We turned a favorite appetizer into a zesty and comforting slow-cooker soup! Combine cream cheese, hot sauce, chicken, onion and celery in a slow cooker, then cook until creamy and tender. Stir in even more cheese and serve with garnishes of fresh celery, pepper sauce and blue cheese crumbles for a complete dish.

1 package (8 oz) cream cheese
1/3 cup Frank's™ RedHot Original cayenne pepper sauce
3 cups shredded cooked chicken
1/2 cup chopped onion
1/2 cup chopped celery
1 carton (32 oz) Progresso™ chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded Colby Jack cheese (8 oz)
Additional chopped celery and pepper sauce, and blue cheese crumbles, if desired

Steps:

  • In small microwavable bowl, microwave cream cheese uncovered on High 30 to 45 seconds or until softened. Add 1/3 cup cayenne pepper sauce; mix well using whisk.
  • In 3- to 4-quart slow cooker, mix chicken, onion, 1/2 cup celery, the chicken broth, salt and pepper. Stir in cream cheese mixture.
  • Cover; cook on Low heat setting 4 to 5 hours or until vegetables are tender. Stir in 1 1/2 cups of the shredded cheese; cover and continue cooking about 15 minutes or until cheese is melted.
  • Stir and serve with remaining 1/2 cup shredded cheese. Garnish with remaining ingredients.

I found this on the TOH site and it has quickly become a favorite of my family's. Add a salad and a warm loaf of sourdough and it's perfect comfort food! I generally make the roux and then throw everything in my crockpot to simmer for a couple of hours. I use a cup of the buffalo sauce and 8 oz of Velvetta and it turns out just right for us.

Wow this is good! Tastes just like buffalo chicken/hot wings in a creamy and filling soup! Fast and simple too! I am not usually a fan of anything with canned cream soups but when I tried this I just had to have the recipe. There are lots of recipes here on Zaar for substitutes for canned cream soup that could be used with great results. I have listed that this makes a gallon, actually it makes just shy of a gallon of soup. From TOH with tweaks from Mama.

6 cups milk
3 (10 1/2 ounce) cans cream of chicken soup (use any flavor creamed soup you like chicken, mushroom, celery, etc I use 2 chicken and 1 celery, us)
3 cups cooked chicken (I use leftover chicken from rotisserie, grilled or baked chicken)
1 cup light sour cream
1/2 cup ranch dressing or 1/2 cup blue cheese dressing
1/2 cup hot sauce, adjust to your taste

Steps:

  • Stove Top: Combine all ingredients in a large pot and cook on stove until hot and flavors have blended. Stir often to dissolve everything and to keep from scorching on the bottom. At least 30 minutes.
  • Crock Pot: Follow same directions above using crock pot. Just put everything in, stir well to combine everything and then cook on low for 4 hours.
  • Adjust hot sauce to your liking and/or serve additional sauce on the side to allow each person to adjust their own bowl.
  • Garnish with an additional dollop of sour cream, ranch or blue cheese dressing/dip and a celery stick. Would also be good with some shredded cheese on top. If you want to stretch it to feed more try serving it over a scoop of white rice.

2 tablespoon butter (unsalted)
2 medium onions (chopped)
2 stalks celery (chopped)
2 medium carrots (chopped)
3 cloves garlic (minced)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1 tablespoon all-purpose flour
2 tablespoon tomato paste
8 cups chicken broth (low sodium)
1/4 cup buffalo wing sauce
1/4 cup sour cream
1/2 cup blue cheese (crumbled)
1/4 cup blue cheese dressing
1 pound chicken thighs (boneless and skinless)
1 tablespoon cajun seasoning
2 tablespoon buffalo wing sauce
1 tablespoon fresh parsley
1/2 cup blue cheese (crumbled)
5 green onions (chopped)

Steps:

  • In a large Dutch oven or soup pot melt the butter over medium heat. Add the onions, celery, carrots, garlic and stir. Season generously with salt and pepper and cook for about 5 to 7 minutes or until the onion and carrots soften.
  • Meanwhile, season the chicken thighs with the cajun seasoning and toss together with the buffalo wing sauce, making sure each thigh is covered in cajun spice and sauce. Grill the chicken on a grill pan for about 4 minutes per side, just until you get some grill marks. The chicken doesn't have to be cooked through completely, as it will cook some more in the soup. Remove from grill pan and shred with 2 forks.
  • Sprinkle the flour over the vegetables and stir. Add tomato paste, chicken broth, wing sauce, sour cream, blue cheese, blue cheese dressing and stir well, so that the tomato paste dissolves. I use a whisk to make sure it's stirred well. Bring to a boil.
  • Add the shredded chicken to the pot and turn the heat down to a simmer. Simmer for 30 minutes.
  • To serve, garnish with parsley, top with blue cheese and green onions.

This soup is creamy and smooth with a hint of spice from the buffalo sauce. Serve it up with a dollop of sour cream and some mozzarella sprinkled on top.

¼ cup butter
3 stalks celery, diced
1 small onion, diced
¼ cup all-purpose flour
¾ cup half-and-half cream
3 cups water
1 cube chicken bouillon
2 cups cubed cooked chicken
¼ cup buffalo wing sauce, or more to taste
1 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Melt the butter in a large pot over medium-high heat; cook the celery and onion in the melted butter until tender, about 5 minutes.
