STRAWBERRY ICE CREAM CAKE | BUDDY VALASTRO



Strawberry Ice Cream Cake | Buddy Valastro image

This strawberry ice cream cake by "Cake Boss" Buddy Valastro is layered with yellow cake mix, strawberry jam and cream cheese frosting.

Provided by Buddy Valastro

Number Of Ingredients 7

1 box yellow cake mix
1/3 cup strawberry jam
1/2 gallon strawberry ice cream
softened
1 can cream cheese frosting
Strawberries
for garnish

Steps:

  • Prepare batter according to package directions
  • Pour into two round cake pans and drop a few tablespoons of jam on top
  • With a butter knife, swirl the jam into the cake
  • Bake according to package directions
  • remove from oven and let cool
  • Line another cake pan with plastic wrap and fill it with ice cream
  • Place into the freezer to harden
  • To assemble the cake
  • slice each cake in half through the middle
  • Remove the ice cream from plastic wrap and slice it in half
  • Build the cake by layering cake and then ice cream
  • With the extra fourth layer of cake, crumble it into a bowl and reserve
  • Frost cake with cream cheese frosting
  • Coat the sides of the cake with the crumbled pieces of cake and garnish the top with strawberries

Instead of rum or brandy, this uses maple syrup for an extra boost in flavor. Buddy might put it on spaghetti, but I wouldn't advise it.

4 each eggs, separated
½ cup white sugar
2 tablespoons maple syrup
2 ¼ cups mascarpone cheese

Steps:

  • Whisk egg whites in a stand mixer fitted with a wire whisk attachment until soft peaks form. Set aside in another bowl.
  • Beat egg yolks and sugar together in the bowl using the paddle attachment until smooth and pale. Add maple syrup and beat until fully combined. Slowly mix in mascarpone cheese. Fold in egg whites.
  • Keep in the refrigerator for up to 48 hours, loosely covered with plastic wrap. Cream may begin to separate after 24 hours. Gently stir before serving.
