Buffalo Chicken Bites with Blue Cheese Dip image

Buffalo Chicken Bites with Blue Cheese Dip are the perfect appetizer for Super Bowl Sunday! These mini pastries are a delicious football snack for all buffalo chicken lovers! Especially for those of you who prefer to enjoy spicy buffalo chicken with homemade blue cheese dip.

1 cup cooked chicken breasts- small diced
¼ cup shredded Cheddar cheese
4 oz. cream cheese-softened
¼ cup hot sauce
2 slices of bacon-cooked and crumbled
¼ cup butter-melted and slightly cooled
¼-½ tsp. garlic powder (to taste)
salt to taste
1 cup warm milk
2 Tbsp. brown sugar
2 ½-3 cups all-purpose flour
7 oz. envelope instant dry yeast (2 ¼ tsp.)
4 Tbsp. melted butter
Kosher salt
½ cup sour cream
½ cup mayonnaise
2.5 oz. (½ cup) Blue cheese-crumbled
1 ½ Tbsp. lemon juice
Salt and freshly ground black pepper to taste
Sliced green onion for garnish

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, place warm milk and sugar, stir with a spoon to dissolve.
  • Add 2 ½ cups flour and dry yeast, then mix on low speed until a soft dough forms. Add a little more flour at the time if needed. Kneed 5-6 minutes.
  • Transfer the dough onto lightly floured surface and knead a few times with your hands to form a ball. Then transfer the dough into a bowl lightly greased with vegetable oil. Cover the bowl with plastic wrap and set aside on a warm place up to 2 hours or until the dough doubled in size and bubbles appear on the surface.
  • While you are waiting the dough to raise, prepare the filling and Blue cheese dressing.
  • In a bowl combine all filing ingredients (diced chicken, cream cheese, shredded Cheddar cheese, Hot sauce, crumbled bacon, melted butter, garlic powder and salt). Then stir well until evenly combined, set aside.
  • In a bowl combine crumbled blue cheese, mayonnaise, sour cream, lemon juice, salt and pepper. Stir well. Store in the fridge until serving. Garnish with sliced green onion when ready to serve.
  • Line large baking sheets with parchment paper.
  • Transfer the dough on a floured surface and cut in 4 equal pieces.
  • Knead each piece a few times, then roll with your hands to make about 12 inches long rope. Then using a rolling pin dusted with flour, roll out each rope in a 12 x 4 inches rectangle with the long side facing you.
  • Spread ¼ of the filling into the bottom third of each rectangle, then roll as tightly as possible, starting with the end that has the filling.
  • Cut each log in 12 1-inch pieces and arrange on baking sheets leaving 2 inches apart. Let it sit for about 20-30 minutes to rise.
  • Meanwhile, preheat oven to 375 F and place the rack in the middle position.
  • Brush each roll with melted butter and sprinkle with kosher salt.
  • Bake 10-12 minutes, until golden brown. Serve warm with Blue Cheese Dip and enjoy!

1 egg white
1/3 cup Frank's™ RedHot™ Buffalo Wings Sauce
1 lb boneless skinless chicken breasts, cut into 40 (1-inch) pieces
3/4 cup Original Bisquick™ mix
3 tablespoons cornmeal
1 teaspoon salt
1/2 teaspoon pepper
Vegetable oil
3/4 cup crumbled blue cheese (3 oz)
6 tablespoons sour cream
6 tablespoons light mayonnaise
3 tablespoons milk

Steps:

  • In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.
  • Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, place Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove 1/4 of chicken pieces from bowl and add to bag; seal bag and shake to coat. Repeat with remaining chicken pieces. Tap off excess Bisquick mixture and place chicken on cookie sheet.
  • In small bowl, mix dipping sauce ingredients until well combined. Cover; refrigerate until serving time.
  • In 10-inch nonstick skillet, heat oil (1/4 inch) over medium-high heat 2 to 4 minutes. Cook chicken bites in oil in batches, about 1/3 at a time, 3 to 4 minutes, turning once, until golden brown. Drain on paper towels. Serve chicken with dipping sauce.

These are simple, delicious and pefect for Super Bowl Sunday or any party! My family and friends always rave about them, sometimes I have to make an extra batch because they go so fast. You don't have to use a rotisserie chicken, but it sure cuts back on the time. If you don't like things too spicy, you can always cut back on the hot sauce and green onions.I like to use peanut oil for frying. They freeze well too. Making the dip ahead of time, then placing in fridge, allows the flavors to marry well. Bring it back to room temp to serve. This is adapted from a Food Network Show, Big Daddy's House. 1 store-bought rotisserie-cooked chicken
1/4 cup hot sauce (recommended Frank's Red Hot)
1 teaspoon ground black pepper
1 3/4 cups sharp cheddar cheese, grated
1/2 cup thinly sliced green onion, green tops as well
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups panko breadcrumbs
vegetable oil, for frying
1 1/2 cups mayonnaise
1/2 cup packed blue cheese, crumbled
1/2 teaspoon hot sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 lemon, juiced
1 teaspoon minced garlic

Steps:

  • Have oil heated to 350 degrees F.
  • Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
  • Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
  • When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Drain on paper towels.
  • To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

4 boneless skinless chicken breasts
16 ounces cream cheese (light is fine, but not fat free)
1 (12 ounce) bottle blue cheese dressing
1/2-3/4 cup hot sauce
8 ounces sharp cheddar cheese

Steps:

  • Boil in a large sauce pan enough water to cook the chicken breasts.
  • Then, boil the chicken until its cooked through, about 15 minutes.
  • Remove the chicken, pat dry, and shred with a fork.
  • Then place the shredded chicken in a large baking dish.
  • For a tailgate, I usually use 2 of those disposable 8 by 8 aluminum pans, or one large lasagna-size one.
  • Pour your desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
  • Set this dish in the refrigerator to let the chicken absorb the flavor.
  • Preheat your oven to 350.
  • Next, over medium heat in a large pan, melt the cream cheese.
  • Pour in the blue cheese dressing and stir until they are completely combined.
  • Pour this mixture over the chicken.
  • Bake for 10 minutes.
  • Remove, but don't turn the oven off.
  • Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
  • Serve hot or cold with chips!
