Grilled Buffalo Shrimp Salad image

2 lb uncooked deveined peeled large shrimp, tail shells removed
1/2 cup buffalo wing sauce
2 bags (10 oz each) torn mixed salad greens (such as romaine lettuce and radicchio)
2 medium stalks celery, sliced (1 cup)
1 1/2 cups seasoned croutons
1 cup blue cheese dressing

Steps:

  • Heat gas or charcoal grill. Thread shrimp onto eight 12-inch metal skewers. Brush with wing sauce, covering all sides of shrimp. Let stand 10 minutes to marinate.
  • Place shrimp on grill over medium heat. Cover grill; cook 5 to 7 minutes or until shrimp turn pink.
  • In large bowl, place salad greens, celery, croutons and dressing; toss gently. Divide salad among individual serving plates. Top each salad with shrimp.

2 cups all-purpose flour
2 tablespoons Creole-style seasoning
1 tablespoon garlic powder
1 tablespoon ground cayenne pepper
1 teaspoon onion powder
1 teaspoon freshly ground black pepper
1 pound large shrimp, peeled and deveined with tails attached
4 cups oil for frying
4 cloves garlic, minced
2 ½ tablespoons butter
6 ounces hot pepper sauce
1 teaspoon ground cayenne pepper

Steps:

  • In a large resealable plastic bag, combine the flour, Creole-style seasoning, garlic powder, ground cayenne pepper, onion powder, and ground black pepper. Seal the bag and shake a few times to combine the ingredients well.
  • Rinse the shrimp under cold water and place them in the plastic bag with the flour mixture. Seal the bag and shake to coat all of the shrimp well with the flour mixture.
  • Place the coated shrimp on a cookie sheet and place in the refrigerator for 15 to 20 minutes. Save remaining flour mixture in the bag.
  • In a mixing bowl, whisk together garlic, butter hot sauce and cayenne pepper; set aside. In a pot, heat the oil to 375 degrees F (190 degrees C).
  • Remove shrimp from refrigerator and shake a second time in flour mixture.
  • Place the shrimp in hot oil and fry until pink, about 2 to 3 minutes. Immediately coat with buffalo sauce.

1/4 teaspoon salt

3 tablespoons hot sauce
8 cups torn escarole
1 tablespoon lemon juice
Crumbled blue cheese

Steps:

  • Melt butter in a large skillet over medium-high. Add shrimp and salt and pepper, and saute until shrimp are opaque. Remove from heat and swirl in hot sauce. Let cool slightly, then toss with escarole and lemon juice. Season and sprinkle with cheese.

1/2 cup red pepper hot sauce (I like Frank's)
1/4 cup melted butter or ghee (optional - butter will help to coat the hot sauce)
4 cups romaine lettuce (chopped)
1 cup grape tomatoes (diced)
3/4 cup caesar dressing
croutons (to garnish (optional))

Steps:

  • Heat a medium sized non-stick skillet to medium heat. Add cooking spray of choice. Toss in raw shrimp, and add a bit of salt and pepper for seasoning. Cook in skillet 4-5 minutes, until shrimp are pink.
  • While shrimp is cooking, combine in a small bowl hot sauce and butter. Mix well. Add mixture to skillet of shrimp. Remove from heat, and let sauce coat with shrimp, 2-3 minutes.
  • To a large bowl, add lettuce, grape tomatoes, and Caesar dressing. Mix together. Top salad with shrimp, and serve with croutons, if desired.
