BRUSSELS SPROUTS WITH BACON, PECANS, AND CRANBERRIES
Christmas Brussels Sprouts with Bacon, Pecans, and Cranberries will add color and vibrancy to your holiday table! Steps:
- Preheat oven to 400 F.
- Slice all Brussels sprouts in half.
- In a medium bowl, combine halved Brussels sprouts, 2 tablespoons of olive oil, salt, and toss to combine.
- Place Brussels sprouts on the baking sheet, cut side down.
- Roast in the oven at 400 F for about 25 minutes. During the last 5-10 minutes of roasting, turn them over for even browning, the cut sides should be partially charred but not blackened.
- Line the separate baking sheet with foil. Add the bacon slices in one layer. Bake in the preheated oven at 400 F for about 20 minutes or until the bacon is done. You can do it at the same time as roasting the Brussels sprouts.
- Drain bacon of fat and slice the bacon into small bites.
- Line a baking sheet with parchment paper. Add pecans in one layer.
- Toast the pecans for about 5 minutes (maybe a bit longer) in the preheated oven at 350 F until they get darker in color.
- For best results, briefly soak the dried cranberries in hot water. Bring a small pot of water to boil.
- Add dried cranberries to a medium bowl. Pour hot water over the cranberries and soak them for about 10 minutes. Drain.
- In a large bowl, combine roasted Brussels sprouts, warm chopped cooked bacon, toasted pecans, and soaked dried cranberries. Toss everything together. The olive oil from Brussels sprouts and fats from bacon should be enough to coat the ingredients. If desired, add 1 tablespoon of olive oil to mix with the salad (optional).

- Cook the bacon- To a 12 inch frying pan, lay out 5 slices of bacon so that they don't overlap. Cook on medium heat until bacon is cooked through (5-10 minutes), using tongs to turn over as needed. Transfer the bacon to a paper towel-lined plate to drain. When cool enough to handle, chop the bacon into small pieces.
- Wipe the pan- if your bacon let off a lot of grease, use a paper towel to carefully soak up the excess in a pan. You want a thin coating to help cook the brussels sprouts.
- Cook the brussels sprouts- Add the brussels sprouts to the pan and cover with a lid. Every 3 minutes, lift the lid, stir up the sprouts, and replace the lid. If the pan is too dry, add 1/4 cup as needed (1-2 times during the cooking process). Cook for a total of 10-15 minutes, until a fork inserts into the brussels sprouts easily.
- Add butter, salt and bacon- When brussels sprouts are cooked through, remove the lid, and make a space in the middle of the pan. Add the butter to the space and allow to melt. Add the bacon, sprinkle with salt, and toss everything up. Serve immediately.

- Shred Brussels sprouts in a food processor fitted with the shredding blade, or slice thinly lengthwise into thin ribbons. Set aside.
- In a medium saucepan, cook the bacon until crisp and browned. Set bacon aside and drain all but 2 Tbsp of the bacon grease.
- Add onion to pan and saute 2-3 minutes, or until slightly softened and all the browned bits from the bacon are scraped up. Turn off heat.
- Add vinegar and syrup (if using). Stir to combine, then pour over shredded Brussels sprouts. Add crisped bacon, dried cherries, almonds, salt, and pepper. Toss all together for 2-3 minutes. (At first, you might think there isn’t enough dressing. Continue to stir. As the sprouts wilt a little, they’ll soften and the dressing will be plenty to coat the salad.)

- Heat a pan (preferably cast iron) on medium high heat. Add the almonds and toast them, shaking the pan occasionally, until they start to brown and are fragrant. Remove them from the pan and, when they are cool enough to handle, coarsely chop them.
- Add the oil to the same pan. Place the Brussels sprouts, facedown, in the pan. Work in batches if you need to so that the Brussels are in a single layer. Cook them for about 5 minutes, or until they are dark brown on the bottom. Add a few tablespoons of water (no need to be exact) to the pan and cover it with a lid – this will ensure they are cooked through. I like my Brussels with a bit of crunch still but if you like them softer you may want to add another splash of water to the pan. Remove the Brussels from the pan.
- Add the balsamic vinegar to the same pan. It will start to bubble up immediately. Wait about 15 seconds then pour the reduced balsamic over the Brussels. Top with the chopped almonds and a good pinch of flaky sea salt.
