GRILLED FLANK STEAK WITH BUFFALO BLUE CHEESE BUTTER
Flank steak is marinated, then grilled to perfection and topped with an herbed Buffalo and blue cheese spread, for an easy but elegant beef dinner.

Steps:
- Score flank steak on both sides; set aside. In a small bowl, whisk together soy sauce, oil, ketchup, garlic, oregano, pepper, and onion.
- Place steak in a zip top bag or shallow baking dish. Pour soy sauce mixture over top. Cover or seal and refrigerate for at least 8 hours, or overnight.
- Preheat grill to medium high. Remove steak from marinade and grill for 3-4 minutes per side for medium rare. Transfer to a cutting board and let rest for about 5 minutes.
- Meanwhile, combine ingredients for Buffalo blue cheese butter in a small bowl. Mix well.
- Thinly slice flank steak and top with Buffalo blue cheese butter.

GRILLED BUFFALO STEAK
This grilled buffalo steak is simple to make and is just as hearty and flavorful as (but much leaner than) beef.

Steps:
- Gather the ingredients.
- Place steaks in a resealable plastic bag. Combine remaining ingredients and pour over steaks. Seal bag and allow steaks to marinate in the refrigerator for 4 to 8 hours.
- Preheat grill for medium heat. Remove steaks from bag and discard marinade. Place steaks on the grill and cook for 6 minutes per side.
- Remove from heat, tent with aluminum foil, and let steaks rest for 10 minutes before serving.
- To prepare onion sauce, heat olive oil in a large skillet. Cook onions on high for 1 minute.
- Add red wine, reduce heat to medium and cook for 2 to 3 minutes.
- Add remaining ingredients and cook for an additional 5 to 6 minutes. Reduce heat to medium-low or low if necessary.
- Once cooked, remove from heat and serve on top of buffalo steaks.
- Enjoy!

- Melt the butter in a heavy frying pan.
- Dust the steak with flour and brown well.
- Add enough boiling water to just cover the meat.
- Cover and cook very slowly, until the meat is fork tender.
- Remove to a warm platter, season with salt and pepper.
- Sprinkle with parsley.
- Cut in thin slanted slices against the grain of the meat to improve tenderness of the slices.
- Variation: After browning the flank steak, remove to a baking dish and bake in a slow oven (300 F.) for 1 1/2 hours or until meat is tender.
- Watch carefully that it does not become dry.

BUFFALO FLANK STEAK
Steps:
- Mix all marinade ingredients. Marinate flank steak for four to six hours, refrigerated.
- Place buffalo flank on hot grill and cook to medium rare.
- In a medium saute pan over medium heat add oil and saute the peppers and onions. Keep warm and set aside. Place flour tortillas on the grill and heat until warm. Fold the tortillas and lay them on the plate. Place the meat just off the side and top with the sauteed peppers. Place one tablespoon of the Goat Cheese Guacamole on top of the flank steak.
- Puree all ingredients in food processor.

- Place the steaks in a shallow glass or steel container. Place the thyme branches on top and a cracked garlic clove on each steak. Cover with the marinade. Rub in on both sides until well coated. Cover and hold in the refrigerator for at least one hour, up to 4 hours. Allow to sit at room temperature for 15 minutes prior to cooking.
