3. Wipe any remaining egg out of the pan and raise the heat a bit. Heat about 1 tablespoon of oil and saute the shallot and garlic briefly.
- 4. Drain the thawed vegetables if very wet. Add to the pan and saute until heated through and any hard vegetables, like carrots start to soften. Cover as needed to steam the vegetables but boil off excess water.
- 5. Optionally, stir in any meat or seafood and heat through.
- 6. Optionally, add a bit of Chinese Five-Spice or other spice to taste.
- 7. Stir in the softened bulgur and heat through. While heating, stir in the sesame oil, fish sauce, and soy sauce, adjusting the amounts of each to taste.
- 8. Cut the cooked egg into ribbons or small pieces. Stir into bulgur and veggie mixture.
- 9. Optionally, stir in or garnish with cilantro leaves.
- 10. Serve hot.

BULGUR STIR-FRY WITH VEGETABLES AND HALLOUMI | RECIPE

- Add bulgur and lentils to a pot of salted water and cook for approx. 10 - 12 min. Allow to soak, then transfer to a sieve to drain, pressing down with your hands to squeeze out excess liquid.
- Peel and mince garlic. Peel and finely dice onion. Remove the ends of the zucchini and dice. In a frying pan, heat some oil over medium-high heat. Add garlic, onion, and zucchini and sauté for approx. 2 - 3 min. Deglaze with vegetable broth and season with salt, pepper, and a sprinkling of cumin. Let simmer until mostly reduced.
- Add bulgur-lentil mixture to the sautéed vegetables and stir to combine. Allow to sit for approx. 3 min. Serve bulgur-vegetable stir-fry with halloumi, spinach, and balsamic glaze. Enjoy!
