CITRUS WHEAT BERRY SALAD

- In a large saucepan combine broth and wheat berries. Bring to boiling; reduce heat. Simmer, covered, 1 hour or until tender. Drain and cool. Cover and chill 2 hours.
- In an extra-large bowl combine wheat berries and next six ingredients (through parsley). For dressing, in a small bowl whisk together remaining ingredients.
- Pour dressing over wheat berry mixture; toss to coat. Top with additional parsley.

Give a good stir and taste for balance, adding more lemon or grapefruit if the drink is too sweet, more Lillet or blood orange if you want more sweetness. Strain or scoop into cups and serve with ice or without. For extra sparkle, top off glasses with an extra pour of prosecco.
