¼ cup Mazola® Corn Oil
2 tablespoons balsamic vinegar
2 garlic cloves, finely minced

2 cups diced plum tomatoes
¼ cup diced red onion
½ cup shredded Italian blend cheese
¼ cup finely chopped fresh basil

Steps:

  • Place chicken breasts in a large resealable plastic freezer bag, one at a time. Lightly pound chicken breasts to an even thickness of about 3/4-inch. Combine oil, balsamic vinegar, garlic, Italian herb seasoning, salt and pepper in a small bowl and whisk until combined. Pour half of the marinade over the chicken, reseal bag, and set aside to marinate for at least 15 minutes. (Chicken and marinade can be prepared ahead; covered and refrigerated overnight.)
  • Preheat grill to medium heat or about 350 degrees F. Combine remaining marinade with diced tomatoes and red onion; set aside. Transfer chicken from marinade onto grill surface and discard marinade. Grill chicken for 4 to 6 minutes per side or until cooked through. Transfer the chicken to a serving plate and sprinkle with shredded cheese. Spoon bruschetta mixture over chicken and top with basil; serve immediately.

Bruschetta Chicken Pasta is an easy weeknight dinner full of fresh ingredients like tomatoes and basil. Simple and flavorful and ready in under 30 minutes!

1 pound Roma tomatoes (about 6, seeded and diced)
2 cloves garlic (minced)
½ cup torn fresh basil (plus leaves for garnish if desired)
1 tablespoon balsamic vinegar
Kosher salt
Freshly ground black pepper
1/2 pound angel hair pasta (half of a 16 ounce box)
1-1 ½ pounds boneless, skinless chicken breast ((about 2))
Balsamic glaze (optional)

Steps:

  • Combine ingredients in a medium bowl.
  • Season generously with salt and pepper and let sit for out on the counter while you prep and cook the chicken and pasta.
  • Cook pasta to al dente according to package instructions. Drain the water and return pasta to the pan. Drizzle with a tablespoon of olive oil and toss to keep the pasta from sticking together as it sits. Set aside.
  • Meanwhile, heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper and add them to the skillet. Cook about 4-5 minutes per side or until chicken is no longer pink and registers 165 degrees on a meat thermometer. Depending on the thickness of the breasts it could take up to 8 minutes per side. Transfer to a plate to rest, covered with foil to keep warm.
  • To the skillet, add 1 tablespoon of olive oil and the bruschetta mixture. Cook, stirring often, just long enough to heat through; 1-2 minutes. Turn off the heat and add the pasta to the pan. Toss to coat, adding more olive oil if needed.
  • Slice chicken breasts and add to the pasta.
  • Divide into bowls and serve immediately, garnished with fresh basil. Drizzle with balsamic glaze, and added shredded Parmesan or Mozzarella, if desired.

1 lb boneless skinless chicken breast, cut into 1-inch chunks
1 package Tasty™ Savoury Seasoning Mix, divided
1 small yellow onion, chopped
4 cups chicken stock
1 cup cherry tomato, halved, 1 (14.5 ounce) can petite diced tomatoes, undrained
8 oz pasta, uncooked, such as penne, fusilli or bow-tie
1 cup bite-size mozzarella cheese balls, or shredded mozzarella

Steps:

  • Heat the oil in large high sided skillet over medium-high heat. Add the cubed chicken and 1 tablespoon of the seasoning mix. Cook, stirring often for 5 minutes or until browned and fully cooked. Remove chicken from the pan and transfer to a large bowl. Set aside.
  • Add the onion to the skillet and cook for 3 minutes or until softened and translucent.
  • Add the stock, tomatoes and remaining seasoning mix to the skillet, bring to boil and stir to release browned bits from bottom of skillet. Stir in the uncooked pasta and cook for 15 to 20 minutes, stirring occasionally until the pasta is fully cooked.
  • Return the chicken to skillet. Stir in the mozzarella and cook for 2 minutes or until thel chicken is heated through. Sprinkle with chopped basil if desired and serve immediately.

3 tablespoons extra-virgin olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon dried Italian seasoning

  • Cook pasta according to package directions, omitting salt. Drain and set aside.

1 pound chicken breasts chopped into 1-inch pieces
1 pound thin spaghetti or pasta of choice
2 tablespoons olive oil, divided
2 pints cherry/grape tomatoes
1/2 red onion, chopped
4-6 garlic cloves, minced
1/4 cup packed basil, chopped
½ cup freshly grated Parmesan cheese
1/3 cup extra virgin olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 teaspoon cornstarch
1 tsp EACH dried basil, dried oregano, salt
1/2 tsp EACH dried parsley, pepper
1/4 teaspoon red pepper flakes

Steps:

  • Whisk together the Balsamic Marinade/Sauce ingredients. Transfer 2 tablespoons to a freezer safe bag or bowl with the chicken. Marinate at room temperature for 15-30 minutes or in the refrigerator for up to 4 hours.
  • Meanwhile, cook pasta al dente according to package directions in generously salted water. Remove 1 cup pasta water before draining. Drain and rinse the pasta, then toss with a drizzle the untouched balsamic sauce to prevent the pasta from sticking together.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides, but not cooked through, transfer to a plate (it will finish cooking later in the sauce).
  • Reduce heat to medium-low. Heat 1 tablespoon olive oil in the chicken drippings. Add tomatoes, onions and garlic. Cook until the tomatoes begin to burst, 5-8 minutes, stirring constantly and scraping up any brown bits on the bottom of the pan.
  • Add the chicken back to the pan along with remaining sauce (not touched by the raw chicken). Simmer until slightly thickened and the chicken is cooked through, 1-2 minutes.
  • Stir in fresh basil and Parmesan. Stir in pasta until well coated, adding some reserved pasta water a little at a time if needed to reach desired consistency. Taste and season with additional salt, pepper and/or red pepper flakes to taste.
  • Garnish with freshly grated Parmesan Cheese and additional basil if desired

My FAVORITE dish from TGIFriday's. I found the copycat and it is delicious. It is super simple to make and don't skimp on the garlic because that is what really makes the flavor. Also, if tomatoes aren't in season use the canned tomatoes in italian seasonings, they work just as well. Add some garlic bread to the side and you're done!

1 lb angel hair pasta
6 -8 medium size roma tomatoes
4 tablespoons olive oil, divided
1/4 teaspoon salt
1/8 teaspoon black pepper
10 fresh basil leaves
2 garlic cloves, sliced into thin coins
1/2 cup tomato sauce
1 cup balsamic vinegar
1 tablespoon granulated sugar

Steps:

  • Tomato Salad (Step 1): Wash, core and dice tomatoes to 1/4" pieces, save juices and place in small bowl. Wash, dry and cut basil leaves into thin strips. Combine tomatoes, left over juice, basil, 2 tablespoons olive oil, salt, pepper, and hold for 2 hours before use.
  • Balsamic Glaze: Bring to a boil vinegar and sugar in small pan and turn down flame to a simmer Reduce by 75% until sauce turns to a thick syrup, hold at room temperature.
  • Pasta: Boil pasta as per directions on box until al dente.Drain and transfer to bowl.
  • Tomato Salad (Step 2): Heat heavy bottom saucepan under medium-low flame. Add 2 tablespoons olive oil, heat oil for 20 seconds. Saute cloves of garlic, that are sliced into thin coins, in oil (if small use 3) for 45 seconds on each side until soft and tender - do not brown garlic (if brown DISCARD and start over). Increase heat and add tomato salad and stir.
  • Tomato Salad (Step 3): Add plain tomato sauce to pan and bring to a boil. Add pasta to sauce pan and toss with fresh sauce (sauce should just coat pasta). Transfer to a service platter or plate individually. Garnish with balsamic glaze.
  • Chicken Breasts: Season both sides of chicken breasts with salt and black pepper. Grill 3-4 minutes per side for grill marks or until the chicken breasts reach 165 degrees F. Grill right before serving.
  • To serve: Slice chicken breast into strips on a bias (45 degree angle) and place on top of pasta.Enjoy!

  • Preheat the grill to high heat. Remove the chicken from the marinade, rinse with cold water and blot dry. Rub each chicken breast with olive oil and season with ground black pepper. Grill the chicken for 4 to 5 minutes per side or until fully cooked (the internal temperature has reached 165 degrees F).
