BRUSSELS SPROUTS WITH GARLIC AND BACON
Steps:
- Fill a large saucepan with water, add a pinch of salt, and bring to a boil. Add the Brussels sprouts and cook them for about 8 minutes. Remove the sprouts from the heat, drain, and then chill them in the refrigerator. Slice the sprouts in half when they have cooled.
- In a large skillet, cook the bacon over medium heat until it is done. Discard all but 2 tablespoons bacon fat and grease from the pan, leaving the 2 tablespoons in the pan. Add the garlic and cook for a few minutes over medium-low heat until fragrant. Add the sprouts and cook until heated through. Season the sprouts with kosher salt and fresh black pepper, to taste.

Steps:
- Trim stems and any yellow leaves from Brussels sprouts.
- Cut each sprout vertically into quarters; set aside.
- In 12-inch skillet, cook bacon over medium heat until browned, stirring frequently.
- With slotted spoon, transfer bacon pieces to paper towels to drain; reserve bacon fat.
- If necessary, add vegetable oil to bacon fat in skillet to equal 2 tablespoons total fat; heat over medium heat until hot.
- Add onion and cook until tender and lightly browned, 8 to 10 minutes, stirring occasionally.
- Increase heat to medium-high; add Brussels sprouts and 1/4 cup water, and cook 6 to 8 minutes, until sprouts are browned, stirring occasionally.
- Reduce heat to medium-low; add frozen peas, salt, pepper, and 1/4 cup water, and cook, covered, 12 minutes or until sprouts are tender.
- Stir in bacon.

- Wash and trim Brussels sprouts.
- With tip of knife, cut an X in base of each.
- Place Brussels sprouts in large saucepan; add just enough water to cover. Add salt. Bring to a boil over high heat.
- Reduce heat; simmer 8 to 10 minutes or until tender.
- Meanwhile, cook bacon until crisp in medium skillet.
- Remove bacon from skillet. Reserve 2 tablespoons bacon drippings in skillet; cool.
- Add flour to cooled drippings; cook and stir over medium-low heat until bubbly. Remove from heat.
- In small bowl, combine brown sugar, water, vinegar and mustard; mix well.
- Gradually stir into bacon drippings mixture.
- Drain Brussels sprouts; place in serving bowl.
- Add hot bacon dressing mixture; toss gently.
- Crumble bacon over Brussels sprouts.
- Sprinkle with pecans.
- If desired, add salt to taste.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place bacon in a large oven-proof skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on paper towels.
- Add Brussels sprouts to the same skillet. Cook over medium-high heat for 1 to 2 minutes.
- Transfer skillet to the preheated oven. Bake until Brussels sprouts soften, about 20 minutes. Remove skillet carefully from the oven and stir in bacon. Continue baking until crispy, about 10 minutes more.

This is a friend's recipe and after making it last night, I can't wait to share it and put it into the usual dinner rotation. A very flavorful dish that pleased the whole "family" of roommates!

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Toss bread cubes with olive oil, garlic powder, salt, and pepper. Spread in an even layer onto one of the prepared baking sheets.
- Bake in the preheated oven until crunchy, 15 to 20 minutes.
- While the croutons are baking, cut bottoms off Brussels sprouts and discard. Cut Brussels sprouts in half, then slice each half into shreds. Toss shredded Brussels sprouts in olive oil and season with salt and pepper. Transfer to the second prepared baking sheet.
- Remove croutons from the oven. Place Brussels sprouts in the oven and roast until wilted, 10 to 15 minutes.
- While Brussels sprouts are roasting, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Remove bacon to a paper towel-lined plate and reserve 1 tablespoon bacon grease in the skillet. Crumble bacon when cool enough to handle.
- Remove Brussels sprouts from the oven and immediately transfer to the skillet with the bacon grease. Add croutons, blue cheese, and red wine vinegar and toss to coat.
- To serve, distribute salad into 4 serving bowls and top with crunchy bacon.
