Number Of Ingredients 7

1 stalk celery
1 small green pepper
4 -5 fresh mushrooms
1 can mushroom soup
1 can flakes ham or 1 can turkey
1 3/4 cups water
3 1/2 cups Minute Rice

Steps:

  • Dice and saute veggies in a small amount of oil in a small frying pan.
  • In a medium size saucepan bring mushroom soup and one can of water to a boil.
  • Remove from heat imediately and using the soup can add two cans of minute rice to soup and water mixture.
  • Stir well and cover.
  • Let stand approximately 5 minutes.
  • Meanwhile in a glass casserole dish flake (mash) the flakes of ham.
  • Add veggies at this time to casserole dish.
  • Add soup and rice mixture to casserole dish after time has elapsed.
  • Stir everything together and microwave for 8 minutes on high.

My kids like this casserole, they help make it. It's a money saver and I make this often. You can sprinkle your favorite cheese on top the last 1/2 hour of baking. This can be doubled for a potluck dinner.

1 lb ground beef
1/2 cup uncooked rice
3 large onions, sliced
2 teaspoons salt
1 large green pepper, chopped
1 -2 teaspoon chili powder
1 (16 ounce) can tomatoes
1/8 teaspoon pepper

Steps:

  • Heat oven to 350 degrees.
  • In large skillet, cook and stir meat, onion and green pepper until meat is brown and vegetables are tender.
  • Drain off fat.
  • Stir in tomatoes, rice, salt, chili powder and pepper; heat through.
  • Pour into ungreased 2-quart casserole.
  • Cover bake 1 hour.
