1 bag (28 ounces) steak fries, (cooked per package instructions)
3 cups rotisserie chicken, (shredded)
½ cup buffalo sauce
1 cup shredded mozzarella cheese
4 ounces cream cheese, (room temperature)
4 ounces sour cream
3 tablespoons homemade dry ranch seasoning, (or 1 1/2 (1-ounce) packages store-bought ranch seasoning)
½ cup shredded cheddar cheese
2 tablespoons buffalo sauce, (for topping)

Steps:

  • Preheat the oven to 450° F.
  • Cook steak fries according to package directions.
  • Remove fries from the oven and place in an oven-safe skillet.
  • Reduce oven temperature to 400°F.
  • In a medium bowl combine chicken, buffalo sauce, mozzarella, cream cheese, sour cream, and ranch seasoning.
  • Top the fries with the chicken mixture and the shredded cheddar cheese.
  • Bake until cheese is melted (about 10-15 minutes).
  • Remove from oven.
  • Top with buffalo sauce and more sour cream.

Nonstick cooking spray
1/2 cup all-purpose flour
Kosher salt
1/4 teaspoon cayenne pepper
2 large eggs, beaten
2 1/2 cups panko breadcrumbs (see Cook's Note)
1 pound zucchini (2 to 3 small to medium zucchini), cut into 3- inch-by-1/4-inch sticks
1/2 cup hot sauce, such as Frank's
3 tablespoons unsalted butter, cut into small pieces
1 tablespoon white vinegar
1/4 cup crumbled blue cheese
1/4 cup celery leaves
Celery and carrot sticks (optional)

Steps:

  • Adjust 2 oven racks to the top and bottom third of an oven and preheat oven to 425 degrees F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour, 1/2 teaspoon salt and cayenne in a large re-sealable plastic bag. Combine the eggs and 1/2 teaspoon salt in another large plastic bag; combine the breadcrumbs and 1/2 teaspoon salt in a third large plastic bag.
  • Add about half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumb and repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes.
  • Meanwhile, make the Buffalo sauce: Combine the hot sauce, butter and vinegar in a small saucepan and heat over medium, stirring, until all of the butter has melted and the sauce is warm. Set aside and keep warm.
  • Arrange the fries on a platter and drizzle them with the Buffalo sauce. Sprinkle the blue cheese and celery leaves over the top. Serve with celery and carrot sticks if desired.

4 large potatoes
2 tablespoons olive oil, or to taste
salt and ground black pepper to taste
1 cup Buffalo-style hot pepper sauce (such as Frank's® RedHot)
¼ cup melted butter, or to taste
¼ cup ranch salad dressing, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Cut potatoes into wedges; place on prepared baking sheet approximately 1 inch apart. Drizzle with olive oil; sprinkle salt and pepper over wedges.
  • Bake in preheated oven until golden brown and crispy, about 30 minutes.
  • Combine hot pepper sauce and melted butter in a large bowl with a tight-fitting lid. Add potatoes, cover with lid, and toss to coat evenly. Pour onto serving platter; drizzle with ranch salad dressing.

These quick, easy and delicious Buffalo Chicken Fries are sure to be a new family favourite! Crispy fries are loaded with even crispier bite-sized chicken pieces that are coated in a spicy buffalo sauce and drizzled with a spicy aioli!

2 tablespoon unsalted butter
1/2 cup hot sauce
1 recipe of my Spicy Aioli
2 boneless skinless chicken breasts, sliced into chunks
3/4 cup cornstarch, divided
1/4 cup all purpose flour
2 teaspoon baking powder
2 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cayenne pepper
2/3 cup water
Vegetable oil, for frying
2 and 1/2 pounds russet potatoes, cut into 1/4" thick sticks
2 Qt. vegetable oil for frying
Salt

Steps:

  • Peel the potatoes and slice lengthwise into 1/4-inch thick disks. Slice each disk into 1/4-inch thick sticks. If you want to keep the skin on, wash the potatoes before slicing.
  • Place all of the potato sticks into a container or large bowl filled with cold water. Set aside to soak for at least an hour or preferably overnight. If soaking overnight, cover and keep in the fridge. This removes the starch, making the fries extra crispy!
  • Drain the starch water and rinse off the fries twice with cold water. Transfer fries to a paper towel lined baking sheet and use another sheet of paper towel to pat and dry them as much as possible.
  • Pour oil into a large deep pot, heat to 300°F. You can use a thermometer or wait a few minutes, then drop a small fry in the oil to check if it starts to fry gently. If it doesn't, wait a bit longer, if it begins to pop, turn the heat down.
  • Once the oil is hot enough, grab a handful of fries (don't actually use your hands) and place them in the oil. Fry for 4-5 minutes to cook the inside, remove them from the oil if they begin to brown.
  • Place fries onto another paper towel lined baking sheet or plate while you fry the remaining batches. You'll need to work in small batches because if too many fries are added at once, the oil can bubble up and spill over, so stick with a handful at a time to be safe.
  • Once all fries are cooked, heat the oil to 400°F, then once again fry the fries in small batches until they are golden and crispy, another 3-5 minutes. Keep an eye on them, you don't want them to burn.
  • Place them on paper towels to soak up the oil, then sprinkle with some salt. There's no measurements for this, feel free to sprinkle as much or as little salt as you like.
  • In a bowl, toss the chicken chunks with 1/4 cup of cornstarch. Place the chunks of chicken on a wire rack and place in the refrigerator to rest for 15-20 minutes.
  • Meanwhile, pour your oil into a pot, clipping a frying/candy thermometer to the side of your pot (making sure it's not touching the bottom) and heat until the oil reaches 350°F.
  • In a medium bowl, combine the remaining 1/2 cup of cornstarch, flour, baking powder, salt, black pepper, garlic powder, paprika, cayenne and water.
  • Remove chicken from refrigerator and dip in the cornstarch batter, then place in the oil. Fry in batches until brown and crispy, about 4-7 minutes.
  • Remove from oil and place on a paper towel lined plate to drain the excess oil.
  • Heat the butter and hot sauce in a heat safe bowl in the microwave in 30 second intervals until butter is melted. Stir until smooth.
  • Pour buffalo sauce over the chicken and toss to completely coat the chicken.
  • Transfer fries to a serving plate and place chicken pieces on top. Serve with my Spicy Aioli recipe, if desired. Enjoy!

1 (28-ounce) bag frozen french fries
1 (24-ounce) bag frozen boneless buffalo chicken bites
1 (8-ounce) package shredded mozzarella cheese
1/3 cup ranch dressing

Steps:

  • Cook the french fries and chicken bites according to the package instructions.
  • Coarsely chop the chicken bites.
  • Spread the french fries on an oven-safe platter. Sprinkle with about half of the cheese. Top with the chopped chicken bites. Then sprinkle with the remaining cheese. Return to the oven at 350°F for about 5 minutes or until the cheese melts.
  • Drizzle with the ranch dressing and serve.

CRISPY BUFFALO OVEN FRIES



Crispy Buffalo Oven Fries image

3 pounds unpeeled russet potatoes, (cut into wedges)
3 tablespoons vegetable, (grapeseed or canola oil)
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic powder
1 cup buffalo wing sauce
2 tablespoons butter
4 ounces freshly grated sharp cheddar cheese
4 ounces crumbled gorgonzola or your favorite blue
4 green onions, (sliced)
4 chives, (chopped)
1/4 cup freshly torn cilantro

Steps:

  • Preheat oven to 450 degrees F.
  • Place cut potatoes in a large stock pot and cover with cold water. Bring to a boil and once bubbling, only boil for 5 minutes. You gotta keep an eye on it! After 5 minutes, drain potatoes. Place in a large bowl and drizzle with oil, salt, pepper and garlic powder. Gently toss with your hands or two spatulas to evenly coat. Spread on a baking sheet in one layer. Roast for 25-30 minutes, then flip and roast for 25-30 minutes more. You want the potatoes to be deeply golden and crunchy on the outsides!
  • While potatoes are cooking, heat buffalo wing sauce and butter in a small saucepan over low heat until combined.
  • Remove potatoes from the oven and switch on your broiler to the highest setting. I left my oven rack in the center of the oven. Drizzle a bit of wing sauce over the potatoes and sprinkle both cheeses evenly overtop. Place under the broiler for 2-3 minutes, until cheese is bubbly and golden. Remove immediately and sprinkle with scallions, chives and chopped cilantro. Dig in!

This recipe is based on one from Paula Deen on the Food Network website. These fries were spicy, but nowhere nearly as hot as I thought they would be. Very, very good served with Ranch dip made with extra garlic. I've made this using both french fries and Tater Tots. Both were outstanding! Beware, this recipe is NOT low fat!

2 tablespoons margarine
1 tablespoon hot sauce (I use Frank's)
1/4-1/2 teaspoon garlic, finely minced
salt (I use seasoned salt)

Steps:

  • Bake fries as directed on the package. Should be somewhere around 450° for 15 minutes.
  • Put margarine, hot sauce, and garlic in a small bowl. Microwave on high for 30 seconds, until margarine is melted.
  • Put fries in a large, sealable bowl.
  • Pour sauce over fries, seal bowl and shake very, very gently until fries are coated. Sprinkle desired amount of salt over fries.

This is my version of the Buffalo Fries served at the Tommyknocker Brewery in Idaho Springs, CO. They are sooo good! This recipe can easily be doubled or scaled down for one. I like my fries drenched in the hot sauce and blue cheese, by all means don't add as much as is called for if you prefer. Enjoy!

15 ounces ore ida country style frozen french fries (or your favorite frozen french fries)
1/2 cup hot sauce (I use Lousiana brand hot sauce)
1/4 cup butter
1 tablespoon white vinegar
3 ounces blue cheese
1/2 cup ranch dressing (for dipping)

Steps:

  • Bake french fries according to package directions.
  • In a small saucepan combine hot sauce, vinegar and butter on med. heat until butter is melted and well combined.
  • When fries are done, transfer to platter and drizzle with hot sauce.
  • Crumble blue cheese all over fries and pop back in the oven for a second so the cheese can melt just slightly and stick to the fries.
  • Serve with Ranch dressing for dipping if desired.
