BUFFALO BURGERS
Ground buffalo (bison) is a great choice for delicious burgers. The lean meat and rich flavors create burgers with some extra zip that helps them stand out from regular burgers. The secret to this burger recipe is using a little Worcestershire and BBQ sauce to add moisture that holds the ground meat together while deepening the burgers' flavor.

Steps:
- Finely mince the onion and garlic. Place the ground buffalo in a bowl with the onion, garlic, smoked paprika, salt, and pepper. Mix in the Worcestershire and BBQ sauces.
- Use your hands to mix everything as if you're giving someone you like a good back rub, making sure the seasoning gets spread evenly through the ground bison.
- To form the burgers, split the mixture into equal parts and use your hands to form patties, working the meat until the patties hold together.
- Using your thumbs create a small depression in the top of the burgers; this will help them keep their shape on the grill.
- Grill the burgers on a medium to medium-high grill for 5 to 6 minutes, flip and cook for another five to six minutes or until the burgers have the desired level of doneness.

BUFFALO SAUCE BURGERS STUFFED WITH BLUE CHEESE
Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

Steps:
- Melt butter and whisk in hot sauce.
- Mix blue cheese and garlic in a small bowl.
- Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
- Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
- Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
- Heat grill to medium and oil grate.
- Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
- (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).

- Homemade Pickles. It doesn’t get much more classic than adding pickles to your burger. So, why not try making your own homemade pickles? Allow sliced cucumbers to sit in salt for 30-40 minutes.
- Caramelized Onions. If you’re looking for a sweet, rich addition to your burger, these caramelized onions are a winner every time. Simply add butter to a pan, add chopped onions, and cook on a low heat until they become soft.
- Bacon. It’s rare to find a burger that doesn’t work well with bacon, and it’s easy to see why! Adding good quality smoked bacon that has been fried until it is almost crispy is an excellent addition to your burger.
- Cheese. There’s no denying that cheese is the ultimate topping when it comes to making your own burgers at home. You just can’t beat the humble cheeseburger!
- Lettuce. Many would argue that a burger isn’t a burger without fresh, crunchy lettuce. Lettuce can really lift a dense and meaty burger, adding another layer of texture and a delicious, refreshing crunch as you bite through.
- Condiments. When it comes to choosing the sauce for your burger, you can’t beat a good homemade burger sauce. This sauce contains mayo, ketchup, pickle juice, mustard, onion powder, sugar, and salt.
- Jalapeño Chili. If you’re looking for a burger with a kick of spice, then why not try topping your burger with jalapeños. Adding some chopped jalapeños to your burger works to cut through the heavy meats and cheeses.
- Tomato. A tomato can be a controversial ingredient to add to a burger depending on your preferences, but I absolutely love them as a burger topping. You’d be surprised how much of a difference adding a slice of tomato makes!
- Coleslaw. A barbeque isn’t complete without a bowl of homemade coleslaw, and it couldn’t be more delicious as a topping for your burger! While you can buy coleslaw at the store, this homemade recipe takes it to the next level!
- Fried Egg. You might associate fried egg with breakfast dishes, but adding a fried egg to your burger is an absolute game changer! Simply drizzle some olive oil into a pan and fry the egg until the whites are firm but the yolk is still runny.

- Whisk together the dry ingredients. In the measuring cup, or a separate bowl, whisk together the broth and Worcestershire. Mix the wet into the dry using a heavy spoon or a stand mixer. Mix until no dry ingredients remain and the dough is even in color.
- Divide dough into 8 equal portions (could divide more if you want smaller patties). Roll the divided dough into balls and flatten to be about 1/4" thick or 4" in diameter. Place 4 patties on a baking sheet, spray the top of the patty with cooking oil, and cover the baking sheet with aluminium foil. The foil is necessary. It is best if you wrap the foil over the sheet so that it isn't directly in contact with the patties. Repeat with the remaining 4 patties.

- Heat a large skillet over medium heat. Add 2 tablespoons butter. Once butter is melted, add sliced onions. Cook, stirring occasionally for 15 to 20 minutes until the onions are softened and turning a golden brown color. (You don't want to sear the onions, but cook them slowly.)
- To a medium mixing bowl add ground beef, salt, pepper, onion powder, and paprika. Use your hands to mix the beef and spices until evenly combined. Divide the beef in half and form each portion into a patty.
- Cook burger patties for 4 to 5 minutes per side, turning once, until medium in the center. (Or cook to your preferred doneness.) Remove burgers from heat and top each burger with half of the blue cheese.
