Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place Brussels sprouts in a single layer in a baking dish. Drizzle with olive oil and maple syrup; toss to coat. Sprinkle with bacon; season with salt and black pepper.

1 pound sweet potato peeled and cut into 1-inch cubes
2 tablespoons olive oil
4 garlic cloves peeled and smashed
3 tablespoons maple syrup
1/2 teaspoon lemon juice
1/2 teaspoon smoked paprika
1/2 teaspoon salt

Steps:

  • Preheat oven 400 degrees F. Prepare baking sheet with lightly oiled parchment paper.
  • Place Brussels sprouts, cubed sweet potatoes, olive oil, garlic, maple syrup, lemon juiced, smoked paprika and salt in a large bowl and toss to fully coat.

1 large sweet potato, (cut into 1/2 inch cubes)
2 cups brussels sprouts, (ends trimmed, outer leaves removed, and sliced in half*)
1 Tablespoon extra-virgin olive oil
2 Tablespoons maple syrup, (divided)
1/2 teaspoon chili powder
Salt and pepper

Steps:

  • Preheat oven to 450 degrees. In a large bowl combine the sweet potatoes and brussels sprouts. Toss with the olive oil and 1 Tablespoon of maple syrup. Add the chili powder and 1/4 teaspoon each of salt and pepper.
  • Roast for 15 minutes, then remove from oven, flip and roast for 15-25 minutes more until browned.
  • Remove from oven and toss with the remaining 1 Tablespoon of maple syrup. Serve warm.

3 tablespoons olive oil, plus more for greasing
4 cups Brussels sprouts, trimmed and halved
2 cups sweet potato, peeled and cubed
1 teaspoon garlic powder
½ teaspoon sea salt, or more to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup crumbled feta cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch casserole dish with olive oil.
  • Combine Brussels sprouts, sweet potatoes, olive oil, garlic powder, sea salt, and pepper in a bowl; mix well to combine. Pour into the prepared casserole dish.
  • Bake in the preheated oven for 15 minutes. Mix vegetables and return to the oven for 15 to 20 more minutes. Sprinkle with feta cheese and cook until vegetables are browned and cooked through and feta cheese is melted, 5 to 10 more minutes.
