HOMEMADE CEREAL
My mother-in-law has made this wonderful granola cereal recipe for years. It's so flexible, and so much cheaper (and better) than the store-bought granola.

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- In a large bowl, mix oats, wheat germ, and wheat bran.
- In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.
- Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.

BUDGET-FRIENDLY HOMEMADE CEREAL
With the ever increasing price of store-bought cereal, I decided it was time to come up with a homemade one. You may want to add nuts or dried fruits also. Store it in an airtight container. (I keep it in the cardboard oats canister in a zip-tied bag.)

Steps:
- Heat oven to 350 degrees and spray 10x15 jelly roll pan with butter-flavor Pam. (I also spray both bowls and the spatula I use to mix the cereal, then nothing sticks and clean up is easy.).
- In a small bowl, mix together oil, syrup, honey, vanilla, cinnamon and salt. Pour over oats in a large bowl and mix thoroughly.
- Spread evenly in the pan, and bake for 10 minutes, stir and bake 9 more minutes. (If you use a dark pan, shorten cooking time by 1 or 2 minutes.).

HOMEMADE GRANOLA
Homemade Granola is delicious, easy, and so economical to make! The recipe makes 16 servings and costs just $7.18 to make, that's only $0.40 per serving!

- Move oven rack to middle position and preheat to 325 degrees F. Line a rimmed baking sheet with parchment paper or a silicone baking mat; set aside.
- If you have coconut oil that has solidified (is solid), then place coconut oil in a microwave-safe bowl and cook for 30-60 seconds on high until liquid.
- In a big bowl mix all of the ingredients together.
- Transfer granola mixture to the prepared baking sheet.
- Bake for 30-40, stirring every 10 minutes. It's done when a little more than half the granola is golden.
- Let it cool completely before removing from the pan. Store in an air-tight container.

- Preheat oven to 300 degrees. Coat a 9x13 inch baking pan with cooking spray. Add the oats, wheat germ and pecans stirring to mix well. Spread evenly in the pan. Cook until the mixture is lightly browned, about 25 minutes, stirring halfway through cooking time.
- Stir together the apple juice concentrate, brown sugar and oil. Pour over oat mixture and stir to combine. Spread evenly in pan and return to oven. Bake until oats are crisp, about 30 minutes, stirring halfway through cooking.
- Let cool in pan. Toss with dried fruit. May be stored up to one month in the refrigerator in an air-tight container.
