How to Cook Bulgur image

While we love bulgur in a traditional tabbouleh, this high-fiber, quick-cooking grain can do so much more. Try it in our California-Style Veggie Burgers or serve it as a tasty, healthy side dish with dinner tonight.

1 cup medium-grind bulgur
Pinch of kosher salt
Extra-virgin olive oil (optional)

Steps:

  • Combine bulgur, 1 1/2 cups water, salt, and a drizzle of oil in a saucepan. Bring to a simmer, then cover and cook over low heat until tender, about 12 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork. Use immediately, or spread on a rimmed baking sheet to let cool.

1 cup water
1 cup tomato puree
3/4 cup bulgur
2 tablespoons balsamic vinegar
1 garlic clove, minced
1/2 teaspoon ground cumin
1 1/2 teaspoons salt
1 1/4 teaspoons Louisiana hot sauce
4 scallions, sliced
1 cup roughly chopped tomatoes
1 cup cucumbers, peeled, seeded, and diced
3/4 cup green bell pepper, small dice
3 tablespoons chopped cilantro leaves

Steps:

  • Bring the water and 1/2 the tomato puree to a boil. Pour over the bulgur and cover for 20 minutes. Fluff with a fork. Combine remaining ingredients and toss with the bulgur. Chill for 1 hour before serving.

  • Bring the water and tomato puree to a boil in a microwave safe bowl, approximately 5 minutes on high.
  • Carefully pour the tomato mixture over the bulgur in a medium mixing bowl and cover with plastic wrap for 20 minutes.
  • After 20 minutes, fluff the bulgur with a fork. Add the balsamic vinegar, garlic, cumin, salt, hot sauce, scallions, tomatoes, cucumbers, green pepper, and cilantro, and toss with the bulgur. Add tomato juice and stir to combine. Chill for 1 hour before serving.

  • Meanwhile, make an "X" with a paring knife on the bottom of each tomato. Drop the tomatoes in the boiling water for 15 seconds, remove, and transfer to an ice bath until cool enough to handle, about 1 minute. Remove and pat dry. Peel and halve the tomatoes. Seed the tomatoes, putting the seeds and pulp in a fine mesh strainer set over a bowl in order to catch the juice. Press as much of the juice through as possible and then add enough bottled tomato juice to bring the total to 1 cup. Chop the tomato flesh.
  • Combine the tomatoes and juice in a large mixing bowl. Add the cucumber, bell pepper, red onion, jalapeño, garlic, olive oil, lime juice, balsamic vinegar, Worcestershire, salt, cumin, and pepper and stir to combine.
  • Transfer 1 1/2 cups of the mixture to a blender and puree for 15 to 20 seconds on high speed. Return the pureed mixture to the bowl and stir to combine. Cover and chill for at least 2 hours or up to overnight. Serve with thinly sliced basil.
