This is a tried and true roast recipe that I have enjoyed since my childhood!

2.5 lb beef roast
5 potatoes (peeled and sliced into wedges)
1 bag of baby carrots
2 medium onions (halved)
2 pkgs brown gravy mix
2 cups water

Steps:

  • Spray your crock pot with cooking spray
  • Place your roast in your 6- quart crock pot (I used my Hamilton Beach Programmable Insulated Slow Cooker.)
  • Surround your roast with your potato wedges, onion halves and carrots
  • Mix together one of your brown gravy mixes with 1 c cold water
  • Pour over your roast and veggies
  • Cover and cook on low for 8-10 hours (total)
  • An hour before serving, mix together your remaining brown gravy mix and 1 c cold water
  • Pour over roast and veggies
  • Cover again for the last hour of cooking.

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

1 medium sweet white onion, diced
1 c mushrooms, sliced
1 c carrots, cut up
2 Tbsp au jus base
2 Tbsp worcestershire sauce
2 Tbsp lawry's seasoning
3-4 can(s) budweiser

Steps:

  • 1. Place potatoes in pot first, then carrots, mushrooms and 3/4 of the onion.
  • 2. Lay roast on top and season with worcestershire sauce, lawry's seasoning, salt & pepper to taste. Top roast with the rest of the onion. Add au jus base around the roast in pot. Add 3-4 cans beer to cover roast. Cook on low for 8 hours

1 (2 1/2 pound) boneless beef chuck roast
1 pinch salt and ground black pepper to taste
1 (1.2 ounce) package dry beef gravy mix
1 (1 ounce) package ranch dressing mix
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup water, or as needed
5 whole peeled carrots

Steps:

  • Spray the inside of a slow cooker with cooking spray. Spread the onion slices out into the bottom of the cooker.
  • Spread the flour out onto a work surface. Sprinkle the chuck roast with salt and black pepper, and roll the roast in the flour to coat all sides. Using the edge of a small, sturdy plate, pound the flour into the meat. Place the floured roast into the cooker on top of the onions. Whisk together beef gravy mix, ranch dressing mix, and Italian dressing mix in a bowl, and whisk the mixes with water until smooth. Pour over the chuck roast. Distribute carrots around the meat.
  • Cover the cooker, set to Low, and cook until the roast is tender and the gravy has thickened, about 8 hours.

Steps:

Steps:

  • Place roast, one large onion, a few carrots, a package of italian seasoning, 1 can of cream of mushroom soup and garlic into your crockpot.
  • Cook on low for 6-8 hours or until the meat can easily be shredded with a couple forks and the internal tempreture of the meat reaches 190-195 degrees F.
  • Drain drippings off the meat into a sauce pan and shred the beef. Keep the beef warm till ready to serve. (you can put it in a baking dish, cover with foil and place in a warm oven until ready to serve.)
  • Make gravy with the drippings or simply drizzle the drippings onto the cooked beef to keep it juicy. Enjoy!
  • Remove the carrots from the slow cooker, set aside. Take the onions out with a fork or strain the drippings. You can p(ut a strainer over a large pot big enough for your gravy.) Pour the drippings in the saucepan or large pot. (You can also blend up a few chunks of onion and the garlic cloves in a blender, if derired)
  • In a large saucepan on the stove, on medium heat, bring the drippings to a low boil.
  • Taste your drippings. If it's a little too sweet, you need to add a little salt and/or beef broth. If it doesn't have enough flavor, add some beef broth. Onion powder is great to add sweetness,and garlic works to add a little tang and richness.
  • To thicken gravy, in a small bowl, add a 2-3 of Tablespoons of Cornstarch to a couple of Tablespoons of cold water. Stir until combined.
  • Heat the gravy to a low simmer and slowly add the cornstarch. Stir with a wire whisk until the gravy coats the back of a spoon. (Serve over mashed potatoes or rice)
  • If you over-thicken the gravy- add beef broth. If your gravy needs to be thicker, add more of the cornstarch and cold water mixture.

  • Deglaze. Add a splash of the beer to the pan and use it to scrape any browned bits off the bottom. Add all the pan juices to the crock pot.

  • Add liquids. Pour the beer and beef broth over all. Cook on low for 8 hours or on high for 4 hours.
  • Heat excess juices over medium heat in sauce pan along with 1 cup beef broth.
  • In a small measuring cup mix 2 tablespoons cornstarch with 1/4 cup water until smooth.

  • Gather the ingredients.
  • Sprinkle the pot roast lightly with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat and sear the pot roast on all sides.
  • Add the onions and continue cooking until onions are just beginning to brown.
  • Put the potatoes, carrots, and garlic in the slow cooker. Add the browned roast and the onions, along with the thyme sprigs or dried thyme.
  • Combine the beef broth with the Worcestershire sauce and pour over the roast and vegetables.

1 pot roast, lean boneless beef chuck (about 4 pounds)

3 tablespoons all-purpose flour
1 large onion (about 1 1/2 to 2 cups, chopped)
3 tablespoons red wine vinegar
2 cloves garlic (minced)
1 1/2 cups (12 ounces) beer
1 1/2 cups low sodium or unsalted beef broth
1 bay leaf
1/2 teaspoon dried rubbed sage
1/4 teaspoon dried leaf thyme
3 carrots (cut in 1/2- to 1-inch pieces)
1 small rutabaga (cut in 1/2- to 1-inch chunks)
1 1/2 pounds potatoes (cut in 1/2-inch chunks)
Optional: 1/2 cup cold water

Steps:

  • Gather the ingredients.
  • In a large skillet or sauté pan, cook the bacon until almost crisp.
  • Sprinkle the roast with salt and pepper, then dip all sides in (3 tablespoons) of flour to coat lightly.
  • Remove the bacon from the skillet and set aside. Add the beef roast and brown, turning to brown all sides. Remove the pot roast and set aside.
  • Add onions to the skillet and cook until browned. Add the garlic cook for 1 minute longer. Add the red wine vinegar, beer, beef broth, bay leaf, sage, and thyme; bring to a simmer. Remove from the heat.
  • Place the roast in the slow cooker ; arrange the potatoes, carrots, and mushrooms around the roast. Top with the bacon and pour the onion and broth mixture over all.
  • Cover and cook on low for 7 to 9 hours, until the roast is tender and the vegetables can be easily pierced with a fork.
  • To make a gravy with the liquids, remove the roast and vegetables to a serving dish and keep warm.
  • Pour 3 cups of the liquids in a saucepan. Bring to a boil. Simmer for about 3 to 5 minutes to reduce slightly and concentrate the flavors.
  • Whisk 3 tablespoons of flour into 1/2 cup of cold water. Whisk the flour mixture into the simmering broth. Cook, whisking, for about 1 minute. Taste and season with salt and pepper,
