BULGUR SALAD WITH CUCUMBERS, RED PEPPERS, CHICK PEAS, LEMON & DILL

Bulgur Salad with Cucumbers, Red Peppers, Chick Peas, Lemon & Dill image

With fresh herbs, chopped vegetables and chickpeas, this Middle Eastern-style bulgur salad is like a bulked-up tabbouleh.

Provided by Jennifer Segal

Categories     Salads

Time 40m

Yield 4 to 6 as a side dish (2 to 3 as a main course)

Number Of Ingredients 14

1 cup bulgur
1½ teaspoons salt, divided
⅓ cup diced red onion
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice, from 2 lemons
1 large garlic clove, finely minced
1 teaspoon cumin
1 teaspoon sugar
½ teaspoon freshly ground black pepper
1 red bell pepper, diced
1 small English (or hothouse) cucumber, seeded and diced
½ cup finely chopped fresh dill
⅓ cup finely chopped fresh parsley
1 15-ounce can chickpeas, drained and rinsed

Steps:

  • Bring a kettle of water to a boil. Place the bulgur in a large bowl with ½ teaspoon salt and 1¼ cups boiling water. Cover the bowl tightly with saran wrap and let sit for 15-30 minutes, or until all of the water is absorbed. Let cool, then fluff with a fork.
  • Meanwhile, to soften the bite of the raw onions, place them in a small bowl and cover with cold water. Let sit for ten minutes, and then drain. (Feel free to skip this step if you don't mind the strong taste of raw onions.)
  • In a large bowl, whisk together the oil, lemon juice, garlic, cumin, sugar, pepper, and remaining 1 teaspoon salt. Add the cooled bulgur, onion, bell pepper, cucumber, dill, parsley, and chick peas. Toss well, then taste and adjust seasoning if necessary. Chill until ready to serve or up to two days. Serve cold or room temperature.

BULGUR PILAF WITH BROCCOLI AND PEPPERS

Bulgur Pilaf With Broccoli and Peppers image

I have recently started the WW Core program which emphasizes whole grains, produce, and a little bit of good oil. Around the same time I started I also re-found a lovely little cookbook that a friend gave me a few years ago called "One Pot Vegetarian Dishes" by Amy Cotler. This pilaf is a modification of a recipe from that book. It needs a little salt and pepper but is a nice main dish or side dish depending on your eating style. The original recipe says it can be served either warm or cold though I have only tried it warm. And the original recipe called for red pepper. As I only had frozen green pepper that is what I used, but feel free to change it.

Provided by ladypit

Categories     One Dish Meal

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

1 cup broccoli floret, cut small
1 onion, chopped (use a small onion)
2/3 cup frozen green bell peppers or 1 fresh green bell pepper, chopped
1 clove garlic, minced
1/2 tablespoon olive oil
1 cup canned tomato
1 cup bulgur
3/4 cup canned black beans, rinsed and drained
dried oregano (optional)
salt, to taste
pepper, to taste
3/4 cup hot water

Steps:

  • Bring a large pan of salted water to boil over high heat.
  • Add the broccoli and cook until it is crip tender but still green, about 1 to 2 minutes.
  • Drain the broccoli and rinse it briefly under cold water.
  • Using the same pan, add the oil.
  • Then add the onion, garlic, pepper, and oregano if using.
  • (Just use about 1/4 tsp.) Cook over medium heat, stirring often, until the onion is translucent which is about 3 to 5 minutes.
  • Add the tomatoes, bulgur, water, and salt and pepper to taste.
  • Bring to a boil and then reduce the heat to low.
  • Cover it and cook until all the liquid is absorbed.
  • Start checking at 10 minutes but it may take up to 15.
  • Turn off the heat and add the broccoli and the black beans.
  • Cover the pan and let it sit until the bulgur is tender but still slightly firm.
  • This will take about 10 to 15 minutes.

BULGUR PILAF WITH RED PEPPERS AND TOMATOES

Bulgur Pilaf With Red Peppers And Tomatoes image

Provided by Molly O'Neill

Categories     dinner, lunch, appetizer, main course, side dish

Time 1h15m

Yield Four servings

Number Of Ingredients 15

1 1/2 cups fine-grain bulgur
3 medium red bell peppers, stemmed, cored and cut into large pieces
1 red or green chili pepper, cored, stemmed and seeded
2 tablespoons water
1 1/4 teaspoons salt, plus more to taste
1/8 teaspoon sugar
2 medium-size ripe tomatoes
8 scallions, trimmed and thinly sliced
1/2 cucumber, peeled, seeded and chopped
3/4 cup chopped Italian parsley
6 tablespoons fresh lemon juice
1 tablespoon pomegranate molasses, preferably Cortas brand (see note)
1/3 cup olive oil
1 teaspoon hot Hungarian paprika, or to taste
Tender romaine lettuce leaves or boiled vine leaves, for garnish

Steps:

  • Place the bulgur in a fine sieve and shake to remove any dust. Place in a large bowl and cover with cold water. Let stand 30 minutes.
  • Meanwhile, place the bell and chili peppers in a food processor with the water, 1/4 teaspoon of the salt and the sugar. Process until pureed. Transfer to a saucepan and cook over medium heat, stirring often, until reduced to a jam-like consistency, about 20 minutes. Set aside.
  • Cut the tomatoes in half and squeeze gently to remove the seeds. Using the large holes of a hand grater, grate the tomato halves with the cut side facing the grater. (You should be left with just the tomato skin in your hand; discard.)
  • Drain the bulgur and return it to the bowl. Add the red-pepper paste, the tomato pulp, the remaining teaspoon salt, the scallions, cucumber, parsley, lemon juice, pomegranate molasses, olive oil and paprika. Stir to mix well.
  • Cover tightly with plastic wrap and refrigerate for a few hours. Taste and season with more salt if needed. Spoon onto a platter, surround with the lettuce or vine leaves and serve.

BULGUR PILAF WITH EGGPLANT, PEPPER & TOMATOES (HONDROS ME MELITZANES)

Bulgur Pilaf with Eggplant, Pepper & Tomatoes (Hondros me Melitzanes) image

On Crete, this pilaf is often made with xynohondros, or cracked wheat simmered in soured goat's milk. A sprinkling of feta pays homage to that flavor.

Provided by Aglaia Kremezi

Categories     Healthy Bell Pepper Recipes

Time 50m

Number Of Ingredients 12

1 medium eggplant (about 1 pound), cut into 1-inch pieces
3 tablespoons extra-virgin olive oil plus 1/2 cup, divided
½ teaspoon sea salt, divided
1 ½ cups coarse bulgur
1 ½ cups chopped onion
1 large green bell pepper, cut in 1/4-inch pieces
3 cups chopped ripe tomatoes
½ cup dry white wine
1 ½ cups water
2 teaspoons Aleppo pepper or 1/2 teaspoon crushed red pepper
1 cup crumbled feta cheese, divided
½ cup chopped fresh mint, divided

Steps:

  • Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Toss eggplant with 3 tablespoons oil and 1/4 teaspoon salt in a medium bowl. Spread on the prepared pan. Roast until golden, 15 to 25 minutes.
  • Meanwhile, toast bulgur in a large saucepan over medium heat, shaking the pan occasionally, until fragrant, about 5 minutes. Transfer to a bowl. Add the remaining 1/2 cup oil and onion to the pan. Cook, stirring occasionally, until the onion is softened, about 2 minutes. Reduce heat to medium-low, cover and cook, stirring occasionally, until the onion is very soft, 6 to 8 minutes.
  • Increase heat to medium-high and add bell pepper and the bulgur. Cook, stirring occasionally, until the bell pepper is softened, about 3 minutes. Add tomatoes and wine. Cook, stirring occasionally, for 3 minutes. Add water, Aleppo (or crushed red pepper) and the remaining 1/4 teaspoon salt. Reduce heat to medium-low, cover and simmer until the bulgur is tender, 10 to 12 minutes more.
  • Remove from heat and stir in the eggplant, 1/2 cup feta and all but 1 tablespoon mint. Let stand, covered, for 3 minutes. Serve topped with the remaining 1/2 cup feta and 1 tablespoon mint.

1 cup red onion, cut into 1/4-inch dice (about 1 small)
1 clove garlic, peeled and crushed
1/2 teaspoon fine sea salt
2 tablespoons tomato paste
1/2 to 1 teaspoon Aleppo pepper

Categories     Side

Yield 8 (3 points)

Number Of Ingredients 11

1 Tbsp olive oil
1 onion, chopped
1 Italian green pepper, chopped
2 large tomatoes, seeded and chopped (or see note below)
2 Tbsp tomato paste
1 1/2 cups bulgur
2 tsp kirmizi biber
2 cups chicken or veggie broth
1/4 cup chopped parsley
1/2 tsp salt
ground pepper

Steps:

  • In a heavy saucepan, heat oil over medium heat and cook the onion gently until softened. Stir in the green pepper, tomatoes, tomato paste, bulgur, turkish red pepper and stock. Season with salt and pepper. Bring the mixture to a boil, then turn the heat down to its lowest setting, cover the saucepan, and cook gently for about 20 minutes, or until the bulgur has absorbed all the liquid, stirring halfway through. Let the mixture stand, covered, for about 5 minutes, then stir in the parsley and serve. VARIATION: cut 12-15 large mushrooms into chunks and add to the onions after 2 minutes, sauteing briefly before adding other ingredients. Can also use a small can of fire-roasted chopped tomatoes (14 oz?) with their juice in place of the tomatoes, and only use 1 1/2 cups broth.
