Buffalo Chicken Wings With Chunky Gorgonzola Cheese Dip

Steps:
- For at least 30 minutes or up to overnight : Toss chicken wings with the salt.
- Cover and refrigerate overnight, or let sit at room temperature for 30 minutes. Rinse in cold water and pat very dry.
- Combine butter and hot sauce in saucepan over medium low heat. Whisking to combine. Keep warm.
- Set up a deep pot for frying, about 2 inches deep. Heat oil to 375 - 380°F (190 - 193°C). Fry wings in batches until cooked through and crisp, 5 - 7 minutes.
- Remove with wire strainer to a bowl, toss with hot sauce as needed.
- For the Gorgonzola (or Blue) Cheese Dip : Whisk all dip ingredients together in a bowl and serve with wings.
THE ORIGINAL BUFFALO CHICKEN WINGS
SOURCE THE FRUGAL GOURMET . According to Jeff Smith ( The Frugal Gourmet) this is the way these wings were orginally prepared in Buffalo. This recipe also includes the famous dipping sauce.

Steps:
- Mix the wine vinegar with the milk, and allow the milk to curdle.
- Add the yellow onion, garlic, parsley, mayonnaise, blue cheese, lemon juice, salt, pepper, and cayenne.
- Mix well.
- Refrigerate before serving.
- In a large skillet melt the butter over low heat, and stir in the hot sauce.
- Add more or less to taste.
- Deep fry the wing pieces in small batches in peanut oil at 385f for about 10 minutes, or until browned and crisp.
- Drain on paper towels ( if you wish to avoid the fat, bake the wings in a 400f oven for 25 minutes).
- When all the wings have been fried, reheat the skillet containing the hot sauce, and toss the wings about in the sauce.
- Serve with the dressing for a dip and celery sticks on the side.

This recipe doesn't make my wings crispy, like I like them, but they are very flavorful, and you know...not fried. I did double the bake time for mine. This recipe is from Ina Garten's book Barefood Contessa Family Style.

Steps:
- Preheat Broiler.
- Cut chicken wings in thirds, cutting between the bones. Discard wing tips. Melt butter and add cayenne, hot sauce and 1 teaspoons kosher salt. Put wings on sheet pan and brush with melted butter mixture. Broil about 3 inches below heat source for 8 minutes. Turn wings, brush with butter, and broil 4 more minutes, or until cooked.
- For dip: Place blue cheese, mayo, sour cream, milk, worchestershire, salt and pepper in bowl of food processor fitted with steel blade. Process til smooth.
- Serve the chicken wings hot or at room temp with blue cheese dip and celery sticks.

- Please consider including the tips in your dish, otherwise, please put them in the freezer and save them for stock. Put all the parts into a large bowl, add the brining ingredients, turn all around so all the pieces can get covered, and refrigerate for about an hour.
- While the chicken is brining, make the dressing. Combine all the dressing ingredients together in a bowl and mix well. I usually make mine in a small food processor so it gets very creamy. Put the dressing in its serving bowl, and refrigerate it until time to serve.
