Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. BUCKEYES I
This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

- Mix together peanut butter, butter and vanilla in a medium-sized bowl with an electric mixer. Gradually add in 1 cup powdered sugar and mix until well combined. Add the last 1/2-3/4 cup powdered sugar and mix with your hands until all the sugar is gone. It should be a thick consistency. Add more powdered sugar if it's too sticky.
